2 1/2 cups dry pinto beans
5 cups water
12 fl oz dark beer
1/2 pound thick cut bacon
1 yellow onion (chopped)
4 garlic cloves (minced)
2 serrano peppers (seeded and minced)
1 tbsp brown sugar (packed)
2 tsp epazote (dried)
1 tsp ground cumin
1 tsp oregano (dried)
1/2 tsp chili powder
4 roma tomatoes
3/4 cup cilantro (chopped)

Steps:

  • Sift the dry beans and remove any stones or debris. Soak in water for 6-8 hours or overnight.
  • Add the beans to the slow cooker along with 5 cups water and 12 ounces dark beer and cook on HIGH for 1-2 hours. Chop the bacon into 1/2″ pieces and cook with the chopped onion until fully cooked and crispy. Drain most of the grease and add to the slow cooker. Add the garlic, serrano peppers, brown sugar, epazote, cumin, oregano, and chili powder. Reduce heat to LOW and cook for 2-3 hours more.
  • Roughly chop the roma tomatoes and cilantro. Reserve 1/4 cup cilantro. Add the rest of the cilantro and chopped tomatoes to the slow cooker and cook for one more hour on LOW setting. Serve with broth as a side dish or over rice or other grain.

1 pound pinto beans (dried )
1 12 ounce bottle Mexican beer
6 cups water
2 garlic cloves
1 pound thick-cut bacon
1 white onion (chopped)
3 roma tomatoes (chopped)
1 to 2 jalapeños (chopped (optional))
1 tablespoon salt
fresh cilantro (for garnish)

Steps:

  • Spread beans over your counter so you can look for beans that are broken, discolored, or shriveled and remove them. There will also be small stones or pebbles that should be sorted out of the beans during this phase. Discard all of the undesirable pieces.
  • Place beans in a colander. Rinse the beans thoroughly with cool water.
  • Soak your beans for 30 minutes to 1 hour before cooking.
  • Add soaked beans, beer, water, and garlic to slow cooker.
  • Chop bacon into 1⁄2-inch pieces and fry in a large skillet until crispy; drain and set aside.
  • Add the onions to the skillet and cook, stirring frequently to loosen the brown bits left behind in the pan from the bacon, for 2 to 3 minutes.
  • Add tomatoes and jalapeños (if using) and, cook, continuing to stir and incorporate and leftover bits from the skillet, keeping all the delicious goodness in your beans, for 2 to 3 minutes. Remove from heat.
  • Add the contents of the skillet to the slow cooker, along with the cooked bacon. Add salt and stir until well combined.
  • Cover and cook on low for 7 to 8 hours.
  • Garnish with cilantro and serve warm.

16 oz uncooked pinto beans
5 slices bacon (cut into smaller pieces)
3 beef franks (cut into cubes)
1 cup ham (cut into cubes)
1 pound Mexican chorizo
2 tomatoes (diced)
1/2 bunch of cilantro (chopped)
1/2 onion (diced)
jalapeño (if desired)
1 more chipotle peppers depending on how spicy you want it
1 clove garlic (chopped)
pepper (oregano, paprika, cumin, and salt to taste.)

Steps:

  • Add the rinsed beans to a large pot with plenty of water, salt, and a small piece of onion.
  • Let boil for about 1.5 hours, checking often to make sure that there is still enough water.
  • Add the rinsed beans to a slow cooker with plenty of water, salt, and a small piece of onion.
  • Turn the slow cooker on to high and heat for 3 hours.
  • Add the bacon to a large pot and cook for about 5 minutes.
  • Add the chorizo and continue cooking until cooked through.
  • After about 5 minutes, add the ham, the beef franks, and the seasonings (including the garlic).
  • Next, add the tomatoes, the cilantro, the onion, the jalapeno, and the chipotle pepper and cook for 5 additional minutes.
  • Finally, add the cooked pinto beans and the water that they were cooked in and let boil for about 15 minutes so that all of the flavors can combine.
  • If you want to thicken your charro beans, you can combine 2 tablespoons of corn starch with 1/4 cup of cold water and mix well before adding it to the pot.
  • Serve hot as a side dish or on its own.

3 cups dried pinto beans
3 quarts water
12 ounces dark beer
salt
3 garlic cloves, minced
2 serrano peppers, seeded and minced
1 lb bacon, cut in 1-inch pieces
1 medium onion, chopped
3 roma tomatoes, chopped
1 cup cilantro, minced

Steps:

  • Sort through the beans. Look for small rocks and debris.
  • Place in a large bowl and rinse several times. Lift beans out by hand into a clean bowl of water. Do not pour beans as there may be sand and debris at the bottom of rinse bowl.
  • Fill bowl with water and soak beans overnight. Drain off soaking water.
  • In a large soup pot, bring 3 quarts of water to a boil and add beans & beer.
  • Lower heat to simmer, cover pan and cook about 2 hours.
  • When the beans are light brown and soft, add salt, garlic and serrano peppers.
  • In a skillet over medium-high heat, fry bacon pieces and onion until bacon is crisp. Add to beans.
  • Lastly, add the cilantro and fresh tomatoes. Simmer for another hour. (either peel the tomatoes first or skim off bits of peel as they float to the top during cooking.).
  • Serve with flour or corn tortillas. Cornbread is great, too!
  • *If you are too busy to babysit a pot of beans, after the overnight soak, simmer in your crock pot; 3 cups of beans for a large crock pot, 2 cups of beans for a smaller crock pot. Cooking time for pre-soaked beans = 5-6 hours on low heat.".

