CRUNCHY BEEF CASSEROLE
Casseroles came into fad in a big way in the sixties and seventies and with that a variety of colorful casserole dishes were introduced. Most of y'all know I collect Pyrex dishes. They are from the era of my childhood and were made so well that any in my collection can still be used today. I collect, display, and use every one of them on a regular basis!

Steps:
- Cook pasta as directed, rince and drain. Brown beef, drain fat. Combine all ingredients except french fried onions. Pour into greased 2 quart casserole. Cover and bake at 350 for thirty minutes. Uncover, top with french fried onions, and bake five minutes longer.

- In a skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add the ketchup, mustard and salt; mix well. Transfer to a greased 2-qt. baking dish. Top with rice., In a bowl, combine the cheese, soup, milk and Worcestershire sauce. Pour over rice. Combine cornflakes and butter; sprinkle over the top. Bake, uncovered, at 375° for 35 minutes or until heated through.

- Preheat oven to 375 degrees F. Lightly spray a 3.5 quart baking dish (or 13x9 dish) with non-stick spray.
- Brown onion, garlic and ground beef over medium-high heat in a large, heavy skillet.
- Mix remaining ingredients except chow mein noodles and green onion in a medium bowl. Stir in ground beef mixture and turn into prepared baking pan.
- Bake for 20-30 minutes or until casserole is bubbly. Top with chow mein noodles and bake for an additional 10 minutes.
- Garnish liberally with green onion, if desired.

- 1. Pre-Heat oven to 375. While oven is pre-heating brown ground beef. Drain and add in chili powder, cumin, garlic powder, salt, soup, rotel, and 1/4 cup cheese. Stir and let simmer for 10 minutes. To assemble, layer meat mixture and tortilla chips. Top with cheese. Bake, uncovered for about 15 minutes or until casserole is heated through and cheese is melted. Enjoy!
CRUNCHY BEEF CASSEROLE
This is a long time family favorite that my husband, a very picky eater, learned to love and asked to make often. The original recipe asked for a lot more of the seasoned salt (3/4 tablespoons), but I have learned less is better. It is fast, easy and delicious.

- 1. Brown the ground beef. Prepare pasta as package directions specify, omitting salt.
- 2. In large bowl, add cooked pasta, browned ground beef, cheese, soup, green pepper, tomatoes and seasoned salt. Mix together.
- 3. Place mixture in a casserole dish and bake at 350 degrees for 30 minutes, covered.
- 4. Uncover and sprinkle French fried onions over the top. Bake for an additional 5 minutes.
