Steps:
- Combine all ingredients in a 4 qt slow cooker.
- Turn on high and cook for 3 - 4 hours until the cranberries have burst and the apples are tender.
- Remove the lid from the slow cooker and continue simmering until the chutney has reached desired consistency.
- Serve hot, cold, or at room temperature.
- Store in the refrigerator for up to 2 weeks.

- Add all the ingredients into a slow cooker except for the cornstarch and water.
- Cook on low for 8 hours.
- For the next 4 hours, set the slow cooker to high and leave the lid slightly askew to allow the liquid to reduce.
- The liquid should be reduced after 4 hours. To thicken it slightly, mix the cornstarch with water to form a paste. Mix the cornstarch paste into the slow cooker.
- Cook for 15 more minutes or until thickened.
- Allow to cool before storing in sterile glass jars or something similar.

- Saute the onion in skillet, about 5 minutes.
- Place the onions and the next 8 ingredients in cooker.
- Stir together flour and vinegar, then add to the cooker.
- Cook on low for 5 hours, stirring before the last hour.
- Remove after finished and immediately transfer to sterilized jars.
- (My favorite way to serve: Mix 8 ounces cream cheese and 1 cup cheddar cheese, then divide evenly between 4 chicken breasts, pounded flat. Bake about 20 minutes, then top with chutney and continue baking until chicken is done.).

- Place the following in the crock pot: nectarines, brown sugar, vinegar, ginger, salt, onion, mustard, cinnamon, cloves.

Mango chutney was described as the ultimate in Indian condiments & excellent w/grilled meats (sauces too I have recently discovered). Best of all is that it's so easy to make in a std slow cooker. This recipe comes from Anupy Singla's fabulous cookbook The Indian Slow Cooker: 50 Healthy, Easy, Authentic Recipes & she added that it's good just mixed w/basmati rice as a side-dish. I allowed 15 min for ingredient prep, but there is no other real prep. I suggest you make this recipe to enjoy w/the Indian dishes you'll be making during the Tour. :-)

THE BEST CRANBERRY CHUTNEY
I know there's a thousand cranberry chutney recipe's out there, but this one is truly the best! Best if made a day in advance to really let the flavors meld. I never really measure the spices either, so I am guessing about 1/2 tsp. of each. Taste the cranberries after letting them set for awhile and re-season if necessary. Prep time does not include refrigeration time. Enjoy! UPDATE: When I posted the original recipe I forgot about the sugar you need in the water for the cranberries. Thank you to Chef Sydney Mike for pointing out my error!

- Bring a pot of water with the 1/2 cup of sugar to a boil and boil cranberries until they pop, usually just a few minutes. Be careful not to over boil or they will be mushy.
- Add all other ingredients except raisins and mix well. Let set in fridge at least 1 hour or up to 24 hours.
- Stir in raisins just before serving.
