STUFFED FLANK STEAK IN CROCK POT



Stuffed Flank Steak in Crock Pot image

Very easy yet delicious dish. I like serving this with Chef #209747 's Recipe #99430 and my Recipe #265779 and some crusty rolls and you end up with an elegant style meal.

2 cups seasoned stuffing mix
1 cup beef broth
2 tablespoons butter, melted
2 tablespoons grated parmesan cheese
2 lbs flank steaks
2 tablespoons Dijon mustard
2 tablespoons oil
salt and pepper
1 (1 ounce) package brown gravy mix
2 cups beef broth

Steps:

  • Slightly score flank steak on each side at 1 inch intervals.
  • Combine stuffing with beef broth, butter and cheese.
  • Spread mustard over flank steak, then spread stuffing over steak and roll up like a jelly roll.
  • Tie with string.
  • Rub with oil sprinkle with salt and pepper on the outside and put into crock pot.
  • Mix gravy and water.
  • Pour over meat.
  • Cover and cook low, 8 hours.
  • Remove meat from crock pot. Stir gravy well to blend (Some of the stuffing mix will come out of the flank steak while it is cooking and this will thicken the gravy a bit more).
  • Slice into serving sized pieces.
  • Serve with gravy on the side to put on the steak and potatoes if you are serving them.

1 beef flank steak (1-1/2 pounds)
1 tablespoon canola oil
1 large onion, sliced
1/3 cup water
1 can (4 ounces) chopped green chiles
2 tablespoons vinegar
1-1/4 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a skillet, brown steak in oil; transfer to a 5-qt. slow cooker. In the same skillet, saute onion for 1 minute. Gradually add water, stirring to loosen browned bits from pan. Add remaining ingredients; bring to a boil. Pour over the flank steak. Cover and cook on low until the meat is tender, 4-5 hours. Slice the meat; serve with onion and pan juices.

1 large carrot, chopped
1 large onion, chopped
¼ teaspoon ground dried thyme
1 bay leaf
½ cup water

Steps:

  • Season the flank steak with salt and pepper and place into a slow cooker. Add the carrot and onion; season with thyme and bay. Pour in the water.
  • Cook on High for 4 hours; turn the steak over and press down into the liquid. Continue cooking until a fork easily passes through the meat, about 4 hours more.

1 1/2 lbs flank steaks
3 tablespoons butter
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 teaspoon dried basil
3 cloves garlic, minced
salt and pepper
2 tablespoons olive oil
1 bay leaf
1 (29 ounce) can tomatoes
3/4 cup tomato paste
1 cup chopped cooking onion
1 tablespoon soy sauce
2 tablespoons Worcestershire sauce
3 hot chili peppers, finely chopped
1 cup mushroom, sliced
3/4 cup sour cream
1/4 cup parsley, finely chopped
12 ounces linguine, uncooked
2 tablespoons butter

Steps:

  • Pound the flank steak to about 1/2" (to help tenderize it).
  • Spread 3 tbsp of butter on the steak and sprinkle with the thyme, sage, basil, garlic& season with salt and pepper.
  • With the long side towards you roll up the steak (jelly roll style) and secure with skewers or toothpicks about 1" apart (Make sure it is secure).
  • Heat olive oil in skillet and brown the outside of the steak, place steak in your crock pot.
  • In the same skillet brown onions& mushrooms, when browned add tomatoes, tomato paste, chilies, soy sauce, sour cream, bay leaf& worcestershire sauce, mix well and pour over the steak in the crock pot.
  • Turn to low and cook 5-6 hours; add half the parsley after 5 hours.
  • Meanwhile cook the linguini so it will be ready in time to serve with the flank steak, drain the linguini, add 2 tbsp butter& remaining parsley; toss.
  • Cut the Flank steak into 1" slices and put on individual plates along with the pasta, serve with sauce over the steak& the pasta.

1 medium onion, chopped
1 garlic clove, minced
1 tablespoon butter
1 1/2 cups soft breadcrumbs (about 3 slices)
1/2 cup celery, chopped
1/4 cup parsley, chopped
1 egg, beaten
3/4 teaspoon poultry seasoning
1 teaspoon salt

1/2 cup beef broth
2 teaspoons cornstarch
4 teaspoons water

  • Flatten steak to 1/2-in. thickness; set aside.
  • In a nonstick skillet, sauté onion, celery and garlic in butter until tender. Add the bread crumbs, parsley, egg, poultry seasoning, salt and pepper; mix well.
  • Spread over steak to within 1 inches of edge. Roll up jelly-roll style, starting with a long side; tie with kitchen string.
  • Place in a 5-qt. slow cooker; add broth. Cover and cook on low for 8-10 hours.
  • Remove meat to a serving platter and keep warm. Skim fat from cooking juices; pour into a small saucepan. Combine cornstarch and water until smooth; stir into juices.
  • Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove string before slicing steak; serve with gravy.

This is from Rival's Crock Pot Cooking. 1975. DH loves this sort of thing. I would serve this with a green veggie, probably broccoli.

2 lbs beef flank steak
6 slices canned pineapple (reserve 1/2 cup juice)
2 tablespoons soy sauce
1/2 teaspoon ground ginger
1 tablespoon dry sherry
2 tablespoons brown sugar
1 teaspoon Worcestershire sauce
2 chicken bouillon cubes
1 1/2 cups boiling water
1 cup long grain rice

Steps:

  • Roll flank steak, tie and cut into 6 individual steaks.
  • In a shallow bowl, stir together pineapple juice, soy sauce, ginger, sherry, sugar and Worcestershire sauce.
  • Marinate steaks about 1 hour at room temperature.
  • Dissolve bouillon cubes in boiling water; combine with rice and 1/2 cup of the soy mixture in crock pot.
  • Top each steak with a pineapple ring, then place in crock pot.
  • Cover and cook on low for 8-10 hours or on high for 3-4 hours.
