HOMEMADE PUMPERNICKEL BREAD

- In a small bowl, dissolve yeast in warm water. Add the molasses, butter, chocolate, vinegar, salt, rye flour and 3 tablespoons whole wheat flour. Beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Shape into a round loaf. Place on a baking sheet coated with cooking spray. With a sharp knife, make three shallow slashes across the top of loaf. Cover and let rise until doubled, about 30 minutes., Bake at 375° for 15-20 minutes or until bread sounds hollow when tapped. Remove to a wire rack to cool.

SLOW COOKER BREAD
Bread made in the slow cooker actually turns out a decent loaf, and it's very easy because this is a no-knead recipe. It is also quick because it requires only one rise; the second rise happens in the slow cooker. Adding seeds or rolled oats not only adds flavor, it also makes it easier to release the bread from the slow cooker.

- Stir 1 cup water and yeast together in a small bowl until yeast is dissolved. Let sit until frothy or foamy, about 10 minutes.
- Mix flour and salt together in a plastic container with a tight-fitting lid. Add yeast mixture and stir with a wooden spoon until evenly combined and no traces of flour remain. Add 1 to 2 tablespoons water and stir again; dough should be tacky but not wet.
- Cover container with the lid. Let dough rise at room temperature for 1 hour.
- Set slow cooker to High. Cut a piece of parchment paper to line the bottom of your slow cooker.
- Dust a clean work surface with flour. Knead dough briefly with floured hands to get rid of any air pockets. Shape into a round or oval loaf depending on the shape of your slow cooker.
- Sprinkle some of the sesame seeds on the bottom of the slow cooker. Sprinkle remaining seeds generously all around the loaf. Place dough in the slow cooker and cover with the lid.
- Cook on High for 2 hours. Lift the lid a couple of times during cooking to release the steam. An instant-read thermometer inserted deep into the loaf should read between 200 and 210 degrees F (93 to 99 degrees C). The surface of the bread should be dry and no longer spongy. Remove the loaf and tap the bottom; it should sound hollow.
- Remove loaf from the slow cooker. Transfer to a wire rack and let cool completely before cutting, at least 1 hour.

- Brush a large bowl with butter; set aside. Combine 1/4 cup warm water with sugar; sprinkle yeast over top. Set aside. In a small saucepan, heat espresso, chocolate, molasses, and 1 1/2 cups water over medium. Cook, stirring often, just until chocolate is melted, about 5 minutes. Remove from heat and let cool until warm but not hot (below 110 degrees).
- In the bowl of a stand mixer fitted with a dough hook attachment, combine both flours, caraway, and salt. Add the chocolate mixture then yeast mixture. Mix by hand, using the hook, to combine. Turn mixer on medium and mix until dough comes together in a smooth, springy ball around the hook, 12 to 15 minutes. Remove a small piece of dough and stretch it. If the dough holds together in a thin "windowpane" without breaking, the gluten is sufficiently developed. Add butter, 1 tablespoon at a time, until incorporated, about 4 minutes. Turn out onto a well-floured surface and knead a few times to form into a ball. The dough will be slightly sticky; don't be tempted to add more flour. Transfer to buttered bowl, turning once to coat, and cover loosely with buttered plastic. Let sit at warm room temperature until doubled in size, about 1 1/2 hours.
- When dough has doubled, turn out onto a work surface. Pat dough out into a rectangle, roughly 10 by 12 inches with short side facing you. Fold bottom edge two-thirds of the way up the rectangle, and top edge down to cover. Rotate dough 90 degrees and repeat the fold. (This is called a business-letter turn.) Return to buttered bowl and top with buttered plastic. Let sit at warm room temperature until doubled in size again, about 1 hour. Remove from bowl, gently deflate, and work into a round boule about 6 inches in diameter. Place a clean dish towel in a medium bowl and generously dust with flour. Place boule, seam-side up, in bowl. Loosely fold floured towel ends over dough to cover. Let sit at warm room temperature until doubled, 30 to 45 minutes.
- Meanwhile, preheat oven to 450 degrees and place a 9- or 9 1/2-inch enameled cast-iron pot in oven with the lid to preheat. When dough is ready, carefully remove the lid, pull back corners of towel, and flip bowl upside down to transfer bread to the heated pot, seam-side down. Quickly slash an "X" in the top of the bread with a serrated knife and using an oven mitt, cover with lid. Return pot to oven and bake 20 minutes. Remove lid and continue to bake until bread feels hollow when tapped and internal temperature registers 205 degrees, 20 to 30 minutes more. Immediately turn bread out of pot onto a cooling rack. Let cool at least 2 hours before slicing.

