GRAN'S CRUNCHY OATMEAL COOKIES

Gran's Crunchy Oatmeal Cookies image

This is NOT my kinda cookie. I like a doughy, chewy, soft BIG cookie, BUT everyone in my family adores these little hard crunchy cookies and I have to admit, I love them too! Even when my Grandmother was older and had a hard time getting around, she'd make these from scratch and mix them together by hand (for the last part). To make life easier, she would make the dough the first day, chill it overnight and bake the next. They are ONLY great straight out of the freezer. With a cup of tea? Wonderful and just how GG (Gran) used to enjoy them. A Christmas or birthday didn't go by without receiving a bag of these straight from the freezer and I plan to continue that legacy.

CRISP AND CHEWY CHOCOLATE CHIP COOKIES

Crisp and Chewy Chocolate Chip Cookies image

Cookie people take sides. You're either a soft-and-chewy fan or a lover of thin and crisp. But everyone goes for these chocolate chip treats. They're soft in the middle, slightly crunchy at the edges, and extra-big.

Time 1h20m

Yield Makes 2 dozen

Number Of Ingredients 11

2 1/2 sticks unsalted butter, softened (but still cool to the touch-a finger pressed in should leave a dent but not sink in deeply)
1 1/2 cups packed light-brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1 1/4 teaspoons kosher salt (we use Diamond Crystal)
2 teaspoons pure vanilla extract
2 large eggs, room temperature
3 cups unbleached all-purpose flour, spooned and leveled
6 ounces semisweet chocolate chips (1 cup)
5 ounces semisweet chocolate (61 to 66 percent), coarsely chopped (1 1/4 cups), plus more large, flat pieces or semisweet chocolate féves for tops (optional)

Steps:

  • Preheat oven to 350°F. Beat butter with both sugars, baking powder, baking soda, and salt on medium-high speed until light and creamy, 2 to 3 minutes. Beat in vanilla.
  • Add eggs, one at a time, beating to combine after each addition and scraping down sides of bowl as needed. Stop beating and add flour, then beat on low to combine. Add both chocolates and beat to combine. (If you are working in a warm room and/or dough feels sticky or soft, refrigerate about 15 minutes before scooping and baking.)
  • Using a 2-ounce (1/4-cup) scoop, drop dough onto parchment-lined baking sheets, 2 inches apart (6 cookies per sheet); press each down to flatten slightly.
  • Top each cookie with a few large, flat pieces of chopped chocolate or whole féves (if desired). Bake one sheet of cookies 9 minutes; remove from oven and bang sheet on stove top or counter to deflate. Return to oven and bake 3 minutes; remove and bang again, then return to oven and bake until golden around edges and just barely set in centers, about 3 minutes more.
  • Transfer sheet to a wire rack and let cool 5 minutes, then transfer cookies to a rack with a spatula; let cool completely. Repeat with remaining sheets, one at a time. Cookies can be stored in an airtight container at room temperature up to 3 days, or frozen up to 2 months.

1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups rolled (old-fashioned) oats
1/2 cup coarsely chopped pecans
8 tablespoons (1 stick) unsalted butter, at room temperature

1/2 cup granulated sugar
1 large egg

CRISPY OATMEAL CHOCOLATE CHIP COOKIES (MICHAEL SMITH)

Crispy Oatmeal Chocolate Chip Cookies (Michael Smith) image

Another recipe from one of my favourite Canadian chefs, Michael Smith. He likes to rely on the senses and intuition instead of following a recipe. BUT this recipe the way it is written, is terrific! I'm sure that these would be less crispy if cooked for less time, but they are perfect the way they are. The molasses and vanilla add the best flavour! These have a nice light crunch, perfect for dipping in a glass of cold milk. Enjoy!

