Easy Cherry Bars image

Easy Cherry Bars are a tasty summer treat! Shortbread double crust with cherry pie filling baked in a sheet pan and topped with sweet vanilla almond glaze.

1 cup butter (, softened)
2 cups sugar
1 teaspoon salt
4 large eggs (, room temperature)
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups flour
2 cans cherry pie filling (, 21 ounces each )
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2-3 tablespoons whole milk

Steps:

  • Preheat oven to 350 degrees. Spray a 15x10 sheet pan with baking spray.
  • In a stand mixer, cream butter, sugar, and salt on medium speed until light and fluffy.
  • Add eggs, one at a time, then add extracts.
  • Gradually fold in flour to butter mixture until combined and dough forms.
  • Press 3 cups dough into prepared pan.
  • Spread with cherry pie filling covering all the dough evenly.
  • Drop remaining dough by teaspoonfuls over filling.
  • Bake 35-40 minutes, or until golden brown.
  • Cool completely in pan before glazing.

This is my favourite bar-type cookie from Company's Coming! After you've tried it, you'll understand why.

Number Of Ingredients 15

1 1/4 cups all-purpose flour
1/3 cup packed brown sugar
1/2 cup butter or 1/2 cup margarine
2 eggs
1 1/4 cups packed brown sugar
1 tablespoon flour
1/2 teaspoon baking powder
1 pinch salt
1 cup medium grind coconut
1/2 cup chopped walnuts
1/2 cup candied cherries or 1/2 cup maraschino cherry (at least)
1 cup icing sugar
2 tablespoons butter or 2 tablespoons margarine
1/2 teaspoon vanilla
1 tablespoon water

Steps:

  • FIRST LAYER: Crumble ingredients together well.
  • Press into ungreased 9 x 9 inch pan.
  • Bake in preheated 350F oven for 15 minutes.
  • SECOND LAYER: Beat eggs slightly; add remaining ingredients in the order listed.
  • If using maraschino cherries, drain well.
  • I prefer using candied cherries- at Christmas, I use a mixture of red& green.
  • Spread over first layer& return to oven for 25 minutes.
  • Let cool completely.
  • TOP LAYER: Beat ingredients in a small bowl, adding more water if necessary to make a more spreadable mixture.
  • This makes a minimum amount of icing to spread over top.

1 cup melted butter
1 3/4 cups sugar
4 eggs, one at a time
3 cups flour
1 teaspoon vanilla
1 1/2 teaspoons baking powder
1/2 teaspoon salt
21 ounces cherry pie filling
1 cup powdered sugar
2 tablespoons butter, melted
1/2 teaspoon vanilla
2 teaspoons milk

Steps:

  • Mix together all ingredients except the pie filling.
  • Reserve 1 1/2 cups batter.
  • Spread the rest of the batter in a jelly roll pan.
  • Spread 1 can of cherry pie filling over batter.
  • Spoon the reserved batter on top.
  • Bake 35 minutes at 350 degrees Fahrenheit.
  • Stir together the glaze ingredients. Drizzle over top of cherry squares while still warm.

No Bake Cherry Cheesecake Bars image

This no bake cherry cheesecake recipe is ridiculously easy to make and a total crowd pleaser!

Number Of Ingredients 6

2 cups graham crumbs
6 tablespoons butter, melted
2 (8 ounce) packages of cream cheese, softened
½ cup of sugar
½ cup heavy cream
1 can (450 ml) cherry pie filling

Steps:

  • Line an 8 x 8 inch square baking dish with parchment paper. Set aside.
  • In a small mixing bowl combine the graham crumbs and butter. Mix until combined. Pour into baking dish, and press down to form the crust.
  • In a mixer using the paddle attachment combine the cream cheese and the sugar. Mix until it becomes light and fluffy.
  • In a separate bowl mix the heavy cream on low at first, then increase speed to high. Mix until the heavy cream becomes whipped cream. It should for peaks.
  • Pour the whipped cream into the cream cheese mixture. Mix on high until combined. Scoop into the baking dish and smooth out with the back of a spoon or spatula.
  • Spoon the cherry pie filling out evenly over the top. Smooth out carefully.
  • Pop the dish in the fridge for at least 4 hours, but preferably overnight.
  • Remove and cut into squares.
  • Serve with a big old cherry cheesecake loving smile!

  • Preheat oven to 350°F. Line bottom and sides of a 13- x 9-inch pan with heavy-duty aluminum foil, allowing 2 to 3 inches to extend over sides; lightly grease foil with cooking spray.
  • Pulse flour, granulated sugar, and salt in a food processor until combined. Add butter cubes, and pulse until mixture is crumbly. Reserve 1 cup flour mixture. Press remaining flour mixture onto bottom of prepared pan.
