CRUNCHY COLESLAW RECIPE WITH RAMEN

Crunchy Coleslaw Recipe with Ramen image

Try this slightly untraditional coleslaw with a sweet-and-sour dressing, almonds, and Ramen noodles. It's full of flavor and crunch.

Provided by Paula Rhodes

Categories     Salads

Time 15m

Number Of Ingredients 8

2 tablespoons sugar
1/2 cup vegetable oil (I use avocado oil)
3 tablespoons white vinegar
1/2 teaspoon black pepper
2 tablespoons sesame seeds
1/2 cup almonds (sliced or slivered)
3- ounce package chicken-flavored Ramen noodles (including the seasoning packet)
1 14 to 16- ounce bag of coleslaw mix

Steps:

  • Mix sugar, oil, vinegar, and pepper together to make the dressing. Use a small container you can shake to mix to make it easier to transport later.
  • Toast sesame seeds and almonds. (I do this in my microwave for 1-1/2 minutes on a paper plate. Stir once.) When cooled, put into a zippered plastic bag if not eating immediately.
  • Put a whole brick of Ramen noodles with seasoning packet into a quart-size zippered plastic bag. Use a rolling pin to crush. Store in a bag until ready to assemble the salad.
  • Place coleslaw into a salad bowl. Cover with plastic wrap. Bring salad dressing container, nuts, and crushed Ramen noodles with you to wherever salad will be eaten.
  • Just before it's time to eat, add nuts, Ramen noodles, and dressing to the bowl of coleslaw. This recipe is best fresh and crunchy.

CRUNCHY RAMEN COLESLAW

Crunchy Ramen Coleslaw image

This Crunchy Ramen Coleslaw is as an easy, Asian inspired salad that whips up in minutes. It's one of the most simple and healthy recipes I've tried, made with cabbage and Ramen and served cold with a delicious, flavorful dressing that the whole family will love!

Provided by Jessy Freimann

Categories     Appetizer     Side Dish

Time 15m

Number Of Ingredients 10

3 Tbsp. sesame seeds
1 cup slivered almonds
1 one pound bag of shredded cabbage
1 bag of Oriental Flavor Ramen Noodles (broken up into bite-size pieces (reserve the seasoning packet))
Chopped scallions for garnish
3 Tbsp. apple cider vinegar
2 Tbsp. granulated sugar
1/3 cup of vegetable or canola oil
Ramen seasoning packet (which comes from the noodles that go into the salad)
Salt and pepper to taste

Steps:

  • Place the sesame seeds and slivered almonds into pan and toast them for a couple minutes over medium low heat, turning them periodically. They will start to smell fragrant when they are done (don't burn them!). Set aside to cool.
  • In a bowl, whisk together the vinegar, sugar, oil, Ramen seasoning packet and some salt and pepper until well combined. Set aside.
  • In a larger bowl, mix the cabbage, noodles, almonds and sesame seeds.
  • Toss well in the dressing and sprinkle with chopped scallions just before serving.
  • Enjoy!

CRUNCHY ASIAN RAMEN COLE SLAW

Crunchy Asian Ramen Cole Slaw image

I recieved this recipe from my future sister-inlaw, Amy. She got the recipe from her aunt Diana. My family loves this slaw. I chilled my slaw sauce before using while preparing the other ingredients. When I made this I used white vinegar (I do not recommend Apple Cider Vinegar). I recommend using good quality Ramen noodles no off brands. I also use Sunkist Almond Accents roasted garlic caesar flavored sliced almonds. I also allowed my browned noodles, almonds and seeds to cool before mixing into the shredded slaw. Diana says "Do not pour sauce onto slaw mix until ready to serve or the noodles will become soggy".

  • In the bottom of a large bowl, combine the vinegar, sesame oil, tamari, olive oil, honey, almond butter (if using), garlic, ginger, and red pepper flakes, if using. Whisk well to combine. (You can also toss this in a blender to blend until smooth, if you prefer.) Taste and adjust any seasonings, as needed.
  • To the bowl of dressing, add in the shredded cabbage, carrots, green onions, and cilantro. Toss well to combine, and let the salad marinate for at least 10 minutes before serving.
  • Serve the salad with a sprinkling of sesame seeds on top. Leftovers can be tightly covered and stored in the fridge for up to 3 days, but if you plan on making this salad ahead of time for company, I recommend storing the dressing and vegetables separately for the best flavor and texture.
