1 lb dried black-eyed peas
1 large onion, sliced
1 large ham hock
2 -4 slices bacon
1/8 teaspoon cayenne pepper (to taste)
1/2 teaspoon garlic powder or 1 fresh garlic clove, minced
1/2 teaspoon salt

Steps:

  • In a large saucepan, cover peas with water to 3 inches over the peas.
  • Bring to boil, reduce heat, then simmer for 45 minutes to 1 hour.
  • Place ham hock, sliced onion, bacon, pepper, garlic and salt in the slow cooker/crock pot.
  • Pour in 3 cups water.
  • Cover and cook on HIGH until peas are tender and ready to go into the crockpot.
  • When peas are tender, transfer to the slow cooker/crock pot.
  • Reduce heat to LOW; cover and cook for 7 to 9 hours.
  • Taste and adjust seasonings. Serve with hot cornbread.

2 carrots, (sliced)
1 stalk celery, (sliced)
1 medium onion, (peeled and quartered)
3 cloves garlic, (peeled)
1 to 2 chipotle peppers in adobo sauce, (diced small)
6 cups vegetable broth
salt
brown or white rice, (for serving)
chopped cilantro or parsley, (optional)

Steps:

  • Add black-eyed peas, carrots, celery, onion, garlic cloves, chipotles (along with a few spoonfuls of adobo sauce), and broth to a slow cooker.
  • Mix well, cover, and cook on high for 1.5 to 2 hours (or low for 6 to 8 hours) or until beans are tender.
  • Remove garlic cloves (or mash and mix into the beans) and large chunks of onion; season beans to taste with salt.
  • Serve beans over rice, garnished with cilantro or parsley, if you wish. Enjoy!

1 lb dried black eyed peas (sorted rinsed and soaked per package.)
29.5 diced tomatoes with basil, oregano and garlic ((2-14.75 oz cans))
1 teaspoon minced garlic (I usedfreeze dried garlic)
3 cups water
3 chicken bouillon cubes (or 3 teaspoons Better than Bouillon)
1 cup red or green bell peppers (chopped, You could also use 1/2 cup freeze dried bell peppers with an extra cup of water)
meaty ham bone or 2 ham hocks
salt and pepper (to taste)

Steps:

  • Drain soaked black eyed peas and place in the bottom of a 6 quart slow cooker.
  • Then pour tomatoes over black eyed peas and add garlic, water, bouillon, peppers and stir well.
  • Nestle ham bone down in black eyed peas, season with salt and pepper and cover.
  • Cook on low for 8-10 hours or until the black eyed peas are tender, stirring a few times over the cooking period.
  • Taste for seasoning and add more salt and pepper if desired.

Our family was visiting, and we went to Disney World on New Year's Day. I just had to have black-eyed peas before midnight. Make it easy, soak black-eyed peas in the slow cooker overnight. This is a little thinner, like a very rich soup. We really enjoyed it; hope you will too! Hot buttered cornbread and chunky applesauce are my favorites to serve with black-eyed peas.

1 pound dried black-eyed peas
3 smoked ham hocks, or more to taste
6 cups water, plus more as needed
1 onion, chopped small
1 large clove garlic, crushed
¼ teaspoon red pepper flakes
⅛ teaspoon white sugar
salt to taste

Steps:

  • Put black-eyed peas into a large container with enough cool water to cover by a few inches; soak 8 hours to overnight.
  • Put ham hocks into a stockpot with 6 cups water; bring to a boil, reduce heat to low, cover pot, and simmer until meat is falling off bone, about 90 minutes. Remove ham hocks and reserve for another use. Refrigerate the ham stock, 8 hours to overnight.
  • Drain and rinse black-eyed peas thoroughly; transfer to a slow cooker. Bury one of the cooked ham hocks in the peas; add onion, garlic, red pepper flakes, and sugar.
  • Skim congealed fat from surface of ham stock; discard. Pour stock into slow cooker. Add enough water to cover the peas by 1 1/2 inches.
  • Cook on Low for 14 hours. Season with salt.

