Here's an easy dip recipe I got from a co-worker - it's a nice change from the usual cheese-based Rotel dip, and always a hit at parties! You can use mild or hot sausage, whatever you prefer.

1 lb bulk sausage
2 (8 ounce) packages cream cheese
1 (10 ounce) can rotel, with liquid drained out

Steps:

  • Brown sausage in skillet; drain excess grease.
  • Add cream cheese and cook over medium heat until melted.
  • Add Rotel and mix well.
  • Serve warm with chips.

This dip is an absolute hit everytime I make it! My husband and all of our friends devour it and it's always the first to go! It has a nickname of "white trash dip". I make it in a round 4 quart crock pot, but the recipe can be halved or doubled for smaller or larger crock pots.

4 (8 ounce) packages Philadelphia Cream Cheese
2 (16 ounce) packages jimmy dean original breakfast sausage
1 (10 ounce) can original Rotel tomatoes & chilies
1 (10 ounce) can hot Rotel tomatoes & chilies
tortilla chips

Steps:

  • Brown both packages of sausage in a skillet over medium heat.
  • Drain the sausage in a colander.
  • Cube the cream cheese into a crock pot.
  • Add the sausage to the cream cheese in the crock pot.
  • Add both cans of rotel (with the juice) to the crock pot.
  • Heat the mixture in the crock pot on high heat for approximately 1 hour, stirring occasionally until the dip is well mixed.
  • Reduce heat to warm/low and serve with tortilla chips.

1 can tomatoes and green chiles (aka Rotel), drained
1 pound breakfast sausage, browned and drained

Steps:

  • Brown the sausage on the stove, and drain on paper towels. Unwrap the cream cheese, and put it into your crockpot. Chop up the sausage and add on top. Drain the Rotel, and add it. Cover and cook on low for about 90 minutes, or on high for 45. Stir well and eat with tortilla chips.

1 pound bulk ground sausage (turkey, chicken or pork )
1 (10 ounce can) diced tomatoes with green chiles (name brand Rotel)
8 ounces cream cheese (softened)

Steps:

  • Brown the sausage on the stove over medium-high heat, breaking up into small pieces as it browns. Once the sausage is browned, drain off any excess grease and return to skillet.
  • Add in cream cheese and rotel tomatoes and cook over medium heat until the cream cheese is melted and creamy.
  • Transfer the dip to a serving dish and serve warm.
  • Brown the sausage on the stove over medium-high heat. Once browned, turn off heat and drain any excess grease and then add sausage to a slow cooker.
  • Add the cubed cream cheese and rotel tomatoes and place the lid on the slow cooker. Turn to low and let heat through, stirring every 15 minutes. It should only take 30-45 minutes for the cream cheese to melt into the dip.
  • Once melted, turn the slow cooker to keep warm and serve. The dip will keep on warm for up to 3-4 hours.
