SLOW COOKER DIJON CHICKEN



Slow Cooker Dijon Chicken image

Tender bites of bone-in chicken thighs and mushrooms are covered in a dijon, lemon and tarragon sauce.

½ cup chicken broth
2 Tbsp olive oil
¼ cup Dijon mustard
3 Tbsp fresh lemon juice
3 Tbsp fresh lime juice
1 Tbsp minced garlic
1 tsp dried tarragon
½ tsp black pepper
1 tsp kosher salt
8-10 bone-in chicken thighs
8 oz sliced mushrooms (optional)
3 Tbsp cornstarch + 3 Tbsp water (optional)

Steps:

  • In a bowl whisk together the broth, oil, mustard, lemon juice, lime juice, garlic, tarragon, pepper and salt.
  • Place chicken in the slow cooker and dump the lemon juice mixture over the top. Then add in the mushrooms, if using.
  • Cover and cook on low for about 6 hours. (All slow cookers cook differently so yours may be faster or slower). Remove the lid.
  • Use tongs to place chicken, skin side up, on a baking sheet. Broil in the oven for about 5 minutes, or until skin crisps up.
  • In a small bowl mix together the cornstarch and water until smooth. Stir the mixture into the slow cooker. Turn slow cooker to high and let the juices thicken.
  • Serve chicken and sauce. Enjoy!

This Dijon chicken is made in the slow cooker with a great-tasting and creamy sauce made with Dijon mustard. Serve with rice or potatoes for an easy meal.

1 1/2 pounds chicken breasts (boneless)
2 tablespoons Dijon mustard
1 (10 3/4-ounce) can cream of mushroom soup (undiluted, may use low fat)
2 teaspoons cornstarch
Dash black pepper (freshly ground)

Steps:

  • Gather the ingredients.
  • Lightly butter or oil the inside of the slow cooker crockery insert. Alternatively, you may use a slow cooker cooking bag.
  • Arrange the chicken breast halves in the slow cooker .
  • In a bowl, combine the remaining ingredients; stir to blend the sauce ingredients thoroughly.
  • Spoon the sauce over the chicken breasts.
  • Cover and cook on low for 6 to 8 hours, or until the chicken is tender and thoroughly cooked. The chicken is done when it reaches 165 F.
  • Serve the chicken and sauce hot with rice , potatoes or noodles and a green vegetable and/or a side salad.
  • Enjoy!

1 lb chicken breast
1 cup chicken broth
2 sweet potatoes
1 onion
2 tablespoons Dijon mustard
3 tablespoons maple syrup
3 garlic cloves
2 bay leaves
1 teaspoon thyme

Steps:

  • Place chicken into crockpot and toss it with thyme, dijon mustard and maple syrup.
  • Peel and slice sweet potato and onion.
  • Place onion, sweet potato and minced garlic on top of chicken.
  • Add chicken broth and bay leaves.
  • Cook on low for 6-8 hours.
  • This is done when the chicken is cooked through and the vegetables reach desired tenderness.

2¼ lb boneless and skinless, cubed chicken breast
9 oz of your choice, fresh and quartered mushrooms
5½ oz diced yellow onions
2 minced garlic cloves
1¼ cups chicken broth
3 tbsp chicken broth
½ cup heavy cream
3 tbsp cornstarch
2 tsp dijon mustard
1 tsp dried oregano
to season salt and ground black pepper
¼ tsp chopped parsley

Steps:

  • Combine the following in your crockpot and stir until evenly incorporated: mushrooms, onions, garlic, 1¼ cups of chicken broth, mustard, and oregano.
  • Place the chicken on top, then cover. Cook on Low for 6 hours or until chicken is fully cooked through.
  • Dissolve the cornstarch in 3 tablespoons of chicken broth.
  • Add your heavy cream and cornstarch slurry. Stir until evenly incorporated. Cook on High for 30 minutes.
  • Adjust the seasoning of the sauce to taste with salt and pepper.
  • Serve the chicken and sauce. Garnish with parsley.
