1/3 cup maple syrup
1/3 cup packed coconut sugar or brown sugar
4 teaspoon vanilla extract
1/2 teaspoon table salt
1/2 cup vegetable oil (grapeseed, coconut, and avocado oil would all work)
5 cups old-fashioned rolled oats
1 cup walnuts (chopped)
1 cup raw almonds (chopped)
1/2 cup raisins (chopped)
1/2 cup cranberries (chopped)
1/2 cup goji berries (chopped)
1/2 cup dates (chopped)
1/2 cup unsweetened coconut flakes

Steps:

  • Adjust the oven rack to upper middle position. Heat oven to 325 °F.
  • Line your sheet pan with parchment paper. (it helps tremendously when it is time to clean.)
  • Whisk maple syrup, brown sugar, vanilla, salt and oil in a BIG bowl.
  • Add the oats, almonds and walnuts in to the liquid mixture and fold until thoroughly mixed.
  • Transfer the oat mixture onto baking sheet and spread it to make an even layer.
  • Using the back of a ramekin* or a spatula, compress oat mixture until it is very compact.
  • Bake for 20-25 minutes rotating pan once halfway through baking.
  • Once baked, remove it from the oven and let it cool for 15-30 minutes.
  • Break cooled granola into pieces of your desired size.
  • Mix in the chopped dried fruit and shredded coconut.

2 cups Grape-Nuts
1-1/2 cups sweetened shredded coconut
1 cup toasted wheat germ
1 cup sunflower kernels
1 cup chopped almonds
1 cup chopped walnuts
1/2 cup sesame seeds
1 cup packed brown sugar
1 cup butter, cubed
1 cup honey
1/2 cup canola oil
2 tablespoons molasses
3 teaspoons vanilla extract
1/2 teaspoon salt
3 cups raisins

Steps:

  • In a very large bowl, combine the first eight ingredients. In a large saucepan over medium heat, cook the brown sugar, butter, honey, oil and molasses for 2-3 minutes or until sugar is dissolved. Remove from the heat; stir in vanilla and salt. Pour over oat mixture and toss to coat. , Transfer to two greased 15x10x1-in. baking pans. Bake at 350° for 20-25 minutes or until golden brown, stirring twice. Cool, stirring occasionally. Stir in raisins. Store in airtight containers.

I love those nature's valley crunchy granola bars and I also like those sweet and salty granola bars as well as fruit granola bars! But notice how you can't seem to get everything you want in a granola bar without sacrificing the healthy aspects. Anyhow, I adapted this recipe from one off a blog I stumbled across (http://katescreativekitchen.blogspot.com/2009/03/sweet-and-salty-granola-bars.html--she has other good recipes to offer also!).

3 cups oats, toasted (I use the quick-cooking kind)
1 cup nuts (almonds, peanuts, walnuts, pecans, whatever!)
1 cup dried fruit (raisins, dried cranberries, etc. or chocolate chips!)
1/2 cup pretzel
1/2 cup brown sugar
1/3 cup peanut butter, melted
1/3 cup butter, melted
1/3 cup honey
1 egg
1 teaspoon cinnamon
1/2 teaspoon vanilla
1/2 teaspoon salt

Steps:

  • To toast oats spread them on an ungreased cookie sheet and bake at 350F for 10-15 minutes or until just golden.
  • Mix all ingredients.
  • Firmly press into a cookie sheet or jellyroll pan lined with grease parchment paper.
  • Bake at 350F for 15-20 minutes.
  • Cool completely and cut.

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Line 2 baking sheets with parchment paper.
  • Combine oatmeal, sunflower seeds, pumpkin seeds, sesame seeds, flax seeds, wheat germ, chopped dried cherries, salt, and cinnamon in a large bowl.
  • Mix applesauce, maple syrup, and vanilla in a separate bowl.
  • Pour applesauce mixture over the oatmeal mixture; mix until evenly coated.

Number Of Ingredients 7

175g mixed nuts (pecan halves and peanuts in their red skins)
450g rolled oats
50g sesame seeds
50g sunflower seeds
125ml sunflower oil
100ml runny honey (try one of the lightly flavoured flower ones)
half a 170g packet dried berries and cherry

Steps:

  • Preheat the oven to 190C/Gas 5/fan oven 170C. Halve some of the pecans, leave some whole. Mix with peanuts, oats, sesame seeds, sunflower seeds and a pinch of salt in a large bowl. In a jug, measure the oil and pour into the mixture, then measure the honey - it will slide out easily. Stir together with a fork to break up any big clumps of oats.
  • Pour on to a large baking tray with sides, preferably non-stick, in a thin layer. Bake for 20-25 minutes, stirring well at least twice and bringing the mixture in from the edges, until it is golden. Transfer to a large bowl and leave to cool.
  • Mix in the berries and cherries and serve with plenty of chilled milk.
  • Store for up to 1 month in airtight container.

1/2 cup water
4 teaspoons pure vanilla extract
1 teaspoon salt
8 cups rolled oats
2 cup chopped pecans or walnuts, or slivered almonds

Steps:

  • Preheat oven to 275 degrees F.
  • Line 2 cookie sheets with parchment paper and reserve.
  • Combine brown sugar and water in a 4-cup microwave proof glass measuring cup or bowl. Place in microwave on high for 5 minutes and cook until sugar is completely dissolved. Remove from microwave, add vanilla extract and salt.
  • In a large mixing bowl, combine oats, nuts, and brown sugar syrup mixture. Stir until thoroughly mixed. Spread the granola onto cookie sheets and bake 45 minutes to 1 hour or until golden and crunchy.
  • When the mixture comes out of the oven, it is still very pliable. You may choose to add in dried fruit as a finishing touch at this time. When granola has cooled completely, store in an airtight container.

1 3/4 cup rolled oats
1 cup crispy brown rice cereal
1/4 cup of whatever dry ingredient you love (nuts, seeds, cereal, coconut, quinoa, buckwheat, etc.)
1/2 cup maple syrup (+1 more tablespoon for extra clusters)
1/2 tsp cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 375F.
  • Combine all the ingredients in a mixing bowl.
  • Stir to evenly coat all the dry ingredients.
  • Spread on a baking pan lined with parchment paper.
  • Press it into a rectangle about 1/4 inch thick.
  • Bake for 10 mins at 375F until the edges are just staring to brown. Do not stir it.
  • Remove from the oven. Let it cool for at least 30 mins before stirring or moving or touching.
  • Then break apart into chunks.
  • Store in an airtight container for up to 5 days.

4 cups old fashioned oats
3 tablespoons ground flax seeds
3 tablespoons wheat germ (oat bran, etc)
1/2 cup chopped almonds (substitute as desired)
1/2 cup chopped pecans
1/2 teaspoon salt
1/2 cup brown sugar
1/4 cup honey (maple syrup or corn syrup also work)
2 tablespoons vegetable oil
1 egg white (2-3T in volume)
1 cup dried fruit (berries, raisins, chopped apricots, etc)

Steps:

  • Heat oven to 300°F.
  • Mix oats, flax, wheat germ, almonds, pecans, salt and brown sugar in a large bowl. Wisk to combine the oil, honey and egg white, then pour over the oat mixture. Stir well until ingredients are evenly coated. It may seem too dry but keep stirring.
  • Spray oil on a jelly roll pan and add the granola mixture. Bake 20-30 minutes, until the edges are browned and it smells toasty. To make clumps don't stir during baking. Cool and allow the granola to harden. Break into smaller pieces and add the fruit. Store airtight for two weeks.
  • The dried fruit may hydrate the granola so it loses some of its crunch. If so just pop it back in a 300F oven for about 10 minutes.
