- Grease crockpot with coconut oil, bacon fat, etc. to make sure none of the egg sticks.
- Shred/grate the sweet potato.
- Add all ingredients to the crockpot and mix well.
- Cook on low for 6-8 hours.
- Spoon or slice out onto plates or into bowls.

- In a greased 5- or 6-qt. slow cooker, layer half of the potatoes, sausage, onion, chiles and cheese. Repeat layers. In a large bowl, whisk the eggs, milk, salt and pepper; pour over top. Cover and cook on low for 7-9 hours or until eggs are set.

- Heat a skillet to medium high heat. Add the sausage and cook, breaking apart with a spatula. Cook for 10 minutes, or until there is no pink left. Remove from pan and drain on paper towels.Add the bacon to the pan and cook.