- In a large bowl, combine the flour, yeast, garlic salt, and Parmesan cheese.
- Measure the water, then add the minced garlic into the water.
- Add the water into the flour mixture and combine until all the flour has been incorporated. (Note: the dough will be very sticky)
- Cover the bowl with plastic wrap, and allow to sit for 1 and 1/2 hours.
- On a large piece of parchment paper, sprinkle the cornmeal (or flour), the dump the dough onto the paper. Form the dough into a round , sprinkle with some additional cornmeal, then cover with plastic wrap. Allow to sit for 1/2 hour.
- Preheat the slow cooker for about 5 minutes on high, then remove the plastic wrap, pick up the parchment paper with the dough on it, and place it in the slow cooker. Tuck or trim the edges of the parchment paper if necessary to fit under the lid.
- Place a layer of paper towels over the slow cooker, then place the lid on top of the towels.
- Cook on high for 2 hours, then remove from the slow cooker.
- If more of a brown crust is desired, bake at 400 degrees in the oven for 15-20 minutes (optional).
- Cool on a rack before serving.

- In the bowl of a stand mixer, measure out 2 1/2 cups all purpose flour and salt. Stir to combine. Pour yeast mixture into blended flour slowly with the mixer on low. Drizzle in olive oil. Knead 5 minutes. A slightly tacky dough should come together. Add more flour or water as necessary to get it to the right consistency. If you touch the dough and it feels tacky but nothing sticks to your fingers, then it's done. Rest dough 10 minutes.
- Spray 9x13 crockpot {or at least a 6 qt. oval crockpot} with nonstick cooking spray. Spread dough evenly across bottom of crockpot. Cover and cook on high for 1 1/2 hours or until edges are golden and top of dough is not shiny anymore. When you press the top gently, you'll feel that it's cooked thoroughly.
- Remove loaf of bread from crockpot and place onto baking sheet. Turn broiler on. Sprinkle top of bread with cheeses and garlic salt. Drizzle with butter. Broil until cheese has melted completely. Cool 5 minutes before cutting and serving.

- To begin, combine the rye flour, oil, molasses, salt, yeast, caraway seeds, water and 2 cups of the bread flour in the bowl of your stand mixer. Turn on your mixer (fitted with the dough hook) and while it mixes, gradually add in the remaining 2 cups of bread flour. Let the mixer run for 6 minutes. Take the dough out, form it into a ball, and then place it in a lightly oiled bowl. Turn the dough to coat the top with oil.
- Cover the bowl with a tea towel and place it in a warm location to rise for an hour. Not sure where to let the dough rise? Turn the light on inside your oven, and set the bowl inside. The bulb puts off enough heat to create a very happy place for the dough to rise in a draft-free location.
- An hour later, the dough should have doubled in size. On a lightly floured surface, turn the dough out and cut it in half. Pat the dough out into a rectangle that is about 7×14 inches. Starting on a long side, roll the dough tightly into a log. Place the loaves on a baking stone or sheet, tucking the ends underneath. I am using a well-seasoned stone. If using a cookie sheet or unseasoned stone, line it with parchment paper, or lightly grease it first. Cover with the tea towel again, and place it back in its warm location to rise again.
- After about 30 minutes, if you touch the dough, a light indentation should remain. Set your sheet out on the counter and begin heating your oven to 400 degrees. With a sharp knife, slash the tops of the loaves 3 or 4 times at an angle.
