I like to start my meal prep with dessert. I sandwich vanilla ice cream with layers of cereal, peanuts and coconut. Then I put it in the freezer until it's ready to serve!

2 cups crushed Rice Chex
2/3 cup packed brown sugar
1/2 cup chopped peanuts
1/2 cup sweetened shredded coconut
1/2 cup butter, melted
1/2 gallon vanilla ice cream

Steps:

  • In a large bowl, combine the cereal, brown sugar, peanuts and coconut. Drizzle with butter; stir until combined. , Press half of the mixture into an ungreased 13-in. x 9-in. dish. Cut ice cream into 3/4-in.-thick slices; arrange evenly over crust. Top with remaining crumb mixture; press down lightly. Cover and freeze until serving.

1 1/2 cups flour
1 cup rolled oats
1/2 cup brown sugar
1 1/2 cups chopped pecans
1 cup margarine, melted
1 (12 1/4 ounce) jar caramel topping
1/2 gallon vanilla ice cream, softened

Steps:

  • Stir together the flour, oats, brown sugar, pecans, and margarine.
  • Spread in at thin layer on a lightly greased cookie sheet (approximately 14 x 16) and bake at 350 degrees for 20 minutes.
  • Cool, then crumble.
  • Press 1/2 of crumb mixture into a 9 x 13 pan.
  • Add 1/2 of caramel topping, spreading evenly.
  • Carefully spoon on the ice cream, spreading evenly.
  • Layer on second half of caramel topping; then layer on the remainder of the crumb mixture.
  • Freeze immediately.
  • Cut into squares for serving.

2 teaspoons cinnamon sugar
2 tablespoons honey
1 cup crushed corn flakes
2 ounces chopped nut topping, found on baking aisle of market
4 Maraschino cherries

Steps:

  • Top large scoops of vanilla ice cream with a sprinkle of cinnamon sugar, a drizzle of honey, crushed corn flakes, chopped nut topping and a cherry on top. Serve.

1/2 cup butter, melted
1 cup all-purpose flour
1-1/4 cups sweetened shredded coconut
1/4 cup packed brown sugar
1 cup slivered almonds
2-2/3 cups cold milk
1/2 teaspoon coconut extract
2 packages (3.4 ounces each) instant vanilla pudding mix
2 cups whipped topping
Fresh strawberries, optional

Steps:

  • In a large bowl, combine the first five ingredients; press lightly into a greased 13-in. x 9-in. baking dish. Bake at 350° for 25-30 minutes or until golden brown, stirring every 10 minutes to form coarse crumbs. Cool. , Divide crumb mixture in half; press half into the same baking pan. In a large bowl, whisk the milk, extract and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set. , Fold in whipped topping; spoon over the crust. Top with remaining crumb mixture. Cover and refrigerate overnight. Garnish with fresh strawberries if desired.
