I love sauerkraut but the rest of my family aren't fans, but even my family enjoyed sauerkraut cooked this way served with rye bread. Adapted from Slow Cooker Cooking.

Steps:
- Place the drained sauerkraut in the slow cooker.
- Add onion, carrot, garlic, caraway seeds, thyme, bay leaves, juniper berries or gin (if using) and pepper.
- Stir to combine.
- Place kielbasa on top of all.
- Pour in the wine (or grape juice) and broth on top.
- Cover and cook on low for 8-10 hours.
- Discard bay leaves and serve.

- In a medium bowl, combine the sauerkraut and brown sugar. then place in slow cooker. Arrange the sausage and onion over the sauerkraut.
- Cook on high for two hours, check for dryness, adding some water if necessary, then reduce to low setting, and cook on low for two more hours.

I'm a sucker for pierogies. I think it started when I was young, growing up in Alberta where I had a friend of Ukranian heritage. We used to go visit her grandmother in Red Water and she would make homemade pierogies, which we would eat with reckless abandon.

- Pre-heat the oven to 350°F.
- Drain the sauerkraut, reserving the liquid.
- Pre-heat a large 12-inch oven-proof skillet over medium-high heat. Add the oil and brown the Kielbasa sausage slices on both sides. Remove the browned sausage from the pan and set aside.
- Add the onion to the skillet and season with salt and freshly ground black pepper. Sauté until they start to brown - about 5 minutes. Add the drained sauerkraut and caraway seeds and continue to sauté for a few more minutes. Add the stock or beer, reserved sauerkraut liquid and stone-ground mustard. Bring the mixture to a boil and return the browned Kielbasa to the skillet.
- Add the pierogies, nestling them into the sauerkraut and onions. Lower the heat under the pan and simmer for 5 minutes. Sprinkle the Cheddar and Swiss cheeses on top and transfer the pan to the oven.
- Bake at 350°F for 10 to 12 minutes, until the pierogies are cooked through and the cheese has melted. Top with chopped scallions and enjoy!

SLOW COOKER KIELBASA AND SAUERKRAUT (FRESH KIELBASA)

- Place your sauerkraut in a strainer over the sink and let it drain while you prep the other ingredients. *See Notes*
- Add oil to a large pan or directly into your slow cooker if it can go on the stove or has browning capabilities. Sear the kielbasa for about 2 minutes on each side to crisp and brown up. Remove from pan and set aside.**See Notes**
- Add the mushrooms and a little more oil if needed and brown for 5 minutes.
- Add the onion to the mushrooms and cook for about 5 minutes. Add about 1 teaspoon of fresh cracked pepper, it's about 20 twists for me.
- Add in 1/4 cup of water and the bouillon cube, scrape the bottom of the pot and mix until the bouillon cube is dissolved.
- Use your hand to really squeeze out all the moisture in the kraut, then add it to the pot and mix the kraut and mushroom/onion mixture together.
- Place all of this in your slowcooker and nestle the kielbasa on the top. Cover and cook on low for at least 6 hours.
- Slice the kielbasa into serving size pieces and serve alongside the kraut. Serve with horseradish, rye bread, or pierogi as desired.
