This is one of my husband's favorite childhood recipes. Quick and healthy after school snack for kids.

1 small onion, finely chopped
1 medium tomato, diced
1 stalk celery, chopped
1 green bell pepper, finely chopped
1 cup shredded Cheddar cheese
¼ teaspoon chili powder
¼ teaspoon salt
4 slices white bread

Steps:

  • Preheat your oven's broiler.
  • In a medium bowl, stir together the onion, tomato, celery, bell pepper, cheese, chili powder and salt. Arrange slices of bread on a baking sheet or broiling pan. Top each one with 1/4 of the mixture, spreading out to the edges.
  • Broil for 4 to 5 minutes, or until cheese melts. Watch closely to prevent burning. Serve immediately.

1 tablespoon butter, softened
4 slices white bread
1 tablespoon Dijon mustard
4 slices process American cheese
2 slices deli ham (1 ounce each)
1/2 medium tomato, thinly sliced
2 eggs, lightly beaten
2 tablespoons 2% milk
1/8 teaspoon onion powder
1 cup crushed ridged potato chips

Steps:

  • Butter one side of each slice of bread. Spread mustard over the unbuttered side of two slices; layer each with one slice of cheese, ham, tomato, remaining cheese and remaining bread, buttered side up. , In a shallow bowl, whisk the eggs, milk and onion powder. Place potato chips in another bowl. Dip each sandwich into egg mixture, then coat with potato chips. , In a large nonstick skillet or griddle coated with cooking spray, toast sandwiches for 4 minutes on each side or until golden brown.

12 slices white bread
1/4 cup seedless strawberry jam
12 slices ham
4 ounces melting cheese (Eden or Velveeta), cut into 1/4-inch x 3-inch strips
2 eggs
1/4 cup milk
1 1/2 cups bread crumbs
1 teaspoon Italian seasoning
canola oil

Steps:

  • With a knife, trim edges of the bread and with a rolling pin, flatten until very thin.
  • Spread a thin layer of jam on the top side of the bread slice.
  • Arrange a piece of ham over the jam and place cheese strip at the edge of the bread.
  • Roll bread into a log to enclose filling and press lightly on seams to completely seal. Secure with toothpicks, if needed, and remove when ready to dredge in bread crumbs.
  • Repeat with remaining bread slices.
  • In a bowl, combine eggs and milk and whisk together until well-beaten. In a shallow dish, combine bread crumbs and Italian seasoning.
  • Dip bread rolls in egg mixture and roll in bread mixture, patting down crumbs to fully coat.
  • In a wide, thick-bottomed pan over medium heat, heat about 2-inches deep of oil. Carefully place breaded rolls seam side down and fry, turning on sides as needed, until golden and crunchy.
  • Remove from pan and drain on a wire rack set over a baking sheet. Serve hot.

1 tablespoon sour cream
1 tablespoon finely sliced chives
1 teaspoon Dijon mustard
1 teaspoon horseradish
Freshly ground black pepper
1 medium jicama, about 4 inches wide, peeled and cut into eight 1/3-inch rounds
6 ounces sliced low-sodium deli ham
4 slices Havarti cheese (about 3 ounces)
2 cups baby arugula
Dill pickle spears for serving, optional

Steps:

  • Stir together the sour cream, chives, mustard, horseradish and a few grinds of black pepper in a small bowl.
  • Lay four slices of jicama out on a work surface. Spread each with some of the mustard-horseradish sauce, top each with 1/4 of the ham, a slice of cheese, and about 1/2 cup of arugula. Sandwich with the remaining jicama slices, cut in half and serve with a pickle spear if using.
