SLOW COOKER BABY BACK RIBS
These are the best I've had, short of the actual grilling method of course! This is a very simple recipe that I came up with a few years ago. It's not rocket science, just ribs cooked in the slow cooker and finished in the oven. This is what I do when I want ribs during the week and have to work all day. I'm eating them within a half-hour of getting home, and they turn out perfect every time!

Steps:
- Set the slow cooker to LOW and spray with nonstick cooking spray. (I always spray the underside of the lid to help with cleanup.)
- Remove the silver membrane from the back of the ribs. Here's a video with instructions. (You might have bought ribs with the membrane removed, and if so, skip this step.)
- In a small bowl, whisk together the paprika, brown sugar, salt, black pepper and red pepper flakes. Rub the dry-rub mix evenly over the ribs.
- Brush both sides of the rib with barbecue sauce and set the ribs in the slow cooker standing upright with the meaty side against the inside wall, of the slow cooker.
- Pour the remaining barbecue sauce over the ribs. If using a sweet sauce, pour the cider vinegar over the ribs.
- Cover and cook on LOW 5-6 hours or until the meat is fork-tender.
- Serve with additional store-bought barbecue sauce or strain the juices, from the pan, through a fine-mesh strainer into a medium saucepan.
- Bring the sauce to a boil, reduce the heat to low and simmer 15-20 minutes or until the mixture has reduced to 2 cups.
- To serve, slice the meat between the bones and serve with barbecue sauce.
- Enjoy!

Steps:
- Remove the membrane from the back of the ribs. Just slide your fingers around the side to loosen it up and rip it right off.
- In a small bowl, stir together the ingredients for the dry rub. Rub this mixture generously over the outside of the ribs to coat.
- Put your ribs in the crockpot. Drizzle on 1 1/2 cups of barbecue sauce, reserving 1/2 cup for later.
- Cook on low for 8 to 10 hours. The more racks in the pot, the longer you'll need to cook.
- Gently remove the racks and lay them out on a foil lined baking sheet. Add the reserved barbecue sauce on top.
- Broil under a broiler for 3-5 minutes until the barbecue sauce starts to bubble and caramelize. Alternately you could wrap them in foil and throw them on a heated grill for the same effect.

Steps:
- Combine rub ingredients, mixing thoroughly.
- Rub on all sides of ribs.
- Wrap ribs in plastic wrap several times and place in refrigerator overnight.
- Cut ribs into sections of 2-3 ribs.
- Brush the meaty side of each rib section with barbecue sauce.
- Arrange ribs on their sides in crock-pot. Place a layer of 4 bacon strips between the bottom layer of ribs and the top layer. Place the remaining bacon strips over the top. The goal is to not cover the meaty part of the ribs with the bacon, but instead to impart the bacon flavor into the ribs.
- Cover; cook on low for 9 hours.
- Remove ribs from crockpot and drain the juices.
- Preheat oven to 450 degrees.
- Place the ribs on cooking sheets and reapply a layer of barbecue sauce to the ribs.
- Cook ribs in oven for 3-5 minutes to get a glaze on the surface.
- Remove ribs from oven and serve, or place back in crockpot to keep warm.

Steps:
- Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
- Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Remove to a platter and serve immediately with the extra barbecue sauce on the side.

- Prepare the ribs by removing the shiny, thin membrane that covers most of the backside of the ribs. To do so, use a knife or fingernail to pry up a corner of the thin membrane from one edge of the ribs. Grab that with a paper towel (for grip) and slowly pull it up. Once a good portion of the membrane is free, you should be able to pull the rest off in one quick motion.
- Pat the ribs dry and rub the seasoning mixture onto both sides of the ribs. Place ribs in slow cooker.
