A neat treat to make either at home or when camping. I saw this on one of the TV Food Network Shows. It is so simple to do!!!

2 ripe bananas
3/4 cup white sugar

Steps:

  • You will need either a hand held propane torch or a chef's torch.
  • Cut off ends of unpeeled bananas and then cut these into two pieces each lengthwise.
  • Cut each of these banana strips into two shorter pieces.
  • Evenly distribute sugar on a flat small plate.
  • Press each banana strip (peel side up) into sugar to coat.
  • Remove peels and place sugar side up on a cooling rack over a piece of aluminum foil.
  • Using torch on low to medium size flame, pass flame back and forth over each banana piece until sugar starts to bubble and liquify into a dark caramel color (making sure to keep the torch moving at all times).
  • Caramelize each banana piece one at a time.
  • Let banana pieces cool for 10-15 seconds until coating becomes hardened.
  • Time to eat!

1 lb ripe bananas, peeled
1 1/4 c brown sugar, divided
10 Tbsp butter, softened & divided
1 tsp cinnamon
1/4 tsp freshly grated nutmeg
1 tsp vanilla extract
1 egg
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/4 c buttermilk
2 c all-purpose flour
1 c toasted pecan pieces (optional)

Steps:

  • 1. Preheat oven to 350. Grease loaf pan(s).
  • 2. In a large frying pan over medium heat, add sliced bananas, 2 Tbsp butter, and 1/4 cup brown sugar. Allow bananas to brown slightly stirring often.
  • 3. Add cinnamon and nutmeg.
  • 4. Continue cooking 3-5 minutes.
  • 5. Add vanilla extract and remove from heat.
  • 6. To a large bowl add remaining 1/2 cup butter and 1 cup brown sugar.
  • 7. Beat until smooth (2-3 min).
  • 8. Add egg, baking soda, baking powder, and salt. Mix well.
  • 9. To mixture, add buttermilk and alternately add flour and caramelized bananas beginning and ending with flour.
  • 10. Mix well between additions.
  • 11. Stir in toasted pecan pieces.
  • 12. Pour batter into prepared loaf pan(s).
  • 13. Bake at 350 for 40 min if using 9 X 5 loaf pan or 20 min if mini loaf pans, or until a cake tester comes out clean.
  • 14. Allow to cool slightly.

These are great for breakfast over pancakes, waffles, french toast, crepes, oatmeal, etc. Or serve with low fat ice cream and toasted macadamia nuts for dessert. You can use regular tub margarine or butter in place of the cooking spray. However, this will double the cooking time, and make for a crunchier stickier outside to your banana.

2 -3 bananas
4 -6 tablespoons granulated sugar (or more)
cooking spray (regular or butter flavor)

Steps:

  • Slice bananas into thick coins or lengthwise strips, depending on your preference.
  • Pour sugar onto a plate. Roll bananas in sugar, until completely coated.
  • Spray a medium size nonstick pan, and heat over medium high heat. Add bananas and sugar.
  • Cook bananas until light to golden brown underneath, about 4-5 minutes (you can lift with a spatula or fork to peek). Be careful not to overcook or burn them (if you smell them browning, or see color in the pan, flip them right away). Keep in mind these times will vary, depending on your stove.
  • Gently flip bananas over to brown other side, turning heat down to medium. The second side will brown in about one minute.
  • Transfer to a plate that has been coated with cooking spray (otherwise they may stick - they are ooey gooey and sticky!) and serve. Alternately, slide them right onto your ice cream or breakfast food.
  • Soak pan in hot water to facilitate cleaning.

This recipe came from my son's Cub scout pack. These doughnuts are a favorite treat on camp outs, for both the kids and adults!

Number Of Ingredients 4

1 (12 ounce) package refrigerated biscuits
2 cups vegetable oil
1/2 cup sugar
1 teaspoon cinnamon

Steps:

  • Separate biscuits and stretch slightly to enlarge them. Poke your finger through center of each one to form doughnut hole.
  • Heat oil in small size skillet (you can also use a deep fryer) to about 350°F.
  • There should be enough oil to float the doughnuts when cooking, so the amount of oil used will depend on the pan size.
  • Place several doughnuts in the oil and fry until golden brown on first side then turn over to finish!
  • Place cooked doughnuts on paper towel to drain slightly. In a bowl to which you have added a mixture of the sugar and cinnamon (you can vary this depending on your own taste), place one or two doughnuts at at a time and coat both sides.

  • ADD whipped topping; stir with wire whisk until well blended. Cover.
  • REFRIGERATE at least 1 hour before serving.
