Steps:
- Preheat oven to 400F, with rack on lower middle position. Line a large baking sheet with foil and generously grease the foil. Add panko breadcrumbs in a single layer on greased foil; spray oil over the top of the panko. Brown panko for 4 minutes, or until golden and crisp. Toasting the panko is the secret to the crunch. Let cool while you continue with recipe.
- Meanwhile, increase oven temp to 450F, keeping rack on lower middle position. Use paper towels to thoroughly dry chicken tenderloins. Set chicken aside. In a shallow pan (I use pie pans) combine toasted panko with oregano, onion powder, salt, garlic powder, and pepper. Stir to combine well. In a separate shallow pan, combine the egg with 1 TB water, whisking to incorporate.
- Replace the foil on large baking sheet and place a wire rack over it. Generously grease the rack. Dip a chicken tenderloin into the egg mixture, coating well and letting excess drip off. Coat generously with panko mixture. Place on greased wire rack. Repeat with remaining chicken tenderloins, leaving at least an inch of space between each one on the rack.
- Spray tops of chicken tenders with oil. Bake 11-13 minutes or until chicken genders are just cooked and the coating is nicely browned (actual bake time depends on thickness of chicken and your oven.) Serve immediately while fresh from the oven, with dipping sauces of your choice.

- Preheat oven to 425° F. Place an oven-safe wire rack on a rimmed baking sheet. (If you do not have an oven-safe wire rack, you can bake the chicken right on the baking sheet. See note below.) Spray the rack or baking sheet with cooking spray.
- To prepare the breading on the chicken, you will need 3 wide, shallow bowls, dishes or pie plates. In one dish, place the flour. In the second dish, beat together the eggs and water. Then, to the dish with the beaten eggs, add the paprika, garlic powder, onion powder, salt and pepper and mix with a whisk or fork until well combined and no clumps of spices remain. In the third dish, place the panko bread crumbs.
- Coat the chicken first in the flour, then in the egg mixture, and finally in the panko. Place chicken on the prepared baking rack/sheet.
- Bake for 16-18 minutes, or until cooked through to at least 165° F and lightly browned. If desired, you can turn on the broiler during the last few minutes of cooking to help crisp the coating on the chicken even more. Serve with dipping sauces, as desired.

- Preheat oven to 400 degrees. Add cashews and coconut flakes to your food processor and process until cashews are about the size of the panko crumbs, scraping the sides of the blender as needed. Add cashews/coconut, panko, chicken tender spices and brown sugar to a shallow dish and mix until evenly distributed.
- Place the flour in another shallow dish. Whisk the egg with the lime juice in another shallow dish. Working with one chicken tender at a time, dredge in flour and then dip in egg, and then finally coat in the coconut/cashew/panko mixture, pressing mixture into chicken with your fingers to make sure the coating sticks.
- Place chicken tenders on a foil-lined baking sheet (for easy clean up!) with a baking rack on top that has been sprayed with non-stick cooking spray. Lightly spray chicken with non-stick cooking spray for extra crispiness. Bake for approximately 20-25 minutes or until cooked through (165 degrees F). Broil until coconut is nicely golden, and panko crisp, but still light in color.
- To make the Mango Honey Dip, place all the ingredients in a blender, starting with just 1 teaspoon red pepper flakes and process until smooth. Taste and add additional red pepper flakes as desired.
