Crock Pot Cajun Chicken: Easy family dinner idea! Great twist on your traditional whole chicken recipe. Original recipe from Deep South Dish

Ingredients

2 Tablespoon Light Brown Sugar
2 teaspoon Kosher Salt
1 teaspoon Cajun Seasonings
2 teaspoon Paprika
1/2 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Herbes de Provence (or Poultry Seasoning)
4 lb Whole Chicken
12 Small Red Potatoes
1/2 Cup Water

Steps:

Combine all of the herbs and seasonings to form a rub.
Remove neck and giblets from chicken if necessary and save for another use.
Rub chicken on all sides with seasonings and set aside.
Rinse and scrub potatoes. Place in the bottom of slow cooker and add the water.
Place chicken on top and cook on low for 6-7 hours.

2 lbs skinless chicken thighs
1 red bell pepper, chopped
1 large onion, chopped
2 stalks celery, diced
1 (15 ounce) can stewed tomatoes, chopped and undrained
3 garlic cloves, minced
1 1/2 tablespoons granulated sugar
1 teaspoon paprika
1 teaspoon cajun seasoning
1 teaspoon salt
1 teaspoon fresh ground pepper
1 lb shelled shrimp, deveined and cleaned
1 tablespoon fresh lemon juice
hot sauce, to taste
2 cups cooked rice

Steps:

Put all into crock pot except for last 4 ingredients with thighs at bottom.
Cook on low 8-10 hours or high 4-5 hours.
In last hour of cooking add shrimp, hot sauce, and lemon juice.
Serve over rice.
