MUSHROOM CROUSTADES



Mushroom Croustades image

Delicious appetizer that will be a big hit when you serve it. My girlfriend made these years ago and gave me the recipe. I have made these many times over the years and everyone raves about them.

12 -18 slices white bread
1/4 cup butter (not margarine)
1/2 cup finely chopped green onion
1 cup finely chopped mushroom
2 tablespoons flour
1 cup half-and-half cream
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 tablespoon parsley, chopped or 1 1/2 teaspoons dried parsley
1/2 teaspoon lemon juice

Steps:

  • For Croustade:
  • Use a rolling pin to flatten each bread slice. Cut 3" (18 small) or 4" (12 large) rounds and gently fit into small or large muffin tins.
  • Bake for 10 - 15 minutes at 425 or until golden and crisp. Cool on wire racks.
  • Filling:.
  • Melt butter in a large skillet and saute green onions for several minutes without browning.
  • Stir in the mushrooms and mix well. Cook 10 - 15 minutes, stirring occasionally until moisture has evaporated.
  • Remove from heat, sprinkle with flour and stir to coat the mushrooms.
  • Gradually add the cream and return to heat.
  • Bring to a boil, stirring constantly and then reduce heat and simmer for a few minutes until thick.
  • Stir in all the other ingredients.
  • Transfer filling to a bowl, cover it and refrigerate until ready to use.
  • To Serve:.
  • Place croustade on cookie sheet and fill each croustade with mushroom filling so that it is slightly mounded.
  • Sprinkle lightly with parmesan cheese and dot with butter.
  • Bake at 350 for 10 minutes and then turn to broil and brown the tops lightly.
  • Serve hot.

CHICKEN CROUSTADE

1 loaf soft white bread, sliced into 30 pieces
1 tablespoon olive oil, plus extra for muffin tins
3/4 cup heavy cream
1/2 pound raw chicken breast meat, cut into small dice
1/4 pound prosciutto ham, cut into small dice
Freshly ground black pepper to taste
1 egg yolk
1/4 cup grated Parmesan, plus more as needed for topping
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 325 degrees F.
  • With a rolling pin, roll out each bread slice until thin. Cut out bread with plain round cutter 1 1/2 inches in diameter and flatten again with a rolling pin. Oil small muffin tins and place the bread rounds inside. Bake until golden. Store the croustade shells covered in a dry area.
  • Reduce the cream by half and reserve until needed. Saute the chicken in 1 tablespoon oil until half cooked. Add the prosciutto and continue to cook until is thoroughly heated and chicken is thoroughly cooked. Add the cream and black pepper, to taste; bring to a simmer. Add a little hot cream to the egg yolk to temper and add to pot, being careful not to boil. Add the cheese, basil, and parsley. Adjust seasoning. Fill the croustade shells; sprinkle with a little additional grated Parmesan and brown lightly under a broiler or salamander. Serve warm.

JAM-FILLED CROUSTADES

French for "crust," a croustade is usually made with flaky pastry. Here, the buttery dough is filled with fruit jam for the ultimate breakfast treat.

1 envelope (1/4 ounce) active dry yeast (not rapid-rise, 2 1/4 teaspoons)
1 cup warm milk (110 degrees)
1 vanilla bean, seeds scraped
4 1/2 cups, plus 2 tablespoons unbleached all-purpose flour (1 1/4 pounds), plus more for dusting
1/2 cup sugar
1 tablespoon kosher salt
4 sticks (2 cups) unsalted butter, room temperature, cut into tablespoons
2 large eggs, plus 1 large egg yolk and 1 lightly beaten large egg
1 1/4 cups jam or preserves, such as plum, apricot, raspberry, or black raspberry

Steps:

