Recipe video above. This is a recipe that really makes the most lamb racks which are a pricey cut of meat! Adding a crunchy rosemary-garlic crumb not only adds extra flavour but is also a great textural contrast to the soft and tender lamb meat. To stop the crumb falling off lamb racks, just add a touch of egg into the mustard spread. Egg is after all the ultimate natural food glue!Serve straight up (lamb cutlets are sooo juicy and tender, most people think no sauce is necessary!), with a Creamy White Wine & Mustard Sauce or else a Pea Puree (great colour and is as good as a sauce).

1 rack of lamb (6 to 9 bones) (, your choice Frenched or not (Note 1))
1 1/4 tsp salt
3/4 tsp black pepper
2 tbsp olive oil
3 tsp egg (, lightly whisked (Note 2))
3 tbsp Dijon mustard
1 tbsp fresh rosemary leaves (, finely chopped)
1 small garlic clove (, minced)
1 cup Panko breadcrumbs ((Note 3))
2 tbsp parmesan (, finely grated)
1 garlic clove (, finely minced (knife, not garlic press))
1/4 tsp each salt and pepper
2 tbsp fresh rosemary leaves (, finely chopped)
30g / 2 tbsp butter (, melted)
1 cup dry white wine ((sauvignon blanc, pinto gris, semillon, or any blend))
1 cup chicken stock (, low sodium)
1 cup heavy/thickened cream
1 tbsp dijon mustard
1/8 tsp each salt and pepper

  • Preheat oven to 200°C/390°F (all oven types). Place shelf in the middle of the oven.

These are very tasty, and make for an easy main meal to prepare. Try serving them with mashed potatoes, peas and pumpkin.

3 eggs
3 teaspoons Worcestershire sauce
12 (5.5 ounce) lamb chops
2 cups dry bread crumbs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, combine the eggs and the Worcestershire sauce; stir well. Dip each lamb chop in the sauce and then lightly dredge in the bread crumbs. Then arrange them in a 9x13-inch baking dish.
  • Bake at 375 degrees F (190 degrees C) for 20 minutes, turn chops over, and cook for 20 more minutes, or to desired doneness.

8 lamb cutlets
1 cup breadcrumbs (I prefer winter wheat bread crumbs)
1 cup all-purpose flour
1 large egg
1 teaspoon sea salt
1/4 cup olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • Beat the egg in a bowl shallow enough to hold a whole cutlet.
  • Put bread crumbs in a similar bowl beside the whipped egg & then do the same with the flour in a 3rd bowl.
  • Roll cutlets in the flour, one at a time, then dip them in the egg before coating them with bread crumbs.
  • Heat oil in a large skillet over low heat, then fry cutlets for 6 minutes, 3 minutes on each side.
  • On a baking tray, place fried cutlets on their edge so they form a rack & then cover them with aluminum foil.
  • Bake 20 minutes for medium or 25 minutes for well-done lamb.

This juicy breaded pork chops recipe is quick and easy to prepare!

4 pork chops (boneless center loin, 1" thick)
1 egg (whisked)
1/4 cup flour
1/2 cup Italian breadcrumbs
2 tablespoons grated Parmesan cheese
1 teaspoon garlic powder
salt & pepper to taste
1 tablespoon olive oil (or as needed)

Steps:

  • Preheat oven to 425°F and line a rimmed baking sheet with parchment paper.
  • In a shallow bowl combine bread crumbs, Parmesan cheese, garlic powder, and salt and black pepper.
  • Season flour on a shallow plate with salt to taste. In another shallow bowl add the whisked egg.
  • Dab the pork chops dry with a paper towel and lightly dredge in flour. Dip the pork chop into the egg, making sure to coat all sides. Dip the pork chop into the bread crumb mixture.
  • Heat olive oil In a frying pan over medium-high heat. Brown pork chops for 1 minute per side.
  • Add to the prepared baking sheet and bake for about 12-14 minutes or until they reach an internal temperature of 145°F. Do not overbake.
  • Rest 5 minutes before serving.

We love these little cutlets. They are almost finger food, with only a mouthful or two on each bone. Cooking time includes sauce.

1/4 cup yogurt
1 clove garlic, crushed
1 teaspoon lemon juice
salt and pepper
12 lamb cutlets
1 cup dried breadcrumbs
cooking spray
1 tablespoon oil
1 onion, finely chopped
1 clove garlic, crushed
4 tomatoes, peeled and finely diced
1/2 teaspoon dried herbs
1/4 cup white wine
1/2 teaspoon dried basil
salt & freshly ground black pepper
1 tablespoon chopped of fresh mint

Steps:

  • Mix the yogurt, garlic lemon juice and salt and pepper together.
  • Coat each cutlet in this mix, then dip in the breadcrumbs, patting on firmly.
  • Pre-heat your oven to 190c.
  • Set aside in the fridge whilst you prepare the sauce,.
  • Heat the tablespoon of oil in a heavy-based pan, add the onion and garlic and cook until softened-about 5 minutes.
  • Add the tomatoes, dried herbs and wine and cook gently until cooked down and thickened.
  • If it gets too thick, add more wine.
  • Season with salt and plenty of pepper and the chopped mint; keep warm whilst you cook the cutlets.
  • Sray both sides of the cutlets with oil, lay on a baking sheet and cook in the oven for 20 minutes-or until cooked to your liking.
  • Serve with the fresh tomato sauce.
