Ingredients

1 ½ pounds sweet Italian sausage
2 cups 1/2-inch pieces celery
2 pounds zucchini, cut into 1/2-inch slices
2 (28 ounce) cans diced tomatoes
2 green bell peppers, cut into 1/2-inch slices
1 cup chopped onion
2 teaspoons salt
1 teaspoon white sugar
1 teaspoon dried oregano
1 teaspoon Italian seasoning
1 teaspoon dried basil
¼ teaspoon garlic powder
6 tablespoons grated Parmesan cheese, or to taste

Steps:

Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix celery into cooked sausage; cook and stir until celery is softened, about 10 minutes.
Combine sausage mixture, zucchini, tomatoes, bell peppers, onion, salt, sugar, oregano, Italian seasoning, basil, and garlic powder in a slow cooker.
Cook on Low for 4 to 6 hours. Garnish each serving with 1 tablespoon Parmesan cheese.

3 lbs Chuck Roast
1 envelope ranch mix
1 envelope au jus mix
1 stick butter (sliced)
8 oz mushrooms (sliced (we use crimini ))
2 medium zucchini ( cut into 1 inch pieces)
2 medium yellow squash ( cut into 1 inch pieces)
Salt and pepper to taste.

Steps:

Place roast in the bottom of a 6 quart slow cooker.
Top with ranch and gravy mixes.
Add mushrooms, zucchini and yellow squash on top.
Salt and pepper to taste
Place butter evenly over the top.
Cover and cook on low for 8 hours.

1 whole boneless skinless chicken breast
1 large white onion
1 lb small mixed squash
2 zucchini
1/2 lb button mushroom
1 (8 ounce) can stewed tomatoes (can use diced, crushed, sliced or whole)
1 tablespoon seasoning salt, pepper to taste
1 tablespoon dried basil
1/4 cup white wine
2 teaspoons olive oil

Steps:

Slice onions and place in bottom of pot. Season chicken with season salt and pepper and place on top of onions. Add sliced zukes and squashes, topped by mushrooms. Pour tomatoes over all. Top with basil. Add wine and a few dashes of olive oil.
Cook on high 3 hours. I have not tried it on low but I would imagine 6-8 hours.
