QUICK CHIPPED BEEF CHEESE BALL
I got this recipe from a friend who used to work at the deli of our local grocery. When they were bought out by a larger chain their cheese ball recipe changed. This is the only way I can get my favorite cheese ball now. The grocery called it "chipped beef" but it actually uses thinly sliced Buddig roast beef.

DRIED BEEF / CHIPPED BEEF CHEESE BALL
This is my most requested recipe. We have it at every family function, and it always goes fast. I often double the recipe, making one really large cheese ball. I got this from my mother, who got it from an old cookbook. It really is simple and delicious. You will never want to make another cheese ball. Enjoy!

Steps:
- Dice the dried beef into small pieces. This is dependent upon how small you want your dried beef to be. I usually dice mine into 1/4" squares (approx.), but others like it more finely diced.
- Dice/mince the green onions.
- Add all of the ingredients to the softened cream cheese in a medium sized bowl. Stir. (I usually use my clean hands for this; a wooden spoon also works with a bit more effort). The ingredients should be consistent throughout the cheese ball.
- Wrap in plastic wrap. Store in the fridge for at least 6-8 hours. This is one of those recipes that is at its best after sitting overnight. This way, the flavors really blend.
- Serve with crackers. My family likes Wheat Thins, but it really goes with any type of cracker. Enjoy!

SCALLION & BEEF CHEESE BALL
I had this, for the first time, at a friend's house about thirty years ago. It was amazingly delicious, so of course I asked her for the recipe and was amazed that it only included three ingredients. It's very easy to make and is always a crowd pleaser.

Steps:
- Rinse and dry scallions; remove white root ends and save for another use.
- Thinly slice or mince green scallions (I use kitchen shears.) Set aside.
- Finely mince dried beef (I use kitchen shears.) Set aside.
- In a mixing bowl, mash cream cheese well with a sturdy fork.
- Add beef; combine well.
- Add minced/sliced green scallions; combine very well.
- Cover and refrigerate for one hour or more, to allow mixture to become firmer before forming into ball (I recommend using food service gloves when forming the cheese ball.) Alternately, you may place the mixture in an appropriately sized bowl and it may be served as a cheese spread, if desired.
- Cover and refrigerate leftovers.
