CHICKEN LIVERS STROGANOFF



Chicken Livers Stroganoff image

A different and delicious way to enjoy chicken livers. To make this dish healthier, I like to use yolkless noodles. I have made this for many of my friends over the past 20 years, and have always received rave reviews, even from some who thought that they would not like chicken livers.

3 tablespoons olive oil
1 pound chicken livers, rinsed and trimmed
2 cups chopped onion
4 ounces sliced fresh mushrooms
1 tablespoon paprika
⅓ cup dry sherry
1 ½ cups sour cream
salt and pepper to taste
1 (12 ounce) package medium egg noodles

Steps:

  • Bring a large pot of lightly salted water to a boil. Add noodles, and cook until tender, about 8 minutes. Drain, and set aside.
  • While the noodles are getting started, heat olive oil in a large heavy skillet. Add onions, and cook, stirring until tender, about 5 minutes. Add mushrooms, and continue cooking for a few minutes, until starting to brown. Add the chicken livers, and season with paprika, salt and pepper. Cook for 8 to 10 minutes, until livers are nicely browned on the outside, but still slightly pink in the center. Do not over cook - the livers will become tough and leathery.
  • Remove the skillet from the heat, and gradually whisk in the sherry, then the sour cream until well blended. Serve over hot egg noodles.

This Crock Pot Bacon Mushroom Swiss Chicken is a wonderfully flavorful combination!

3 slices of bacon (crisply cooked, crumbled and drippings reserved)
6 boneless skinless chicken breasts
4 oz can sliced mushrooms (drained)
10.75 oz can cream of chicken soup
6 slices of swiss cheese

Steps:

  • Pour your reserved bacon grease in a skillet and heat up over medium heat
  • Place your chicken breasts in the warmed grease and cook for 3-5 minutes until slightly golden (turning once)
  • Spray your crock pot with cooking spray
  • Put your chicken in your crock pot
  • Cover with your mushrooms
  • Pour your soup in your skillet, warm through, then pour over your chicken
  • Cover and cook on low for 4-5 hours, check with a meat thermometer to know when the chicken is done
  • Place a slice of Swiss on top of each chicken breast, sprinkle with bacon, turn heat up to high and cover and cook for 10-15 minutes more until the cheese is melted

1 lb chicken liver
1/2 cup flour
1 teaspoon salt
1/4 teaspoon pepper
3 slices bacon, diced
3 green onions with tops, chopped
1 cup chicken stock
1 (10 ounce) can condensed golden mushroom soup
1 (4 ounce) can sliced mushrooms
1/4 cup dry white wine

Steps:

  • Cut chicken livers into bite-size pieces, toss with flour, salt and pepper.
  • Fry bacon pieces in large skillet, remove when brown.
  • Add flour-coated chicken livers and green onion to bacon grease in skillet, saute until lightly browned.
  • Pour chicken stock into skillet and stir into drippings; then pour all into crock pot.
  • Add browned bacon bits and all remaining ingredients.
  • Cover and cook on Low for 4-6 hours.
  • Serve over rice, toast or buttered noodles.
  • Recipe may be doubled easily if your crock pot is big enough.

GREAT recipe for chicken livers. I got this one from my ex-wife's recipe box. It's a hit with almost all that try it! It should be cooked in a slow-cooker, but you might try a Dutch oven.

½ cup all-purpose flour for coating
1 teaspoon salt
¼ teaspoon pepper
1 pound chicken livers, trimmed and cut into bite sized pieces
3 slices bacon
3 green onions, chopped
1 cup chicken stock
1 (10.75 ounce) can condensed golden mushroom soup
1 (4.5 ounce) can sliced mushrooms, drained
¼ cup dry white wine

Steps:

  • In a medium bowl, mix together the flour, salt and pepper. Place chicken livers into the seasoned flour, and toss to coat.
  • Place bacon in a large skillet over medium-high heat. Fry until browned and crisp. Remove to paper towels to drain. Shake off excess flour from the livers, and fry in the bacon grease along with the green onions until lightly browned on the outside. Pour the chicken stock into the skillet, and stir to scrape up any bits of goodness from the bottom.
  • Transfer the mixture to a slow cooker, and crumble in the bacon. Stir in the golden mushroom soup, mushrooms and white wine. Cover, and cook on Low for 4 to 6 hours. Thicken the gravy with flour if desired before serving.
