2 cups eggplants (cubed)
2 cups zucchini (cubed)
10 ounces frozen okra (thawed)
8 ounces tomato sauce
1 onion (chopped)
1 carrot (sliced)
1/2 cup vegetable broth
1/3 cup raisins
1 garlic clove (chopped)
1/2 teaspoon cumin
1/2 teaspoon turmeric
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon cinnamon
1/4 teaspoon paprika

Steps:

  • Throw it all in a crock pot and cook on low for 7 - 9 hours!

With a focus on vegetables, fiber-rich legumes and healthy fats, this slow-cooker stew fits the bill for those following the Mediterranean diet. Swap out the chickpeas for white beans for a different twist, or try collards or spinach in place of the kale. A drizzle of olive oil to finish pulls together the flavors of this easy vegan crock-pot stew.

2 (14 ounce) cans no-salt-added fire-roasted diced tomatoes
3 cups low-sodium vegetable broth
1 cup coarsely chopped onion
¾ cup chopped carrot
4 cloves garlic, minced
1 teaspoon dried oregano
¾ teaspoon salt
½ teaspoon crushed red pepper
¼ teaspoon ground pepper
1 (15 ounce) can no-salt-added chickpeas, rinsed, divided
1 bunch lacinato kale, stemmed and chopped (about 8 cups)
1 tablespoon lemon juice
3 tablespoons extra-virgin olive oil
Fresh basil leaves, torn if large
6 lemon wedges

Steps:

  • Combine tomatoes, broth, onion, carrot, garlic, oregano, salt, crushed red pepper and pepper in a 4-quart slow cooker. Cover and cook on Low for 6 hours.
  • Measure 1/4 cup of the cooking liquid from the slow cooker into a small bowl. Add 2 tablespoons chickpeas; mash with a fork until smooth.
  • Add the mashed chickpeas, kale, lemon juice and remaining whole chickpeas to the mixture in the slow cooker. Stir to combine. Cover and cook on Low until the kale is tender, about 30 minutes.
  • Ladle the stew evenly into 6 bowls; drizzle with oil. Garnish with basil. Serve with lemon wedges, if desired.

2 teaspoons olive or vegetable oil
2 pounds boneless, skinless chicken thighs
1 teaspoon garlic salt
1/4 teaspoon pepper
2 teaspoons dried oregano leaves
2 cans (14.5 ounces each) diced tomatoes with garlic and onion, undrained
1 can (14 ounces) quartered artichoke hearts, drained
1 package (10 ounces) couscous (1 1/2 cups)
1 can (6 ounces) pitted medium ripe olives, drained

Steps:

  • Heat oil in 12-inch skillet over medium-high heat. Sprinkle chicken with garlic salt, pepper and oregano. Cook chicken in oil 8 minutes, turning once, until brown on both sides; drain. Place chicken, tomatoes and artichokes in 4- to 4 1/2-quart slow cooker.
  • Cover and cook on Low heat setting 5 to 6 hours.
  • Cook couscous as directed on package. Stir olives into stew. To serve, spoon stew over couscous.

2 zucchini, cut into bite size pieces
3/4 lb beef stew meat, trimmed and cut into 1/2 inch pieces
2 (14 1/2 ounce) cans diced tomatoes with basil oregano and garlic, undrained
1/2 teaspoon pepper
2 inches cinnamon sticks

Steps:

  • Place zucchini in bottom of a slow cooker.
  • Add beef and remaining ingredients.
  • Cover with lid, and cook on high heat setting for 5 hours or until meat is tender, or cover and cook on high heat setting for 1 hour; reduce to low heat setting, cook 7 hours.
  • Remove and discard cinnamon stick before serving!

1 chicken breast (frozen)
1 onion, chopped
3 garlic cloves, minced
3 tablespoons olive oil
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can artichokes (quartered)
4 -6 carrots, peeled and chopped
4 -6 small russet potatoes, peeled and chopped
1 -2 tablespoon capers
kalamata olive
2 bay leaves
1 cup chicken broth
1/4 teaspoon onion powder
1/4 teaspoon ground oregano
1/8 teaspoon paprika
salt and pepper
2 tablespoons chopped fresh parsley

Steps:

  • Place chicken breast on the bottom of the crockpot.
  • Saute garlic and onions for about 5 minutes in olive oil.
  • Cover chicken with the onions.
  • Pile the tomatoes, artichokes, carrots, potatoes, capers, olives, and bay leaves on top of the chicken.
  • In a separate bowl, mix the chicken broth with the seasonings.
  • Pour the herby broth over the chicken and vegetables.
  • Cook on Low for 6 hours.
  • Just before serving, thicken sauce by adding 2 tblsp of cornstarch to 1/4 cup cold water and pouring inches
  • Wait 3 minutes, Serve and Enjoy!

2 medium zucchini, cut into bite size chunks
1 lb beef stew meat
2 (14 1/2 ounce) cans Italian-style diced tomatoes (do not drain)
1/2 teaspoon ground pepper
1 (2 inch) cinnamon sticks (or 1/2 teaspoon ground cinnamon)

Steps:

  • Place zucchini in bottom of a 3 1/2 quart slow cooker.
  • Add stew meat and remaining ingredients. Cover and cook on high setting 5 hours or until meat is tender.
  • One half hour before serving, remove cover from slow cooker and stir stew.
  • Continue to cook without cover for 30 minutes.
  • Remove and discard cinnamon stick before serving.
