These are the BEST Slow Cooker Black Beans ever! Full of flavor, a total crowd pleaser and naturally vegetarian, gluten free and dairy-free.

1 1/2 cups dried black beans, picked over, rinsed, soaked overnight and rinsed again
1 cup salsa (I used mild since I was serving it to children)
2 bay leaves
1 medium yellow onion, peeled and diced
1 1/2 cups bell pepper, deseeded and diced
1 tbsp ground cumin
1 tbsp dried oregano
1 tbsp garlic powder (or to taste)
4 cups water or broth
1-2 tbsp coconut oil or olive oil ((optional, but it adds a richness to the beans many enjoy))
1/2 tbsp salt** (or to taste)

Steps:

  • Combine ingredients **EXCEPT SALT** in your slow cooker. You will add this after cooking.
  • Cover and cook on high for 3-4 hours (checking after 3 hours to see if the beans are done) or on low for 6-7 hours (checking after 6 hours to see if beans are done).
  • Once the beans are done cooking, remove the bay leaves. THEN, stir in salt.
  • Enjoy warm! Use a slotted spoon to drain off extra liquid and serve beans over rice, quinoa or a salad. Top with avocado, extra salsa or shredded cheese.
  • If storing leftovers, allow beans to cool completely before transferring beans and some of the cooking liquid to an air-tight container. Store beans in fridge for up to 5 days or in freezer for up to a month.

The easiest way to cook black beans is in a slow cooker. It's easy and budget-friendly.

1 lb. black beans, picked over to remove broken or wrinkled beans or small stones
6 cups water
1 onion, halved or diced
2-3 whole garlic cloves
1 bay leaf
1 tablespoon salt (this seems like a lot, but is fine with this much water, you can use less)

Steps:

  • Place the beans in a big bowl, cover with water, agitate the beans a few times to remove any dirt, drain in a colander and rinse again.
  • Place black beans, onion, garlic cloves, and bay leaf in a slow cooker. Add water.
  • Cook on high for about 3-4 hours, testing after 3 hours. To test doneness, spoon out a few beans and blow on them. If the skins peel back, they beans are ready. Taste just to make sure. If all of the water has been absorbed, add more. Beans must stay completely covered to prevent them from burning. If cooking on low for 6-8 hours, test the beans at the 6 hour point.
  • Add the salt and let cook, or sit with heat off for another 20-30 minutes, to absorb the salt. Remove the bay leaf, garlic cloves, and onion before using, if desired.
  • Use immediately, or allow to cool before transferring beans and some of the cooking liquid to a zipper-lock freezer bag or airtight container and refrigerate for up to 1 week, or freeze up to 3 months. If freezing, flatten bag in freezer-it makes for easier defrosting. Defrost in warm water.

Steps:

  • Dice raw bacon into small pieces and cook in a medium skillet over medium-high heat on the stove-top until crispy. Using a slotted spoon remove cooked bacon from pan and allow to drain on a plate lined with paper towels.
  • Drain all but 1 tablespoon of the bacon grease off from the pan and place pan back on stove and add the diced onion and cook until the onion just starts to turn golden in color.
  • Add the canned beans, cooked bacon, onion, brown sugar and BBQ sauce all to a 5 quart or larger slow cooker.
  • Cover and cook on HIGH for 4 hours. Turn slow cooker off and allow the beans to set for at least 1 hour to allow the sauce to thicken.

1 lb dry navy beans (or pinto beans)
6 cups water
2 tablespoons salt
1 tablespoon vegetable oil
1/2 lb uncooked bacon (diced)
2 cloves garlic (minced)
1 medium onion (diced)
1/4 cup tomato paste
1/4 cup dark molasses
1/4 cup coconut sugar (or brown sugar)
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
Salt and pepper to taste

Steps:

  • Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
  • The next day, drain beans reserving 4 cups water. Rinse beans and set aside.
  • Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.
  • Reduce heat to medium and whisk tomato paste, molasses, sugar, vinegar, sauce, and chili powder into mixture. Bring to a simmer, stirring constantly and then stir in rinsed beans and 4 cups reserved water.
  • Cover beans and bring to a low boil over medium-high heat. Remove from heat and transfer to a 4-qt slow-cooker. Cook beans on high 4-5 hours until beans are soft and sauce begins to thicken. Keep beans in slow-cooker on "warm" until ready to serve. (beans will thicken up even more the longer they sit)

6 slices bacon, chopped
3/4 cup dark brown sugar
1/4 cup ketchup

1 large onion, roughly chopped

Steps:

  • Open the cans of pork and beans and drain the excess liquid off the top. Pour the remaining contents into your slow cooker insert.
  • Chop the bacon slices and place them on a microwave safe paper towel-lined plate. Lay another piece of paper towel on top and microwave for one minute to remove the excess bacon grease.
  • Stir the dark brown sugar, ketchup, mustard, chopped onion, and partially cooked bacon into the pork and beans.
  • Slow cooker instructions: Place the lid on the slow cooker, and cook on high for about four hours, stirring occasionally. With about 30 minutes left to cook, set the lid on slightly askew to allow some of the excess liquid to cook off. Remove the lid and allow the baked beans to cool slightly to thicken up before serving.
  • Oven baked instructions: Pour the baked beans mixture into a 2-quart casserole dish. Baked at 375 degrees, uncovered, for one hour. Allow to cool slightly before serving to thicken up.
