Steps:
- Combine the first 9 ingredients; mix well. Cover and refrigerate at least 2 hours. If desired, sprinkle with additional parsley. Serve with vegetables.

SHRIMP AND CRUDITE PLATTER WITH TWO SAUCES
Our take on the Provencal classic le grand aioli, a bountiful spread of vegetables and seafood served with homemade garlic mayonnaise, ups the ante with two delectable dips: a tonnato sauce made with store-bought mayo and a vegan green goddess dressing.

Steps:
- Prepare an ice-water bath. Peel carrots and trim tops; slice in half lengthwise. Clean celery and slice into sticks. Trim radishes. Slice endives and Little Gems into wedges. Place crudites in ice-water bath until crisp and beginning to curl, 10 minutes. Drain well; wrap in paper towels. Refrigerate in resealable plastic bags up to 1 day.
- Bring a large pot of water to a boil; season generously with salt. Add cauliflower and cook until crisp-tender, 2 to 4 minutes. Transfer to ice-water bath. Return pot of water to a boil, add beets, and cook until fork-tender, about 22 minutes. Drain, let cool slightly, and cut into wedges. Store in an airtight container up to 1 day.
- Meanwhile, bring potatoes to a boil in another pot of water; season generously with salt. Cook until easily pierced with the tip of a knife, 8 to 9 minutes. Drain; let cool completely.
- Season eggs and cooked vegetables with salt and pepper; drizzle with oil. Serve with crudites, shrimp, tonnato mayonnaise, dip, and lemon wedges.
CURRY DIP FOR CRUDITES
This curry dip is fantastic with crudites and/or chips. My latest idea is mixing it with my albacore tuna instead of mayo. Mouth-wateringly good. Tastes even better the next day.

- Using a chef's knife, mash garlic and salt to a paste. In a medium bowl combine sour cream, buttermilk, mayonnaise, lemon juice, parsley, and chives. Whisk in garlic-salt paste and Tabasco sauce. Taste, and adjust for seasoning with salt and lemon juice. Transfer to serving bowl. Arrange vegetables on a platter, and serve immediately.

- In a large bowl or resealable plastic container, combine vegetables with salt and 4 cups water and stir to combine. Refrigerate for at least 2 hours (and up to one day).
- In a small bowl, combine yogurt, mayonnaise, capers, lemon juice, mustard, and parsley. Stir well to combine and season with salt and pepper to taste. Drain the vegetables well and serve alongside the sauce.

- Anchovy Sauce:
- Place anchovies, capers, caper brine, and garlic in food processor or blender and turn the machine on. Stream in the olive oil and form a thick dressing. Scrape the dressing into a small serving cup or bowl and return the processor bowl or the blender to its base.
- Black Olive and Parmigiano Sauce:
- Place the black olives, vinegar, and thyme in processor or blender. Turn machine on and stream in the olive oil. When dressing forms, stop machine and add cheese. Pulse-process cheese into dressing then transfer dressing into a second cup or small bowl.
- Garden Tomato and Green Onion Sauce:
- In a small mixing bowl, combine tomatoes, scallions, and parsley. Drizzle the raw sauce with the olive oil and season it with salt and pepper, to your taste.
- Crudite:
- Place the in a small pot. Cover eggs with water and bring water to a boil. Cover pot and remove from heat. Let eggs stand 10 minutes.
- Drain eggs and crack shells by rattling cooked eggs inside empty covered pot. Peel and cool eggs under cold running water.
- Arrange the vegetables in a flower pot, building high and stuffing the pot tightly. Nest whole eggs and whole tomatoes among the vegetables. Serve your vegetable masterpiece with sauces to pass at table.

- Roast the Peppers (If Desired): Place the peppers directly over a gas flame, turning with tongs and propping them on the burner grates until they are charred evenly on all sides.
- Transfer the peppers to a metal or other heatproof bowl, cover the bowl tightly with plastic wrap and set aside to steam, 10 to 15 minutes. Pull away the charred skin with a paper towel and discard.
- Continue cleaning the peppers, discarding the charred skin and seeds, but preserving the flesh and juices until the peppers are mostly clean. Do not rinse. (Note: The peppers can also be roasted in the oven. Toss the peppers with a drizzle of olive oil, set the broiler to high and broil on a baking sheet, turning as needed with tongs, until evenly charred. Steam the peppers, remove the skin and clean as directed above.)
- MAKE THE SAUCE: Snap off the stems of the dried peppers, shake out the seeds and place the peppers in a large bowl. Pour the boiling water over the dried peppers. Cover the bowl and let the peppers soften, about 15 minutes 5. Drain the softened peppers and discard the liquid. Combine the softened peppers, roasted red peppers, olive oil, almonds, bread crumbs, garlic, tomato and sherry vinegar in the bowl of a food processor and process until mostly smooth, about 2 minutes. Add ½ teaspoon salt, season with black pepper and pulse to blend. Taste and then add more salt as needed. 6. ASSEMBLE THE CRUDITÉS: Keep the romesco at room temperature until ready to use, or store in an airtight container in the fridge for up to two days. Serve the romesco slightly warm or at room temperature (never cold or straight from the fridge) with assorted raw vegetables for dipping.

- Blanch asparagus in boiling water for just 1 minute and then shock in cold water. Dry with a paper towel and put in a bowl and toss with 2 tablespoons of olive oil, lemon zest, and salt and pepper. Preheat grill to medium. Place asparagus on the grill and turn every 2 minutes until done on all sides. This should take about 6 minutes. Serve with other vegetables on a platter with dipping sauce.
