1 ½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 ⅓ cups rolled oats
1 cup butter
1 ½ cups packed brown sugar
2 eggs
½ teaspoon vanilla extract
1 ½ cups shredded coconut
2 cups semisweet chocolate chips
½ cup chopped walnuts
1 cup candy-coated chocolate pieces
1 cup peanuts

Steps:

  • Combine flour, baking soda, salt and oats. Stir well to blend. Cream butter, brown sugar, eggs and vanilla together thoroughly. Add flour mixture to creamed mixture. Mix well.
  • Stir in 1/2 cup coconut and chopped nuts. Spread dough evenly in 2 greased 10 inch pizza pans or press into 10 inch circles on greased baking sheets.
  • Bake at 350 degrees F (175 degrees C) for 10 minutes. Remove from oven.
  • Sprinkle with chocolate, remaining 1 cup coconut, candies and peanuts. Bake for 5-10 minutes longer or until golden brown. Cool in pans on wire racks. Cut cooled cookie pizza into wedges.

1/2 cup peanut butter
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg

2 cups miniature marshmallows
1 cup semisweet chocolate chips

Steps:

  • In a bowl, cream butter, peanut butter and sugars. Beat in egg and vanilla. Stir in flour until blended. , Spread dough onto a greased 12-in. pizza pan. Bake at 375° for 12 minutes. Sprinkle with marshmallows and chocolate chips. Bake 5-6 minutes longer or until lightly browned.

Easier than rolling individual cookies and no cookie dough chilling. Chocolate chip cookie pizza is perfect for sharing!

2 cups (250g) all-purpose flour (spoon & leveled)
2 teaspoons cornstarch (aka cornflour)
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1.5 sticks or 170g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light or dark brown sugar
1/4 cup (50g) granulated sugar
1 large egg, at room temperature
2 teaspoons pure vanilla extract
1 and 1/4 cup (225g) semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F (177°C). Lightly grease your pizza pan.
  • Whisk the flour, cornstarch, baking soda, and salt together in a medium bowl. Set aside.
  • Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter and both sugars together on medium speed until smooth, about 2 minutes. Add the egg and beat on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla extract, then mix on high until combined.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, add the chocolate chips. Dough will be thick and soft.
  • Transfer the cookie dough to the pizza pan and flatten out with your fingers or a rubber spatula until the edges reach the sides (or just about to the sides).
  • Bake for 22-25 minutes or until puffed and lightly browned on top. If you want the cookie pizza a little crispier on the edges, bake for a couple extra minutes. Allow the cookie pizza to cool on the pan set on a wire rack before slicing. Cover leftovers and store at room temperature for 2-3 days or in the refrigerator for up to 5 days.

  • Spread in greased 14 inch round pizza pan. Bake at 375 degrees F (190 degrees C) for 20-25 minutes. Cool cookie in pan on a cooling rack. Decorate as desired.

COOKIE CRUST
1/2 c butter, room temperature
1/4 c shortening
3/4 c sugar
1/4 tsp salt
1 1/3 c all-purpose flour
1 tsp cream of tartar
1/2 tsp baking soda
1 egg
TOPPING
8 oz pkg cream cheese, room temperature
1/2 c sugar
1 c juice drained from canned fruit
2 Tbsp corn starch
your favorite chunked fruit {pineapple, bananas, strawberries, peaches, etc}
1 can(s) fruit cocktail, canned (14.5 oz)

Steps:

  • 1. Combine butter, shortening, and sugar. Add egg and mix well.
  • 2. Add dry ingredients.
  • 3. Spread on a greased cookie sheet. Bake at 400 degree for 8-10 minutes and cool.
  • 4. Mix cream cheese with 1/2 cup sugar. Spread on cooled crust.
  • 5. Drain fruit and add juice to a saucepan. Combine juice with corn starch and cook until thick. Add fruit cocktail.
  • 6. Place fruit cocktail and any other desired fruit on top of the cream cheese. Refrigerate 2 hrs before serving.

1 cup sweetened whipped cream
¼ cup chopped walnuts
¼ cup flaked coconut
½ cup candy-coated milk chocolate pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the brown sugar, white sugar, and butter until smooth. Mix in egg and vanilla. Combine the flour and baking soda; stir into the batter. Dough will be stiff. Mix in mini chocolate chips. Spread or pat dough onto an ungreased 12 inch pizza pan or cookie sheet.
  • Bake for 15 minutes in the preheated oven, or until golden brown; let cool.
  • Just before serving, spread cookie with whipped cream. Sprinkle with nuts, coconut and chocolate candies. Cut into wedges. Refrigerate any remaining pizza cookie.

1/2 cup butter or 1/2 cup margarine, softened
3/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 cup milk chocolate chips
1 cup miniature marshmallow
11 ounces sweetened condensed milk
1 cup candy covered plain chocolate candies (M&M's)

Steps:

  • Crust: Cream butter and brown sugar together in a large bowl until fluffy. Beat in egg until well blended.
  • Add flour, stir. Turn out onto a lightly floured surface and knead until a soft dough forms. Press dough into a 12" pizza greased pizza pan, forming a rim around the edge.
  • Topping: Sprinkle chocolate chips and marshmallows evenly over crust. Pour condensed milk evenly over the top. (I use a spiral pattern working from the outside in). Bake at 350 for 20 minutes or until crust is golden brown.
  • Remove from oven and immediately place candies on top. Cool completely in pan. Cut into wedges.
