Delight family members by serving them a stew packed with vegetables and whole chicken thighs.

3 medium potatoes (about 1 lb), cut into 1 1/2-inch cubes
2 cups baby-cut carrots
1 package (8 oz) fresh whole mushrooms, each cut in half
2 packages (20 oz each) boneless skinless chicken thighs
1/2 teaspoon salt
1 teaspoon instant chopped onion
1/4 teaspoon garlic powder
1 tablespoon tomato paste
1 jar (18 oz) roasted chicken gravy
1/2 cup dry white wine or water

Steps:

  • In 4- to 5-quart slow cooker, toss potatoes, carrots and mushrooms. Arrange chicken on vegetable mixture. Sprinkle salt, onion and garlic powder over chicken. Stir tomato paste into jar of gravy. Pour gravy mixture and wine over all.
  • Cover; cook on Low heat setting 8 to 10 hours.

1 1/2 cups carrots, peeled, cut into bite-size pieces, and washed
1/2 cup finely chopped onion
1/4 teaspoon garlic powder (to taste)
1/2 teaspoon salt (to taste)
3/4 teaspoon ground black pepper (to taste)
1/2 teaspoon sage (to taste)
1/4 teaspoon thyme (to taste)
2 boneless skinless chicken breast halves
1 (10 3/4 ounce) can cream of chicken soup

Steps:

  • Place veggies in the bottom of a 2 1/2 quart crockpot ( you know, the small one ).
  • Sprinkle seasonings evenly over the veggies.
  • Top with chicken, then cover with soup.
  • Cook on low for 6 hours.

You can literally throw everything in it and leave it all day so you have a lovely wholesome meal waiting for you at dinner time. We left this stew in the slow cooker for 8 hours on a low heat but if you want it ready bit sooner than that, you can turn the heat up to medium and it should be ready in about 4 hours.

1 teaspoon olive oil
1 onion, chopped
3 cloves garlic, minced
4 skinless, boneless chicken breasts
1 (32 fluid ounce) container vegetable broth
1 (14.5 ounce) can diced tomatoes
2 sweet potatoes, diced
1 cup uncooked quinoa
1 teaspoon ground black pepper
5 mushrooms, chopped
2 teaspoons dried oregano
2 teaspoons curry powder
5 green onions, chopped
1 bay leaf

Steps:

  • Heat oil in a skillet over medium heat; stir in onion and garlic. Cook and stir until onion and garlic have softened and turned translucent, about 5 minutes.
  • Place chicken breasts in the bottom of a slow cooker; add onion, garlic, vegetable broth, diced tomatoes, sweet potatoes, quinoa, green onions, mushrooms, curry powder, oregano, pepper, and bay leaf and mix well. Cook on Low until chicken is tender, 7 to 8 hours.
  • Discard bay leaf. Remove chicken; shred using 2 forks and place back into the stew, mixing well before serving.

1 onion (diced)
2 stalks celery (diced)
4 carrots (peeled and sliced into rounds)
2 medium russet potatoes (peeled and diced into small bite-sized pieces)
1 bay leaf
2 teaspoons salt
1 teaspoon minced garlic
½ teaspoon dried thyme
½ teaspoon poultry seasoning
2 chicken breasts
4 cups low-sodium chicken broth or chicken stock
1 tablespoon corn starch + 1 tablespoon cold water
For garnish: chopped fresh parsley

Steps:

  • Throw everything in the crock pot except the corn starch and parsley.
  • Cook on low for 6-8 hours until chicken is falling apart.
  • Shred the chicken. Meanwhile, stir together the corn starch and water in a cup. Stir into the crock pot. And stir in the chicken.
  • Cook for another 30 minutes and serve with fresh parsley on top.

It's a crock pot version of my favorite recipe for poor man's stew. Through my early 20's I waited tables down south and I was very poor. I also drank a lot of cheap red wine..so this recipe was born.

1 roasting chicken, cut up
2 large carrots
1 large onion
2 large potatoes
1 tablespoon fresh thyme
1 bay leaf
2 teaspoons kosher salt
1/2 teaspoon fresh ground pepper
1 1/2 cups red wine
1 cup chicken stock
1 tablespoon flour (I like to brown the flour first in the oven to give it that roux-like flavor)

Steps:

  • Season your chicken with the salt and pepper and put into crock pot.
  • Chop all of your veggies into medium size pieces and add to crock pot.
  • Add your fresh thyme, bay leaf, and red wine.
  • In a separate small mixing bowl whisk your flour in with your chicken broth. Add mixture to your crock pot, and lightly mix everything together.
  • Let cook for 6-8 hours on low.
  • It's really good served with fresh french bread and butter.
