Steps:
- Trim brisket of all visible fat, cut to fit 4 qt or larger crockpot, if necessary.
- Place onion, celery, potatoes and carrots in bottom of crockpot, lay brisket on top.
- Whisk together bouillon, bay leaf, garlic, Worcestershire sauce and dry mustard.
- Pour over brisket, cover pot.
- Cook on low setting for 8 to 10 hours, adding cabbage wedges and caraway seed for the last hour of cooking.
- To serve, discard cooking liquid, slice meat onto hot serving plates, accompany with the cooked potatoes, carrots, celery, cabbage wedges and your favourite mustard.

- In 5- to 6-quart slow cooker, mix carrots, potatoes and onion.
- If necessary, cut corned beef brisket to fit into slow cooker; place over vegetables. Add enough of the water to cover. If brisket is packaged with spice packet, add contents of spice packet and omit pepper, cloves and bay leaf. If not, add pepper, cloves and bay leaf.
- Cover; cook on Low setting 10 to 12 hours.
- Remove and discard bay leaf. Remove brisket from slow cooker; place on serving platter. Cut brisket into thin slices. With slotted spoon, place vegetables in serving bowl.

CROCK POT CORNED BEEF

Steps:
- Add the corned beef to a crock pot and add the pickling spices included in the package to the top of the corned beef.
- Pour in the wine and chicken broth, then add water to come about halfway up the side of the corned beef. if you have a thinner cut of corned beef, you might not even need to add water. Just make sure you half liquid only halfway covering the meat of else it will boil instead of braise.
- Cook on low for 4 hours.
- After 4 hours, add the potatoes and cabbage to the slow cooker, tucking down into the liquid as much as possible.
- Cook for another 3-4 hours then remove the corned beef to a cutting board. Place the cabbage and potatoes into bowls, then slice the corned beef and serve.

- 1. Add water and 1 Tablespoon of onion soup mix to slow cooker
- 2. Place half of the onions in, add garlic.
- 3. Salt and pepper all sides of the roast and place in slow cooker (I usually sear the meat on the stove prior to adding to slow cooker, it adds color and seals in the flavor and juices)
- 4. Add carrots and the rest of the onions
- 5. Pour remaining onion soup mix over roast
- 6. Add Coke and Jack Daniels
- 7. Cover and cook on low 7-8 hours
- 8. Remove carrots and roast from crockpot
- 9. Make gravy from the juices and serve with mashed potatoes

- Peel and slice carrots into bite size pieces. Do not peel potatoes, but cut into large bite size pieces. Slice your onions, and set all veggies aside.