  • Dough: In a small bowl, sprinkle yeast over milk; stir until dissolved. Let sit until foamy, about 5 minutes. Stir in vanilla seeds. In the bowl of a mixer fitted with the dough-hook attachment, mix together 4 1/2 cups flour, sugar, salt, and 1/2 stick butter on low speed until butter is incorporated and mixture resembles coarse meal, 3 to 4 minutes. Add yeast mixture; mix until dough just comes together. Add eggs and yolk; mix until just combined, 2 to 3 minutes (do not overmix).
  • Turn dough out onto a lightly floured surface, making sure to include any loose bits left at bottom of bowl. Gently knead to form a smooth ball, about 30 seconds. Wrap tightly in plastic; refrigerate at least 2 hours and up to overnight.
  • In the bowl of a mixer fitted with the paddle attachment, beat together remaining 3 1/2 sticks butter and 2 tablespoons flour. Shape mixture into a 12-by-10-inch rectangle on a piece of plastic wrap. Refrigerate 15 minutes or up to 1 day. On a lightly floured surface, roll out dough to an 18-by-10-inch rectangle, a little over 1/4 inch thick, keeping the corners as square as possible. Remove any excess flour with a dry pastry brush. Remove butter mixture from refrigerator and let stand at room temperature until it is the same consistency as the dough. With a short side facing you, place butter mixture over two-thirds of the dough. Fold the unbuttered third over as you would a business letter, followed by the remaining third. This seals in the butter.
  • Roll out dough again to an 18-by-10-inch rectangle, then fold into thirds as described above; refrigerate 1 hour. This completes the first of three turns. Repeat rolling and folding process two more times, refrigerating at least 1 hour between turns. To help you remember how many turns have been completed, mark the dough after each one: make one mark for the first turn, two for the second, and three for the third.
  • Wrap tightly in plastic and refrigerate at least 4 hours and up to overnight. Dough can also be frozen, tightly wrapped in plastic, up to 2 weeks (thaw in refrigerator overnight before using).
  • On a lightly floured surface, roll out dough to a 20-by-16-inch rectangle, trimming edges if necessary. Using a ruler, cut into twenty 4-inch squares and transfer to one of three parchment-lined baking sheets, leaving an even amount of space between squares until you have two sheets with 7 squares each, and one sheet with 6 squares.
  • Working with one square at a time, fold in half to form a triangle. Using a sharp pizza wheel, make a cut parallel to one of the short sides of the triangle, about 1/4 inch from the edge, stopping about 1/8 inch from the opposite short side. Make a second cut parallel to the opposite short side, about 1/4 inch from the edge, stopping about 1/8 inch from the first line. (Make sure lines do not meet.) Unfold triangle back into a square and brush egg wash along edges. Fold outer cut corners over to opposite inside corners. Press borders down to seal. Repeat with remaining squares. Loosely cover with plastic wrap and let rise in a warm spot until doubled in bulk, about 1 hour.
  • Filling: Preheat oven to 375 degrees. Fill center of each square with 1 tablespoon jam, then lightly brush dough with egg wash. Bake, rotating sheets from top to bottom halfway through, until deep golden brown, 20 to 25 minutes. Let cool completely. Pastries are best served the same day.

Yield Makes nine 5-inch croustades

1/2 recipe Quick Puff Pastry for Fig and Raspberry Croustades
All-purpose flour, for work surface and puff pastry
1 large egg
Pinch of coarse salt
1 cup whole milk
1 cup heavy whipping cream
1/3 cup sugar
1/2 vanilla bean, split lengthwise
3 (3-inch) strips lemon zest
1 (2-inch) cinnamon stick
6 large egg yolks
1 pint (about 12 ounces) fresh black or green figs
2 1/2 baskets fresh raspberries (1 pint; about 8 ounces)
3/4 cup seedless raspberry jam

Steps:

  • Make the Croustades: Place dough on a lightly floured work surface; lightly flour dough. Using a rolling pin, press the dough firmly in parallel strokes close to one another. Continue pressing with rolling pin, adding a pinch of flour to dough between strokes, until dough becomes more malleable.
  • Continue rolling dough back and forth without rolling over the ends (which may make ends thinner and stick to surface). Turn dough 90 degrees, and continue rolling in the other direction; roll dough, changing directions as necessary, into a 15 1/2-inch square. Carefully transfer dough to a large baking sheet and cover loosely with plastic wrap; transfer to refrigerator and chill until firm, about 15 minutes.
  • Using a sharp pizza wheel, trim edges of dough and cut into nine 5-inch squares. Fold each square of dough, corner to corner, to form a triangle. Using the pizza wheel, make a cut over the fold on both sides about 1/2 inch from the edge of the triangle.
  • Unfold triangles back into squares. Pierce the inner squares at 1/2-inch intervals using the tines of a fork. In a small bowl, whisk together egg and salt; brush inner squares lightly with egg mixture.
  • Fold the outer corners of each square over to the opposite inside corners, one at a time.
  • Using a floured fingertip, press the borders down and indent the sides of each croustade at 1/4-inch intervals with the dull side of a paring knife. Place croustades on a parchment-paper-lined baking sheet; chill until firm, or cover and chill overnight.
  • Preheat oven to 375 degrees with a rack set in the center of the oven. Bake croustades until well risen and deep golden, 25 to 30 minutes. Remove croustades from baking sheet and remove some of the puff pastry layers from the center by loosening the sides of the inner squares with a fork and lifting out, also removing any unbaked dough in the process. If you would like to use the removed layers as covers for the filling, return them to baking sheets along with the croustades; return to oven until centers have cooked through, about 5 minutes. Transfer to a wire rack to cool.
  • Make the Creme Anglaise: In a medium saucepan, whisk together milk, cream, sugar, vanilla bean, lemon zest, and cinnamon stick; bring to a boil over low heat. Meanwhile, set a fine-mesh strainer over a medium bowl; set medium bowl in a larger bowl prepared with an ice-water bath. Whisk yolks in another medium bowl.
  • Using a slotted spoon, remove vanilla bean, lemon zest, and cinnamon stick from boiling milk mixture; discard. Whisk 1/3 of the milk mixture into the bowl with egg yolks. Return remaining milk mixture to a boil and, while whisking, gradually add egg yolk mixture to saucepan. Continue whisking until mixture thickens slightly, about 15 seconds.
  • Remove from heat and pour through strainer set over prepared bowl. Continue whisking mixture until it cools slightly, about 30 seconds. Let stand until completely cooled. Transfer creme anglaise to an airtight container and keep refrigerated until ready to use. This can be done up to 1 day in advance.
  • Make the Fig and Raspberry Filling: Stem, peel, and chop figs, reserving 5 whole figs to finish croustades, and place them in a large bowl. Add raspberries, reserving 18 to finish croustades. Cover and set aside at room temperature. This can be done up to 1 day in advance.
  • Heat jam in a small saucepan over low heat, stirring occasionally, until it comes to a boil. Let jam reduce slightly, about 5 minutes. Transfer to a bowl to cool for at least 15 minutes.
  • Fold the cooled jam into the fig and raspberry mixture. Place croustades on individual plates. Spoon the mixture into the center of each croustade. Halve remaining figs; top each croustade with a fig half, cut side up, and reserved raspberries. Spoon some of the creme anglaise onto the plate and serve immediately.

