SLOW COOKER CHICKEN AND BISCUITS RECIPE

A one-pot meal that the entire family will enjoy. It combines meat, vegetables, and biscuits for a flavorful complete meal.

Number Of Ingredients 8

2 1/2 pounds boneless, skinless chicken breast
2 cans (10.75 oz. each) cream of chicken soup
2 tablespoons butter or margarine
1 cup diced carrots
1 cup frozen peas
1 small onion, minced or 2 tsp. onion powder
3/4 cup chicken broth or water
2 packages (10 oz. each) refrigerated biscuit dough

Steps:

  • Place the chicken breast on the bottom of a 5 or 6-quart slow cooker. Top with soup, butter, vegetables, and onion. Pour the chicken broth over the soup mixture. The chicken should be covered; if not, add more broth. Place the cover on the slow cooker and turn on high. Cook on high for 5 to 6 hours. Approximately 1 hour before serving, remove the cover and pull the chicken apart in small pieces or shred. Tear the refrigerator biscuit dough into pieces and place it on top of the chicken mixture in the slow cooker. Replace the cover and cook another hour or until the biscuits are done all the way through. To serve, spoon the chicken and biscuits onto plates directly from the slow cooker.

1 - 2 pkg (10 oz. each) refrigerated biscuit dough

Steps:

  • 1. Place the chicken breast on the bottom of a 5 or 6-quart slow cooker. Top with soup, butter, vegetables, onion powder, salt, pepper and onion. ( I sometimes just use 2 cups of mixed frozen vegetables in place of the peas and carrots.) Pour the chicken broth over the soup mixture. The chicken should be covered; if not, add more broth. Place the cover on the slow cooker and turn on high. Cook on high for 5 to 6 hours. Approximately 1 hour before serving, remove the cover and pull the chicken apart in small pieces or shred. Tear the refrigerator biscuit dough into pieces and place it on top of the chicken mixture in the slow cooker. Replace the cover and cook another hour or until the biscuits are done all the way through. ( you can also take the liner out of the cooker and bake at 400 degrees, until biscuits are cooked. I sometimes do this if in a hurry.)

  • Add the veggies and condensed soup, and mix thoroughly.
  • Cook on high for 3 hours.
  • Rip biscuit dough into small pieces, and drop evenly over chicken. Cook an additional hour.

9 oz of your choice, fresh and quartered mushrooms
5½ oz diced yellow onions
2 minced garlic cloves
1¼ cups chicken broth
3 tbsp chicken broth
½ cup heavy cream
3 tbsp cornstarch
2 tsp dijon mustard
1 tsp dried oregano
to season salt and ground black pepper
¼ tsp chopped parsley

Steps:

  • Combine the following in your crockpot and stir until evenly incorporated: mushrooms, onions, garlic, 1¼ cups of chicken broth, mustard, and oregano.
  • Place the chicken on top, then cover. Cook on Low for 6 hours or until chicken is fully cooked through.
  • Dissolve the cornstarch in 3 tablespoons of chicken broth.
  • Add your heavy cream and cornstarch slurry. Stir until evenly incorporated. Cook on High for 30 minutes.
  • Adjust the seasoning of the sauce to taste with salt and pepper.
  • Serve the chicken and sauce. Garnish with parsley.

3 slices bacon
6 boneless skinless chicken breast halves
10 ounces condensed cream of chicken soup
4 ounces sliced mushrooms, drained
1/2 cup shredded swiss cheese

Steps:

  • In large skillet, cook bacon until crisp.
  • Remove bacon from skillet and drain on paper towels.
  • Crumble bacon and set aside in refrigerator.
  • In bacon drippings in skillet, cook chicken over medium heat 3-5 minutes or until light brown, turning once.
  • Place in 4-6 quart slow cooker.
  • Top with mushrooms.
  • In skillet, heat soup and pour over mushrooms and chicken.
  • Cover and cook on low setting for 4 hours.
  • Top chicken with cheese slices and sprinkle with bacon.
  • Cover and cook on high for 10-15 minutes or until cheese is melted.
  • NOTE: This dish can be made using frozen chicken breasts. Brown them, as directed, in the bacon drippings, then cook on low for 6-8 hours, until no longer pink in the center.