Provided by Nif_H

Categories     Chocolate Chip Cookies

Time 25m

Yield 36 cookies

Number Of Ingredients 10

1/2 cup butter, at room temperature
1 cup sugar
1 tablespoon molasses
1 cup flour
1 cup oats
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 tablespoon vanilla (real vanilla is wonderful in this!)
1 cup chocolate chips

Steps:

  • Preheat your oven to 375°F.
  • Cream the butter, sugar and molasses together in a stand mixer. Beat until well combined and 'creamy'. If you don't have a stand mixer beat vigorously by hand in a large mixing bowl. Add the egg and vanilla to the butter mixture and continue beating until well combined.
  • Meanwhile whisk the flour, oats, salt, baking powder and salt together in a separate bowl.
  • Gradually add the flour mix to the wet mixture, beating just until combined. Stir in the chocolate chips by hand.
  • Using a tablespoon scoop out a ball of the dough and drop onto a lightly greased cookie tray. Flatten slightly. Repeat, leaving lots of room in between the balls for the cookies to expand. Bake for 12-15 minutes. Cool for ten minutes then remove from the tray and try to eat only one!

OATMEAL CHOCOLATE CHIP COOKIES

Oatmeal Chocolate Chip Cookies image

These taste distinctly homemade: much smaller than giant, thick bakery-style disks and more delicate, with just enough buttery dough to bind the chocolate and oats. Mixing by hand turns out cookies that are crisp at the edges and tender in the centers. These can be mixed and baked in under an hour, but the dough balls also can be packed in an airtight container and refrigerated for up to 3 days, or frozen for up to a month. You can bake them from ice-cold, though they'll need a few more minutes to turn golden brown.

Categories     cookies and bars, dessert

Time 40m

Yield 2 to 3 dozen cookies

Number Of Ingredients 12

3/4 cup/100 grams all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
8 tablespoons/114 grams unsalted butter, softened
1/2 cup/94 grams packed brown sugar
1/4 cup/59 grams granulated sugar
1 large egg, at room temperature
2 tablespoons heavy cream or milk
2 teaspoons pure vanilla extract
1 1/4 cups/134 grams old-fashioned rolled oats
1 cup/189 grams semi-sweet chocolate chips
1/2 cup/63 grams chopped pecans or walnuts (optional)

Steps:

  • Heat oven to 350 degrees. Line 2 large baking sheets with parchment paper.
  • Whisk the flour, baking soda and salt in a small bowl. Mix the butter and both sugars in a large bowl with a wooden spoon until creamy. Beat in the egg until incorporated, then stir in the cream and vanilla.
  • Add the flour mixture and gently stir until no traces of flour remain. Add the oats, chocolate chips and nuts (if using), and fold until evenly distributed. Loosely scoop a rounded ball of dough using a measuring tablespoon or small cookie scoop and drop onto a prepared sheet. Repeat with the remaining dough, spacing the balls 2 inches apart.
  • Bake, 1 sheet at a time, until golden brown, 12 to 14 minutes. Cool on the sheet on a wire rack for 1 minute, then transfer the cookies to the rack to cool completely. The cookies will keep in an airtight container at room temperature for up to 5 days or in the freezer for up to 2 months.

  • In a large bowl with an electric mixer or the bowl of a stand mixer with the paddle attachment, mix together the flour, sugar, brown sugar, baking powder, baking soda and salt. Add the butter, egg and vanilla and beat well until mixture comes together as a moist dough. Stir in the oatmeal until combined, then stir in the chocolate chips. Cover bowl with plastic wrap and pop into the fridge for 1 hour.
  • Remove dough from fridge and scoop out a rounded Tbsp of dough. Form into small balls. Dip ball into white sugar and place onto a large, ungreased cookie sheet sugar side up. Be sure to leave plenty of space between your balls (4 inches apart is best) and place them at least 2 inches in from the edge of the pan, as they will spread as they bake. If you have to bake several batches, pop the bowl with the dough back in the fridge while the first batch bakes. (I usually get 20-22 cookies)
  • Bake in preheated oven for 13-15 minutes, or until golden around the edges, but paler and still moist looking in the middle. For really crispy cookies, leave in the oven a few minutes longer. Remove from oven and allow to sit on the baking sheet for 1 minute, then carefully (they will be soft) remove to a cooling rack. Cookies will firm up as they cool.

CHEWY OATMEAL CHOCOLATE CHIP COOKIES L BAKED BY AN INTROVERT
2021-10-19 These cookies are the perfect combination of chewy oatmeal cookies and soft, melt-in-your-mouth chocolate chip cookies. The dough is similar to your standard chocolate chip cookie recipe, with the addition of old-fashioned oats.