LITTLE CROUSTADES FILLED WITH GRAVADLAX AND SOURED CREAM



Little Croustades Filled with Gravadlax and Soured Cream image

These are simplicity itself and the filling comes from the supermarket. The croustades are made in mini tartlet tins, which are available in trays of 12; what they are essentially are croutons made into tartlet cases. There are a number of fillings that could go into them - Mexican Guacamole and Anchoïade are excellent. Smoked salmon can be used just as effectively as gravadlax, in which case you add a little lemon juice before the soured cream. We have found that, once assembled, these keep crisp for up to 3 hours.

3 slices medium-cut bread (a light pale rye bread is excellent for this)
2 oz (50 g) butter
1 clove garlic, crushed
salt and freshly milled black pepper
4 oz (110 g) gravadlax, finely chopped
3 tablespoons soured cream or Greek yoghurt
cayenne pepper

Steps:

  • Begin by placing the slices of bread on a flat surface and rolling them with a rolling pin to make them as thin as possible. Next stamp out rounds using a 2¼ inch (5.5 cm) plain cutter. Melt the butter in a small pan containing the garlic and a seasoning of salt and freshly milled black pepper. Now brush the little bread rounds on both sides with melted butter and then press them into the tins firmly. Bake them for about 15-20 minutes or until crisp and brown. Cool them on a wire rack and store them in an airtight tin for up to 2 weeks. To fill them for serving, simply pile the finely chopped gravadlax into each one and top with a little of the sauce that comes with it. Add a blob of soured cream and a dash of cayenne pepper.

1 cup all purpose flour
1 1/2 tablespoons sugar
1/8 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/2-inch pieces
1 large egg yolk
1 1/2 tablespoons ice water
Filling
2 firm but ripe Bosc pears, peeled, quartered, cored, cut into 1/2-inch wedges
3 tablespoons sugar
1 tablespoon all purpose flour
1 tablespoon fresh lemon juice
1/4 teaspoon ground allspice
1 large egg white, beaten to blend
1 tablespoon whipping cream
Topping
2 tablespoons all purpose flour
1 tablespoon sugar
1 tablespoon chilled unsalted butter, cut into 1/2-inch pieces

Steps:

  • For crust
  • Mix flour, sugar and salt in processor. Add butter. Using on/off turns, process until mixture resembles coarse meal. Transfer to large bowl. Mix egg yolk and 1 1/2 tablespoons ice water in small bowl. Using fork, blend enough yolk mixture, 1/2 tablespoon at a time, into flour mixture to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic. Chill until firm, about 1 hour. (Can be prepared 1 day ahead. Keep refrigerated. Let soften slightly before rolling out.)
  • Position rack in center of oven and preheat to °F. Roll out dough on floured parchment paper to 10-inch round. Transfer dough on parchment paper to large baking sheet.
  • For filling
  • Toss pears, sugar, flour, lemon juice and allspice in large bowl. Overlap pear slices atop dough, leaving 2-inch border. Fold dough border over fruit, pleating loosely and pinching to seal any cracks. Brush dough with egg white. Drizzle cream over filling.
  • For topping
  • Mix flour and sugar in small bowl. Rub in butter with fingertips until mixture forms small clumps. Sprinkle topping over filling.
  • Bake tart until crust is golden and filling bubbles, about 40 minutes. Transfer baking sheet to rack; cool slightly, about 15 minutes. Slide metal spatula under crust to free from parchment. Using large tart pan bottom as aid, transfer tart to platter. Serve warm or at room temperature.
