CROCK POT CHICKEN FAJITAS
A great, no fuss way to make chicken fajitas. I serve them with Mexican rice and refried beans. A big favorite here.

Steps:
- Place chicken and onions (and peppers, if using) in crockpot. Sprinkle spices over all. Add the lime juice and stir well.
- Cook on low for 4-6 hours. If you start with frozen chicken breast, you might need to cook for longer than 6 hours.
- Serve in warm tortillas with your favorite fajita toppings.

SLOW COOKER FAJITAS

- Place peppers and onion in a 5-qt. slow cooker. Top with beef. Combine water, vinegar, lime juice and seasonings; pour over meat. Cover and cook on low until meat is tender, 8-10 hours., Using a slotted spoon, place about 3/4 cup meat mixture down the center of each tortilla. Top with salsa, cheese and cilantro; roll up.

SLOW COOKER CHICKEN FAJITAS RECIPE BY TASTY
Here's what you need: red bell pepper, yellow bell pepper, green bell pepper, yellow onion, boneless, skinless chicken breast, taco seasoning, garlic, lime, canned diced tomatoes with green chiles, flour tortilla, cheese, sour cream, guacamole

Steps:
- Add half of the sliced peppers and onions to your slow cooker.
- Layer the chicken and coat all sides with taco seasoning.
- Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
- Add the remaining peppers and onions, cover and any remaining lime juice.
- Cook on high for 3-4 hours.
- Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
- Return the sliced chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
- NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
- Assemble Fajitas to your liking - we recommend topping with cheese, sour cream, and guacamole!

CROCK POT PULLED-PORK FAJITAS

Steps:
- Trim off excess fat from pork.
- Place pork in slow cooker and place onions on top of roast.
- Mix remaining ingredients together except tortillas; pour over pork.
- cover and cook on low heat setting 8 to 10 hours or until pork is very tender.
- Remove pork; place on large platter or cutting board and pull pork apart.
- Place pork in serving bowl and pour sauce on top.
- Spoon filling into tortillas and roll up.
CROCK POT CHICKEN (OR PORK) FAJITAS
Edited to add: I just made these again last night using 1 lb of pork stir fry strips instead of chicken and it turned out great! Very flavorful. I stirred in an extra TBS of taco seasoning an hour before it was done based on the other reviews but I'm not sure it needed it. I would suggest maybe only adding the extra taco seasoning if your chicken breasts are large or you're using more than a pound of pork. These are really easy to make and taste Great rolled up in warm flour tortillas with all the usual fajita toppings.

- Stir to combine all ingredients in a crock pot and cook on high for 3-4 hours.
- Just before serving, heat flour tortillas in foil at 350 degrees for 10 minutes.
- Serve fajita mixture with warmed flour tortillas and all your favorite toppings, such as: sour cream, cheese, guacamole, etc.
