MUSHROOM AND GRAPE CROSTINI

1/2 baguette, cut into twenty-four 1/4-inch slices
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 cup mascarpone cheese, chilled
1 tablespoon chopped chives
1/4 teaspoon kosher salt
1/2 pound assorted mushrooms, torn and cut into bite sized pieces
1 cup red grapes, halved
5 sprigs fresh thyme, leaves removed and stems discarded
2 shallots, sliced into rounds
3 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1 teaspoon sherry vinegar
24 shavings of Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Lay the baguette slices out on a straight-sided baking sheet. Brush each slice of baguette with a generous amount of olive oil. Sprinkle evenly with salt and bake until golden brown and crispy, about 8 minutes. Remove the crostini from the tray and set aside to cool.
  • While the crostini bake, combine the mascarpone, chives and salt in a small bowl. Set aside.
  • Increase the oven temperature to 500 degrees F.
  • On the same baking sheet, combine the mushrooms, red grapes, thyme leaves, shallots, olive oil and salt. Toss well to coat and combine. Roast until the mushrooms are beginning to brown and the grapes have released some of their juices, 8 to 10 minutes Scrape the contents of the tray into a medium bowl and toss with the sherry vinegar. Cool to room temperature.
  • To serve, spread each crostini with equal amounts of the mascarpone mixture. Spoon a small amount of the mushroom mixture on top of each crostini. Top each with one shaving of Parmesan.

This is a recipe I learned from a group of Italian women from the Tuscany region of Italy. They teach cooking classes under the name "Tutti-a-Tavola". This is one of my favorite appetizers to make on the run and is always a hit with guests. You can make up the cheese spread ahead of time and will keep for a couple of days in the refrigerator. Try to find a french baguette that is crispy on the outside and soft on the inside.

1 1/2 cups mascarpone cheese
1/4-1/2 cup freshly grated parmesan cheese (to taste)
3 pinches marjoram (to taste)
salt (to taste)
pepper (to taste)
1 -2 French baguette

Steps:

  • Preheat oven to 400.
  • Mix cheeses and add marjoram. Salt and pepper to taste.
  • Slice baguette in thin (about 1/2 inch) slices.
  • Spread cheese mixture on slices.
  • Place prepared slices on a baking sheet and put sheet into preheated oven.
  • Bake for a few minutes until hot an bubbly. Watch closely--don't let the bread get too brown.
  • Bon Appétit!

14 tablespoons unsalted butter
2 teaspoons minced fresh garlic
8 slices country bread, 1/2 inch thick
2 tablespoons minced shallots
6 -8 cups trimmed sliced shiitake mushrooms
1 teaspoon tarragon or 1 teaspoon sage
3 tablespoons brandy or 3 tablespoons cognac
3/4 cup heavy cream
1/2 cup mascarpone
1 teaspoon kosher salt
1/4-1/2 teaspoon fresh cracked pepper

Steps:

  • Melt 6 tablespoons butter with 1 teaspoon garlic in a big skillet.
  • Brush this mixture on both sides of the bread; place bread in one layer on a baking sheet and set aside.
  • Melt the remaining 8 tablespoons butter in the same skillet; add in remaining garlic and shallots; gently saute until the garlic is soft, about 5minutes.
  • Add in the mushrooms and herbs; increase heat; saute until mushrooms are cooked through, 10 minutes about.
  • Add in the brandy; allow it to evaporate.
  • Add in the cream and mascarpone; bring to a boil; decrease heat, and simmer for 2 minutes to thicken and reduce the cream.
  • Add up to 1 teaspoon salt and the cracked pepper; decrease heat to keep the mixture warm.
  • Toast both sides of the bread under the broiler; place 1 slice on each of 4 heated serving plates; divided the mushroom mixture among them, and top with the remaining toast.
