SLOW COOKER GAME DAY CHILI

When it comes to tailgating foods, chili is a classic dish that is perfect for football weather. Our recipe for a hearty beef chili can be prepared in a slow cooker, meaning that it's easy to prepare, store and transport. And best of all, with a Reynolds KITCHENS® Slow Cooker Liner, cleaning up at your next tailgate will be easier than ever.

1 Reynolds KITCHENS® Slow Cooker Liner
2 pounds lean ground beef
2 medium green bell peppers, chopped
2 small onions, chopped
2 (15 ounce) cans red kidney beans, undrained
2 (1.25 ounce) packages chili seasoning mix
2 (15 ounce) cans tomato sauce
2 (10 ounce) cans diced tomatoes and green chiles
½ cup Shredded cheese
½ cup Sour cream

Steps:

  • Line a 5 to 6-quart slow cooker with a Reynolds KITCHENS® Slow Cooker Liner. Fit liner snugly against bottom and sides of bowl; pull top of liner over rim. Set aside.
  • Brown ground beef, bell peppers, and onions in a large skillet over medium-high heat, stirring occasionally, until beef is no longer pink. Drain well.
  • Spoon beef mixture into the lined slow cooker. Add beans, seasoning mix, tomato sauce, and diced tomatoes and green chilies to beef mixture; stir gently with wooden or plastic spoon.
  • Cover and cook 6 to 7 hours on Low or 3 to 3 1/2 hours on High, until hot and bubbly throughout.
  • Carefully remove lid to allow steam to escape. Stir gently and serve chili directly from slow cooker liner. Serve directly from lined slow cooker. Top with cheese and sour cream, if desired.
  • Do not lift or transport liner with food inside. Remove all food and cool slow cooker completely before lifting liner from slow cooker.

This is a chili I have been making for years. I have made it with all kinds of ground meats (beef, turkey, deer, elk) but I prefer ground moose. The longer you let it simmer the better as the flavors will blend. Top with shredded cheddar cheese. Serve with fresh baked cornbread and sweet honey butter. Men LOVE this meal!

1 pound ground moose
1 (28 ounce) can diced tomatoes with green chile peppers
2 (15 ounce) cans chili beans, undrained
2 (14 ounce) cans kidney beans, rinsed and drained
2 (14.5 ounce) cans pinto beans, rinsed and drained
2 (2.25 ounce) cans sliced black olives
1 white onion, chopped
1 green bell pepper, chopped
1 (1.25 ounce) package chili seasoning mix

Steps:

  • Brown the ground moose in a large skillet over medium-high heat.
  • Combine the moose, diced tomatoes, chili beans, kidney beans, pinto beans, olives, onion, and bell pepper in a slow cooker; stir in the chili seasoning. Set the slow cooker to Low; cook 8 to 12 hours.

WILD GAME CHILI

1 1/2 tablespoons extra-virgin olive oil, plus more for brushing
2 pounds ground moose or beef
2 cups chopped Vidalia or other sweet onions
6 cloves garlic, minced
2 28-ounce cans fire-roasted peeled whole tomatoes
1 8-ounce can tomato sauce
1 cup diced bell peppers (any color)
2 tablespoons chopped fresh parsley
1 mild green chile pepper (such as Anaheim), seeded and chopped (or a 4-ounce can green chiles, drained)
2 jalapeno peppers, seeded and finely chopped
1/2 red or orange habanero chile pepper, seeded and finely chopped
1 New Mexico chile pepper, seeded and finely chopped
2 1/2 tablespoons chili powder
1 teaspoon ancho chile powder
1/2 teaspoon chipotle chile powder
Kosher salt
1 1/2 tablespoons ground cumin
1 1/2 teaspoons dried oregano
Freshly ground pepper
1/2 cup beer (or use water)
3 tomatoes

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the ground meat and cook, stirring and breaking up the meat, until no longer pink, about 10 minutes. Add half each of the onions and garlic and cook, stirring, 10 more minutes; set aside.
  • Combine the fire-roasted tomatoes and tomato sauce in a large pot over medium heat and crush with a potato masher. Stir in the reserved meat, the remaining onions and garlic, the bell peppers, parsley, green chile, jalapenos, habanero and New Mexico chile. Add the chili powder, ancho chile powder, chipotle chile powder, 2 teaspoons salt, the cumin, oregano, 1/2 teaspoon pepper and the beer. Reduce the heat to medium low and simmer, stirring occasionally, 1 hour.
  • Meanwhile, preheat the oven to 200 degrees F and lightly brush a baking sheet with olive oil. Cut the tomatoes in half and set cut-side down on the prepared baking sheet. Brush the tomatoes with more olive oil and sprinkle with salt; bake until darkened and wrinkled, about 1 hour.
  • Crush the tomatoes with the potato masher and add to the pot; cover and simmer 2 more hours. Season with salt.

Of course you dont have to use moose meat. Any type of ground meat works....of course since my dad has a few freezers full of Moose, Elk, Venison, Sheep, etc...i usually pick a more game-ier ground meat. Also...i do not put measurements for spices because, i just add more as i go!

2 pound(s) ground moose meat
2 - yellow onions
1 can(s) tomato sauce
2 can(s) diced tomatos
2 can(s) dark red kidney beans
1 can(s) black beans
1 can(s) corn (optional)
1 package(s) slow cooker chili seasoning
- salt and pepper
- fresh basil leaves
- fresh oregano
- chili powder
- garlic salt
- cumen

Steps:

  • Brown meat and chopped onions in a skillet. Drain most of the fat off (but save it in a little dish)
  • Put the cooked meat and onions into large crackpot. Add chili seasoning packet to the meat, using the fat kept from the browning process to get the seasoning absorbed into the meat.
  • Dump in tomato sauce and diced tomatoes (drained). Rinse the kidney and black beans to remove all the liquid they are in and then add those as well. (if you are adding corn, do it the same).
  • Add Basil and Oregano, salt and pepper, chili powder, garlic, etc...anything you want to add. I never measure mine out...i would estimate i add 2 tbsp oregano, 1 tbsp salt (coarse kosher), 1/2 tbsp pepper, chili powder, cumin, and garlic, and a handful of fresh basil leaves coarsely chopped. However i continually add more to the taste...experiment!
  • cook on low for 8 hours.
  • serve with sharp cheddar cheese, sour cream, corn bread, and of course, the great Crystal hot sauce.
