CRUNCHY GINGER SNAPS (SIMILAR TO ARNOTTS GINGERNUT)
Snappy, crunchy, golden brown ginger cookies perfect for dunking. Easy, and very delicious. Because I use Aussie measurements I'll write in teaspoons to avoid international confusion : )))

Steps:
- Preheat oven to 180C (350 F) or 170C if using gas or fan forced oven.
- Cream the first three ingredients in a bowl.
- In another bowl, combine the last four ingredients.
- Mix together til combined, but don't overmix.
- Bake teaspoonfuls on a greased tray for 10 mins, or until the entire biscuit is golden brown. If you only cook til it has golden edges you will get a chewy biscuit. It needs to be the same deep golden brown over the whole biscuit.
- Cool for a couple of minutes on the tray, and then lift to a rack. Store when totally cool in an airtight container.

THE PERFECT GINGER SNAP
Once you try these you will share this recipe with family and friends. These are the most delicious ginger snaps and are very simple to make. They remind me of the ginger snaps I used to buy when I was a child. They are a little crunchy and a little chewy at the same time, spicy but not too spicy for children.

Steps:
- 1. Preheat oven to 350 and line cookie sheet with parchment or a silicone baking liner.
- 2. Cream the Crisco and sugar together with a hand or stand mixer until creamy.
- 3. Add egg and molasses, mix until all are combined.
- 4. Sift the remaining ingredients together, then stir into wet mixture until all are combined and the mixture is uniformed.
- 5. Use a measuring tablespoon and scoop out dough, roll into a ball and place on cookie sheet. Use 2 fingers to flatten them a little.
- 6. Bake 12 -14 minutes, then let cool slightly (about 2 minutes) before placing on wire rack for remaining cool down time. ( about 5 minutes).

PERFECT PEPPARKAKOR
This is a recipe for traditional Swedish ginger snaps, originally from a family friend of my grandmother. Our family makes these cookies every year for our Christmas Eve celebration. They are traditionally cut into heart shapes, but we experiment with flowers, angels, bells, stars, etc. Note: requires overnight refrigeration.

Steps:
- Melt margarine or butter in a saucepan over low heat. Slowly stir in the sugar, syrup and spices. Let cool.
- In a large bowl, mix together baking soda and water. Add egg and beat well.
- Stir in flour and margarine mixture. Mix well.
- Refrigerate overnight.
- Roll out on a well-floured surface until very thin. Cut into desired shapes and place on a greased cookie sheet.
- Bake at 350 degrees F for 6 to 8 minutes, or until golden brown.

GRANDMA'S GINGER SNAPS
An old family favorite out of my grandmother's recipe book. I haven't made this recipe yet myself, but a reviewer suggests to add more spice :) they used 1.5 times the amount stated. Enjoy!

- Sift in dry ingredients (Double Spices if you like).
- Roll into balls.
- Drop in sugar.
