4 bone-in skin-on chicken thighs
4 chicken drumsticks
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons olive oil
2 medium onions, halved and cut into 1/4-inch slices
2 cloves garlic, finely chopped
2 tablespoons sweet paprika
1/4 teaspoon ground red pepper (cayenne)
1 cup Progresso™ chicken broth (from 32-oz carton)
2 tablespoons cornstarch
2 tablespoons water
3/4 cup sour cream
Buttered cooked egg noodles, if desired

Steps:

  • Spray 4-quart slow cooker with cooking spray.
  • Season chicken thighs and drumsticks with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. In 12-inch skillet, heat oil over medium-high heat. Place chicken skin-side down in skillet. Cook 8 to 10 minutes, turning once, until browned on both sides. Transfer chicken to slow cooker.
  • Pour all except 1 tablespoon fat from skillet. Decrease heat to medium; add onions to skillet and cook about 4 minutes, stirring frequently, until softened. Add garlic, paprika, red pepper, remaining 1/2 teaspoon salt and 1/4 teaspoon pepper; continue to cook and stir 1 minute. Transfer to slow cooker. Add chicken broth to skillet. Cook over medium heat 1 minute, scraping up any browned bits on bottom of skillet with wooden spoon. Transfer to slow cooker. Cover; cook on Low heat setting 5 to 6 hours or until juice of chicken is clear when thickest part is cut to bone (at least 165°F).
  • Transfer chicken to serving platter and keep warm. Increase to High heat setting.
  • In small bowl, beat cornstarch and water with whisk until smooth. Beat into cooking liquid in slow cooker. Cover; cook about 15 minutes or until sauce is thickened. Beat sour cream into cooking liquid in slow cooker with whisk. Cover; cook about 5 minutes or until hot.
  • Serve chicken with sauce over buttered noodles.

  • Thaw 12 to 24 hours in refrigerator, until completely thawed.
  • Pour contents of bags into 4 1/2-quart slow cooker. Cover and cook on Low heat setting 4 to 5 hours.
  • Divide rice among 8 bowls. Divide chicken mixture among bowls of rice. Top each bowl with 1 tablespoon sour cream and 3/4 teaspoon dill.

Steps:

Add chicken pieces and brown, turning occasionally, until golden, about 6 minutes. Transfer to slow cooker (do not clean pan), layering chicken on top of onion mixture.
  • In same saucepan over high heat, bring stock to simmer, scraping up browned bits from bottom of pan. Pour over chicken in slow cooker, cover, and cook on low until chicken is tender but not falling off bone, 5 to 6 hours.
  • Stir sour cream into sauce. Garnish with dill and serve.

2 Tbsp canola oil
1 cup diced onion
½ cup chicken broth
2 ½ pounds boneless, skinless chicken thighs (frozen is fine)
1 Tbsp paprika (ideally Hungarian paprika)
1 tsp dried marjoram(or you can use ½ tsp dried oregano)
1 ¼ tsp salt
½ tsp pepper
⅛ tsp red pepper flakes
1 (14 oz) can crushed tomatoes
2 Tbsp cornstarch + 3 Tbsp water
½ cup sour cream

Steps:

  • Turn your Instant Pot to the saute setting. When the display says HOT add in the oil and swirl it around. Add in the onion and saute for 4-5 minutes. Pour in the chicken broth and scrape the bottom of the pot. Turn off the Instant Pot.
  • Add in the chicken. Sprinkle the chicken with paprika, marjoram, salt, pepper and red pepper flakes. Then dump the tomatoes on top of the chicken.
  • Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes for fresh thighs or 15 minutes for frozen thighs. When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid.
  • Turn the Instant Pot to saute. In a small bowl stir together 2 Tbsp of cornstarch with 3 Tbsp of water, until smooth.Then pour the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly. Turn off the Instant Pot. Stir about 1/2 cup of the sauce from the pot into the sour cream to temper it. Then stir the sour cream into the Instant Pot. Taste test the sauce and add more salt and pepper to taste.
  • Serve the chicken and sauce over rice, egg noodles, orzo or cauliflower rice.

4 chicken leg quarters, cut in half at joint (about 3 pounds total)
Coarse salt and ground pepper
2 teaspoons vegetable oil
1 large yellow onion, halved and thinly sliced lengthwise
3 garlic cloves, roughly chopped
2 tablespoons sweet paprika
3 tablespoons all-purpose flour
1 3/4 cups low-sodium chicken broth
1 can (14 ounces) diced tomatoes
1/2 pound wide egg noodles
1/2 cup sour cream or thick plain yogurt

Steps:

  • Season chicken with salt and pepper. In a large Dutch oven or heavy pot, heat oil over high. Cook chicken, skin side down, until golden and crisp, 6 minutes. Flip chicken and cook until browned, 6 minutes more. Transfer to a plate.
  • Discard all but 1 tablespoon fat from pot and reduce heat to medium. Add onion and cook, stirring frequently and scraping up any browned bits with a wooden spoon, until beginning to soften, 2 minutes. Add garlic and cook, stirring frequently, 3 minutes. Add paprika and flour, season with salt and pepper, and stir constantly until paprika is fragrant and mixture begins to stick, 1 minute. Add broth and whisk until smooth. Add tomatoes and bring to a boil over high. Return chicken to pot in a single layer, skin side up, and reduce heat to medium. Cover and cook until chicken is cooked through, 20 minutes.
  • Meanwhile, in a large pot of boiling salted water, cook noodles according to package instructions. Drain noodles and divide among four bowls. Top with chicken. Stir sour cream into sauce, then ladle over chicken and noodles.
