1 each medium green, sweet red and yellow peppers, cut into 1/2-inch strips
1 sweet onion, cut into 1/2-inch strips
2 pounds beef top sirloin steaks, cut into thin strips
3/4 cup water
2 tablespoons red wine vinegar
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
8 flour tortillas (8 inches), warmed
1/2 cup salsa
1/2 cup shredded reduced-fat cheddar cheese
8 teaspoons minced fresh cilantro

Steps:

  • Place peppers and onion in a 5-qt. slow cooker. Top with beef. Combine water, vinegar, lime juice and seasonings; pour over meat. Cover and cook on low until meat is tender, 8-10 hours., Using a slotted spoon, place about 3/4 cup meat mixture down the center of each tortilla. Top with salsa, cheese and cilantro; roll up.

1/2 tsp. onion powder
1 tsp. cumin
1 tsp. smoked paprika
1 tsp. oregano
1 tsp. fresh garlic, minced
1 onion, sliced into long strips
1 sweet peppers, sliced into long strips
1/2 head lettuce, sliced into long fine strips
12 flour tortillas
1 Cup Mexican blend cheese
Sour cream to taste
Salsa to taste

Steps:

  • Brown the sliced beef strips in a large frying pan with the seasonings
  • Place the seasoned, cooked beef into a crock pot with the drippings and set on high for 2 hours.
  • Add the onions and peppers to the beef and cook another hour or until done.
  • Assemble the fajitas by placing the tortilla on a single serving plate
  • Serve with sour cream, lettuce, tomatoes, avocado and salsa

2 to 3 pound flank steak or boneless chuck roast (trimmed of fat)
1 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon salt
½ teaspoon ground black pepper
¼ cup soy sauce
2 large yellow onions (peeled, halved and sliced)
2 green bell peppers (seeded and sliced)
2 red bell peppers (seeded and sliced)

Steps:

  • In a small bowl, combine the chili powder, cumin, coriander, salt and pepper. Rub evenly on all sides of the beef and place the beef in the bottom of a 6-quart slow cooker.
  • Pour the soy sauce around the beef and placed the sliced onions and peppers on top. Cover with a lid and cook on low for 9 hours or on high for 5 to 6 hours.
  • Drain the beef and vegetable mixture, then shred the beef and serve on flour tortillas with the toppings of your choice. Leftovers should be stored in an airtight container in the refrigerator for up to 4 days.

Steps:

  • Brown the steak in oil.

1 lb beef skirt steak, cut across the grain into 4" strips
2 bell peppers (any color), sliced lengthwise 1/2" thick
1 large onion, sliced lengthwise
1 Tbsp lime juice
2 tsp chili powder
1 tsp ground cumin
1/2 tsp beef bouillon granules (or 1/2 of a bouillon cube)
1/2 c hot water

Steps:

  • 1. Place beef in crockpot; top with bell peppers and onions. Sprinkle with lime juice.

1 cup diced tomatoes
12 flour tortillas
sour cream

Steps:

  • Cut the flank steak into large chunks (they don't need to be too small as you'll be shredding them later). Combine the beef, onion, green pepper, red pepper, jalapeno, cilantro, garlic, chili powder, cumin, coriander, and salt in the crock pot. Top with the chopped tomatoes. Cover the crock pot and cook on low heat for 4-6 hours or until the beef is very tender. Remove the beef from the crock pot and place on a platter or cutting board. Shred the meat using two forks. Return the meat to the crock pot and stir into the mixture. To serve, top flour tortillas with some of the meat and vegetable mixture (use a slotted spoon or tongs so the fajitas don't get soggy). Top with desired toppings such as sour cream, guacamole, cheese, or salsa. Fold the tortillas and eat!
