A great change from regular Mexican style tacos. A cool summer dinner, made quick with leftover rotisserie chicken. Naturally you can use any type of chicken cooked the way you like; just be sure to shred it for real tacos.

½ cup ranch dressing
¼ cup reduced-fat sour cream
1 (1 ounce) packet taco seasoning mix, divided
1 tablespoon mild chunky salsa
2 cups shredded rotisserie chicken
8 (6 inch) corn tortillas
shredded lettuce
1 tomato, chopped
4 green onions, sliced
1 (4 ounce) can sliced black olives
1 avocado - peeled, pitted and diced
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Combine ranch dressing, sour cream, 1 teaspoon taco seasoning, and salsa in a small bowl. Cover and refrigerate until serving.
  • Toss chicken with remaining taco seasoning. Cover bowl loosely with wax paper or plastic wrap. Microwave chicken until chicken is heated through, about 2 to 3 minutes.
  • Warm the tortillas in a skillet for about a minute on each side to make them pliable. Place a scoop of chicken on the tortilla and top with lettuce, tomato, green onion, olives, avocado, cheese, and a spoonful of the ranch dressing mixture.

2 pounds boneless skinless chicken breasts
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 taco seasoning packet (or this homemade version: 1T chili powder, 1tsp pepper, and 1/2tsp of each of the following - salt, ground cumin, red pepper flakes, paprika, oregano, garlic powder, onion powder)
1 dry ranch seasoning packet (or this homemade version: 1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt. Traditional ranch seasoning packets also include 1T dried buttermilk but I omitted it because I don't keep it on-hand.)

Steps:

  • Combine all ingredient in crockpot and cook on "low" setting for 6-8 hours.
  • Shred chicken and mix with sauces and spices left in crockpot.

2 Pounds Boneless Skinless Chicken Breasts or Thighs Cut In
1 Packet Ranch Dressing Mix Or Homemade
1 Packet Taco Seasoning Mix Or Homemade
14 Ounces Low Sodium Chicken Stock

Steps:

  • Add all ingredients to a 4 quart or larger slow cooker, stirring to combine. Cover and cook on HIGH for 3 hours or on LOW for 6 hours. If your chicken is frozen add an additional 60 minutes to the cooking time. Once chicken is fully cooked, carefully drain off any extra cooking liquid into a bowl and set aside. Shred chicken meat with two forks and stir in a little bit of the reserved cooking liquid to help keep the meat moist. Serve shredded chicken in taco shells or tortillas with your favorite taco toppings. Recipe Notes This recipe is gluten-free when using both of our homemade taco seasoning mix and ranch dressing mix or a gluten free store bought brand.