1 large smoked ham hock
1 large onion (sliced)
2 ribs celery (cleaned, chopped)
2 carrots (peeled, chopped)
2 to 4 strips bacon (diced, cooked)
Cayenne pepper (to taste)
1/2 teaspoon garlic powder (or 1 fresh clove garlic, minced)
3 cups water
Kosher salt (to taste)
Freshly ground black pepper (to taste)

Steps:

  • Gather the ingredients.
  • Place the peas in a large saucepan or Dutch oven and cover with water to at least 3 inches over the peas. Bring to a boil, reduce heat, then simmer for 15 minutes, drain, and reserve.
  • Place the ham hock, onion, celery, carrots, bacon, cayenne pepper, and garlic in the slow cooker. Add 3 cups of water.
  • Cover the ingredients and cook on high for 1 hour.
  • Add the drained peas to the slow cooker.
  • Set the crock pot on low, cover, and cook for 5 to 7 hours, stirring halfway.
  • Once the cooking time is done, remove the ham hock from the pot, pick the meat, and shred it or chop it depending on your preference. Add the meat back to the peas.
  • Taste for seasoning and add kosher salt and freshly ground black pepper as needed. Stir well.
  • Serve the peas with your favorite sides and enjoy.

2 lb dried black-eyed peas
2 medium onions, chopped
2 box chicken broth (32 oz each)
2 bay leaves
1 can(s) Rotel original or flavor of your preference, I use Rotel with habaneros (10 oz)
1 ham bone with some meat still on it
2 c bite-sized chunks of ham (from the ham bone plus any extra you want to add)
1 Tbsp garlic powder

Steps:

  • 1. Rinse peas. Drain and place in Crock Pot.
  • 2. Pour in chicken broth. Add water to bring the liquid just to the top of the peas.
  • 3. Bury the ham bone down into the peas. (If you don't have a bone I use chunks of ham and it works just as well.)
  • 4. Add the chopped onion, bay leaves, can of Rotel tomatoes, and garlic powder.
  • 5. Cover and set Crock Pot to low for 8 hrs.
  • 6. At that time, remove bone. Remove any meat from the bone. Cut into bite-sized pieces (you want about two cups total).
  • 7. Add ham to the Crock Pot. Recover and continue to cook for 2 more hours.
  • 8. Remove bay leaves. Serve with cornbread and enjoy!
  • 9. Note: If you do not use a ham bone and have only chunks of ham then just cook on low for 10 hrs and increase the amount of ham to about 3 cups. I use a 6 qt Crock Pot and it is full when all ingredients are added. If you are having trouble with room in the pot you can adjust the liquid to less.

  • Add the dried peas to the slow cooker. NO NEED TO PRESOAK.
  • Add the chicken broth, can of diced tomatoes, bacon, ham, onion, garlic, oregano and pepper. Stir. WAIT TO ADD THE SALT.
  • Cover and cook on HIGH FOR 7 hours. Do not open the lid during the cooking time.
  • Add the salt to taste.
  • For creamier beans remove 1 cup of the beans and mash. Add back to the slow cooker and stir.

1 meaty leftover ham bone (I used my leftover Thanksgiving dinner ham)
16 oz dried black-eyed beans (rinsed well and picked through for stones)
14.5 oz diced tomatoes
1 small onion (chopped, about 1/2 - 3/4 cups)
4 cloves garlic (minced)
4 small bay leaves
2 teaspoons salt
1 teaspoon ground black pepper
8 cups chicken broth

Steps:

  • Place the leftover ham bone into the slow cooker.
  • Add the rinsed and cleaned black-eyed beans to the crock pot.
  • Next add the diced onion, minced garlic, and diced tomatoes. Add the salt, pepper and bay leaves to the slow cooker.
  • Add the chicken broth to the crock pot making sure all the ingredients are covered with broth. Add more chicken broth if needed.
  • With a large spoon mix the ingredients the best you can around the ham bone. Making sure all the black-eyed beans are submerged in broth and not sitting above the broth on top of the ham bone.
  • Place the lid on the crock pot and set the temperature to low. Slow cook the black-eyed beans for 8 to 10 hours.
  • Once done carefully remove any pieces of the ham bone from the crock pot before serving.
  • Serve over white rice, with collard greens and cornbread for a traditional Southern New Years meal.
