1 1/2 cups dried baby lima beans
1 1/2 cups dried great northern beans
1 tablespoon salt
8 cups water
1 smoked ham hock
1 cup diced smoked ham
1 cup diced Little Smokies sausage
1/2 lb bacon, diced and fried crisp,reserve 2 tbs bacon grease
1 medium onion, chopped
2 stalks celery, diced
1 medium carrot, shredded
2 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 teaspoons salt
1 teaspoon fresh ground pepper
2 teaspoons beef bouillon, crystals
2 teaspoons msg
1 teaspoon sugar
2 bay leaves
2 tablespoons Worcestershire sauce
1 teaspoon A.1. Original Sauce
2 teaspoons liquid smoke
2 tablespoons rendered bacon fat

Steps:

  • RINSE AND SORT BEANS AND PUT IN LARGE POT WITH WATER AND SALT.
  • BRING TO BOIL AND BOIL FOR TWO MINUTES.
  • TURN OFF HEAT, COVER, AND LET STAND FOR 1 HOUR.
  • RINSE, DRAIN, AND TRANSFER TO CROCK POT.
  • COMBINE ALL INGREDIENTS IN 6 ½ QUART CROCK POT WITH 10 CUPS WATER.
  • COOK ON LOW FOR 8 HOURS.
  • REMOVE HAM HOCK.
  • CUT OFF USEABLE MEAT AND RETURN MEAT TO POT.
  • REMOVE BAY LEAVES.
  • FOR THICKER SOUP, STIR IN 1 TBS CORN STARCH MIXED WITH 2 TBS WATER.
  • COOK ON HIGH FOR 30 MINUTES TO 1 HOUR.
  • ADJUST SEASONINGS TO TASTE.
  • Makes enough to feed a Third World Country or two teen-agers!

I just love coming home from a long day at work to a cooked dinner! Right when you walk in the door you can smell the wonderful soup, so we dig in as soon as we can!

1 lb boneless chicken, cooked and shredded
1 (15 ounce) can crushed tomatoes
1 (10 ounce) can red enchilada sauce
1 medium onion, chopped, 1/2 c dry minced onion can be substituted
1 (4 ounce) can chopped green chilies, UNdrained
2 garlic cloves, minced
2 cups water
1 (14 1/2 ounce) can chicken broth, can use water as well and add boullion
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can beans, black, pinto, kidney, white, DRAINED AND RINSED
1 teaspoon cumin
1 teaspoon chili powder
1/4 teaspoon bay leaf, crushed
1 tablespoon dried cilantro
corn tortilla strips or chips
monterey jack cheese or monterey jack pepper cheese, shredded
sour cream & guacamole

Steps:

  • Combine all ingredients in greased 4 1/2 to 6 quart slow cooker
  • Cover and cook on low heat 6-8 hrs or on high 3-4 hrs (everyone's crockpot is different, adjust accordingly).
  • Top with shredded pepper or monterey jack cheese, guacamole or sour cream.
  • Serve with tortilla strips or chips, sometimes I even make cheese quesadillas.
  • VARIATION- Add 1 c shredded carrots or zucchini at beginning of cook time.

1 jalapeno, diced

2 (48 ounce) boxes chicken broth
1 (15 ounce) can black beans, rinsed
1 teaspoon salt
1 teaspoon pepper

  • place all ingredients in crockpot. Mix well, turn on high for 3 hours or low for 5-8 hours.
  • Garnish with chunks of avocado, tortilla chips, shredded cheese and/or sour cream.

An easy vegetarian version of tortilla soup. I'm writing it here in its basic, mild form, but you can turn up the heat by adding tabasco, using a hot enchilada sauce, or throwing in some diced jalapeno or chipotle.

1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can diced tomatoes with green chilies
8 ounces enchilada sauce
1 medium onion, chopped
1 garlic clove, minced
4 cups vegetable broth or 4 cups mock chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
10 ounces frozen corn
2 tablespoons cilantro, chopped
5 corn tortillas

Steps:

  • Combine all ingredients except tortillas in crockpot, cook on low 8 hours.
  • Preheat oven to 400°F Lightly spray both sides of tortillas with nonstick cooking spray. Cut into thin strips (about 2.5" x 0.5") and spread onto baking sheet. Bake, turning occasionally until crisp, 5-10 minutes.
  • Sprinkle tortilla strips over hot soup and serve immediately.
