- In a Dutch oven, cook the beef, pork and onions over medium heat until meat is no longer pink, breaking meat into crumbles. Add garlic; cook 1 minute longer. Drain. Add the beans, tomatoes, vinegar, cocoa, sauces, sugar and seasonings; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours., Discard bay leaves. Serve with spaghetti. If desired, garnish with cheese, sour cream, tomatoes and onions.

Steps:
- 1. In a large frying pan over medium-high heat, brown ground beef, onion, garlic, salt and pepper. Drain thoroughly.
- 2. Put ground beef mixture in slow cooker/crock pot.
- 3. Add remaining ingredients and stir gently until all ingredients are well mixed.
- 4. Turn temperature on crock pot to low and cook for 4-5 hours.
- 5. Cook spaghetti according to package directions and transfer onto individual serving plates.
- 6. Ladle chili over spaghetti. Add a heap of cheddar cheese on top with a sprinkle of green onions. Serve.

Steps:
- Brown ground beef, onions, and celery in a large skillet, drain off all fat.
- Place ingredients for the crock pot into the slow-cooker and stir well.
- Cover crock pot and cook for 7-9 hours on low, or 3 1/2-4 1/2 hours on high, stirring during last part of cooking if using high setting.
- Cook spaghetti 1/2 hour before chili is done.
- To have chili 3-ways, serve it with spaghetti, chili and cheese.
- To have chili 4-ways, serve it with spaghetti, chili, onion, and cheese.
- To have spaghetti 5-ways, serve it with spaghetti, chili, beans, onion, and cheese.
- Douse your chili liberally with hot sauce, if desired.

- Heat olive oil in a large and deep non-stick skillet over medium-high heat.
- Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
- Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
- Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
- Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
- Cover with lid and cook on low heat for 5 - 6 hours.
- Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.