1 pound dried pinto beans
4 cups water
2 cups beef broth
6 cloves garlic (minced)
Fresh jalapeno (diced (optional))
1 tablespoon cumin
1 teaspoon garlic powder
1 teaspoon chili powder
1 (10-ounce) can diced tomatoes & green chiles (such as Rotel)
1 cup fresh cilantro leaves (chopped)
Salt & freshly ground black pepper

Steps:

  • Place the beans in a colander, rinse well, and remove any stones or shriveled beans.
  • Cook the bacon until just crispy. Drain, chop, and set aside.
  • Pour the beans into the slow cooker. Cover with water and beef broth. Add chopped bacon, garlic, jalapeño (if using), cumin, garlic powder, and chili powder. Cover and cook on low for 7 to 9 hours or until almost done. Stir in the Rotel and chopped cilantro; cover and cook for an additional hour or until tender (the total cooking time will likely be between 8 to 10 hours, depending on how hot your particular slow cooker runs). When the beans are done, season with salt and freshly ground pepper, to taste (stir in 1/2 teaspoon of salt at a time, tasting before adding more).

1 pound dry pinto beans, sorted
water as needed
6 slices bacon, chopped
4 medium Roma (plum) tomatoes, chopped
2 medium onions, chopped
1 medium green bell pepper, chopped
2 jalapeno peppers, seeded and chopped
½ bunch fresh cilantro, chopped
2 cloves garlic, chopped
1 (12 fluid ounce) can or bottle beer (such as Shiner® Bock)
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon chili powder
½ teaspoon ground cumin

Steps:

  • Place pinto beans into a large container and cover with several inches of cool water; let soak, 8 hours to overnight. Rinse and drain.
  • Place beans in a slow cooker with just enough water to cover.
  • Cook bacon in a large skillet over medium-high heat until almost browned and crispy, 5 to 7 minutes. Add tomatoes, onions, bell pepper, jalapenos, cilantro, and garlic. Saute in bacon drippings for 2 minutes, then slowly pour in the beer. Add salt, pepper, chili powder, and cumin. Bring to a boil. Add this mixture to the beans and water in the slow cooker.
  • Cook on Low for 8 hours. Serve.

1 pound dry pinto beans
1 (12-ounce) Mexican lager beer
6 cups water
8 ounces bacon
2 small onions, chopped
2 jalapeños, stemmed and chopped (seeded, for a less spicy version)
4 cloves garlic, chopped
2 teaspoon ground cumin
1 teaspoon ground chili powder
1 teaspoon ground coriander
1 teaspoon dried oregano
2 bay leaves
1/2 cup chopped cilantro
2 scallions, thinly sliced

Steps:

  • Rinse the beans. Rinse pinto beans and pick through them removing any rocks.
  • Place beans in the crock pot. Place beans in the slow cooker. Add beer and water.
  • Crisp bacon. Meanwhile, cook bacon over medium heat in a large frying pan until browned and crisp. Transfer to a paper towel-lined plate to cool.
  • Sauté vegetables in bacon grease. In the frying pan with the bacon grease, add onions and cook over medium heat until they are soft, about 8 minutes. Add jalapeños and cook another 5 minutes.
  • Add garlic and spices to toast. Add garlic, cumin, chili powder, coriander, oregano, and bay leaves and cook, stirring for a minute more.
  • Combine and cook everything in slow cooker. Transfer onion mixture to slow cooker. Chop bacon and add to slow cooker. Cover and continue cooking until beans are tender, about 4 hours on high or 8 hours on low.
  • Season with salt and serve. Add about 1 tablespoon of salt, taste and add more to your liking. Sprinkle with cilantro and scallions and serve.

Borracho is translated from Spanish to English as drunk. It specifically refers to the beer that is an added ingredient. If you are unable to soak the beans overnight just account for additional cooking time. I generally use the Casserole brand of dry pinto beans because they seem to cook faster. I have found them at most Albertson's locations. However, any brand will work. You can also substitute the Mexican dark beer for any beer you have on hand. I took about 4 or 5 recipes and combined them with the way my Mom makes them also. You can make them as spicy as you want! I noted the variances for the Cumin, Chili powder, and jalapenos. I also always use fresh ingredients - no canned jalapenos or tomatoes. The crock-pot liners are purely optional. I normally take two of them and line the crock pot just in case one breaks. They make it 100% easier and virtual no clean-up is required if you use them to line your crock-pot. The recipe is very forgiving, so you can take away or add to it as you see fit. It's very hard to mess up.

Steps:

  • Soak pinto beans in bowl of hot water overnight.
  • After your beans have soaked overnight, proceed to take out your Crock Pot.
  • If you are using the Slow Cooker Liners then line your Crock Pot.
  • Place all ingredients into the Crock Pot except the tomatoes, onion, bacon, and cilantro.
  • Turn Crock Pot on highest setting until beans turn light brown. This generally takes about 4 to 5 hours depending on the Crock Pot.
  • Prior to the beans turning light brown cut the uncooked thick sliced bacon into one inch pieces.
  • Place the one inch pieces of bacon in a skillet and cook with the ¼ of the finely chopped onion.
  • Once bacon and onion are fully cooked and beans are light brown place bacon, onions and any drippings into the Crock Pot.
  • Add ½ of the tomatoes and cilantro and switch to Crock Pot cooking to low for about an hour.
  • Once you are ready to serve, add the remainder of the tomatoes and cilantro.
