- Lightly spray bottom and side of 3 1/2- to 4-quart slow cooker with cooking spray.
- In 10-inch nonstick skillet, melt butter over medium-high heat. Add celery and onion; cook 3 to 4 minutes, stirring occasionally, until crisp-tender.
- Place bread cubes, celery mixture and broth in slow cooker; toss to combine. Cover; cook on Low heat setting 3 to 3 1/2 hours. Stir before serving.

Here's a Crock-Pot stuffing recipe I found in the Calgary Herald and thought I'd share it. I'm going to use it for Christmas with the vegetable stock for my vegetarian so I will add my comments after Christmas.

- In a large fry pan saute onions, celery and apple in butter until onion is just translucent.
- Stir in sage, marjoram, salt, pepper, savory and thyme.
- Combine vegetable mixture with the bread cubes and parsley.
- Toss well.
- Pour stock over mixture, tossing well.
- Spoon into your crock-pot.
- Cover and cook on high for one hour.
- Reduce to low and continue cooking for 2-3 hours, stirring every hour.
- As stated for Vegetarians use vegetable stock.

- 1. Saute celery and onion in butter until onion is translucent.
- 2. Stir in bread crumbs, seasonings, and raisins.
- 3. Add soup and broth. Mix thoroughly.
- 4. Spoon "lightly" (do not pack it down) into 6 or 8 quart crock pot. Cook on low for 4 to 6 hours. (Be careful with newer crock pots. They cook hotter.)

- In a large skillet, heat the olive oil over medium. Add the onions and celery and let cook, stirring occasionally, until the onion is softened and lightly brown, about 8 minutes. Increase the heat to medium high, then add the mushrooms. Let cook, stirring often, until the mushrooms are soft and most of the liquid has evaporated, about 6 minutes. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper. Remove from heat and set aside.
- In a 3- or 4-quart slow cooker, stir together the wild rice blend and sautéed vegetables. Carefully pour in the chicken broth (if using a 3-quart slow cooker, it will be full nearly to the top). Gently stir, then cover and cook on low for 5 to 6 hours or high for 2 to 3 hours, until the rice is tender. Turn off the slow cooker, then stir in the cranberries, sage, and thyme.
- Taste and add additional salt and/or pepper as desired. Cover and let stand 10 minutes. Just before serving, sprinkle the toasted almonds over the top. Serve warm.

- Heat butter over medium heat until melted. Stir in poultry seasoning, black pepper and salt to taste. Add celery & onions and cook until softened (do not brown). Cool completely.
- Place bread cubes in a large bowl. Add cooled celery and onion mixture, parsley and fresh herbs if using.
- Add chicken broth a little bit at a time just to moisten and gently stir. You may not need all of the broth (see note below). Stir in eggs.
- Cover and refrigerate overnight if making ahead of time.
- Grease a 5-6 qt slow cooker well. Place stuffing in the slow cooker and turn onto high for 30 minutes. Reduce temperature to low and cook an additional 3-4 hours or until hot and cooked through. If stuffing is done before your meal is ready it can remain on warm.

- Melt butter in skillet and sauté onion, celery, parsley and mushrooms. Pour over bread crumbs in very large mixing bowl. Add all seasonings and toss well together. Pour enough broth to moisten, add beaten eggs, and mix together well.
- Pack lightly into crock pot. Cover and set to high for 45 minute then reduce heat to low and cook for 4 to 8 hours.
- (Check on it every so often and add more broth if necessary).
CROCKPOT CHICKEN AND DRESSING CASSEROLE
Steps:
- Spray the inside of a 6 quart oval slow cooker with cooking spray.
- Arrange chicken in a single layer on bottom. Season with poultry seasoning, lemon pepper, garlic and salt.
- In a skillet on the stovetop, cook the onion and celery with butter over medium-high heat. Cook until softened and beginning to brown. about 3-5 minutes Season with black pepper to taste..
- In a medium-size mixing bowl whisk together, both soups, chicken broth and gravy mix. Pour 3/4 evenly over chicken in crockpot.
- Add the stuffing/dressing mix and cooked vegetables to remaining soup in bowl. Mix well then spread on top. Cover opening with doubled paper towels, then place lid firmly into place.
- Cook for 3-4 hours on high or 6-7 hours on low. Allow to sit uncovered for 15 minutes prior to serving. May fluff dressing with a fork, if desired.

- In a pan on the stove, heat the butter and add in the onions, celery and mushrooms until softened. Add in the pepper, salt and poultry seasoning and cook for 1 more minute.
- Allow the mixture to cool. Then place the bread cubes in a large bowl and add the cooled mixture, along with the thyme, rosemary and parsley. Gently mix to combine.
- Gently stir the eggs into the chicken broth and add in thel iquid 1/2 cup at a time and gently toss to combine. You might not need all the liquid now, but reserve for later if needed. Remember, add only enough to moisten, but not soak.
- Add mixture into greased slow cooker, and either cook on high for 30 minutes or on low for 3 hours. Check stuffing a few times, and taste. Add more seasoning or broth as needed.

- Now you are going to add your broth. NOTE: Too much leads to a very wet stuffing, too little and it will be dry. You just want your bread moist. If you do add too much, it’s okay just add more bread. For the sandwich bread I picked, I barely needed 2 cups of broth. If you picked a harder crustier bread you will need more.
