- Heat oven to 350°.
- Melt margarine in 2-quart saucepan over medium heat. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat. Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in remaining ingredients.
- Pour into ungreased 2-quart casserole or square baking dish, 8x8x2 inches. Bake uncovered 40 to 45 minutes or until bubbly. Garnish with parsley sprig if desired.

- Preheat oven to 350 degrees.
- Spray 2-quart casserole with non-stick cooking spray.
- Mix all casserole ingredients together and spoon into casserole.
- Bake 25-30 minutes.
- Sprinkle cornflakes on top.
- Spray top with non-stick cooking spray.
- Return casserole to oven and cook an additional 10-15 minutes until casserole is bubbling hot and topping is lightly browned.
- VARIATIONS: Add any of the following to the casserole before baking: 16 oz.
- can peas and carrots, 4 ounce jar sliced mushrooms, 1/4 cup diced red bell pepper, 2 tsp, basil, 2 tsp.
- Italian seasoning, or 1/2 tsp.
- garlic powder.
CRUNCHY CHICKEN CASSEROLE
The water chestnuts and sliced almonds gives this dish a nice "crunch". I cook the chicken and rice the day before I plan to serve. Then the next day, I just throw it all together and bake. Serve this casserole with a side dish of cooked broccoli. Makes a wonderful meal.

- Preheat oven to 375 degrees fahrenheit
- Put oil in a large frying pan and brown ground chicken with chopped onion and cook until onion is translucent.
- Add tomatoes to the mixture along with the tomato paste and cook until most of the liquid has evaporated and the mixture is nice and thick and set aside.
- Put ground chicken mixture in a 1 1/2 quart casserole dish layering on the bottom of the dish
- Cook macaroni noodles for 8 to 10 minutes in boiling salted water and then set aside
- In a small saucepan combine butter, flour and milk to make a roux and then add grated cheese and cook until cheese is melted and mixture is smooth
- Mix in cheese sauce with macaroni and then put macaroni on top of ground chicken
- Mix together butter, corn chips and bread crumbs with a pastry cutter and then sprinkle on top of macaroni noodles
- Top with grated cheese and then put in the oven for approximately 15 minutes or until cheese is nicely melted.

Steps:
- Boil your chicken in a pot of water with the chicken broth.
- When the chicken is done let it cool.
- Then debone the chicken and remove the skin.
- Cut chicken meat into bite size pieces.
- Cook the vegetables and drain liquid.
- In a large bowl mix chicken meat, vegetables (optional), sour cream,can of soup, and spices.
- Place chicken mixture in 13x9 casserole dish.
- In another bowl crush Ritz crackers into small pieces and spread over chicken mixture.
- Place Dots of butter all over the crackers.
- Place in oven preheated at 350* for about 45 minutes or until bubbly in the middle.
- If crakers start to get too brown before done place a piece of tin foil over the top of chicken.
