CROCK-POT CREAMY SOUTHWEST BEEF BURRITOS RECIPE
This recipe makes 12 small smothered burritos. A serving is 2 burritos but you can make it just one burrito per person to serve a larger crowd. A nice side of Mexican rice, salad and perhaps some tortilla chips make an excellent meal to serve your family.

- Place beef and diced onion in the bottom of a 6 quart or larger oval slow cooker OR a 3.5 quart casserole slow cooker.
- Cover and cook on LOW for 4 hours, stirring the meat mixture quickly after 2 hours of cooking time. Once done cooking use a slott
- Drain off excess cooking liquid from meat mixture and add to a mixing bowl. To the mixing bowl add the refried beans, 1 cup of the shredded cheese and taco seasoning and stir well to combine.
- In a separate bowl combine together the cream of mushroom soup, sour cream and salsa until well combined, set aside.
- Wash and dry the stoneware insert to your slow cooker and place it back into the heating element base (make sure it is dry!).
- Spoon one-third of the soup and salsa mixture into the bottom of the slow cooker.
- Divide the beef and bean mixture evenly between the 12 small flour tortillas and roll each tortilla cup into a burrito.
- Place 6 rolled burritos, seam side down on top of the soup mixture in the slow cooker. Spoon another one-third of the soup mixture on top of the burritos and sprinkle the top with 1 cup of shredded cheese.
- Add a second layer of burritos on top of the first, seam side down and spoon the final one-third of the soup mixture on top and sprinkle with the remaining 1 cup of shredded cheese.
- Cover slow cooker and cook on LOW for 2 to 3 hours.

HOW TO: SLOW COOKER BLACK BEANS

- Place the beans in a big bowl, cover with water, agitate the beans a few times to remove any dirt, drain in a colander and rinse again.
- Place black beans, onion, garlic cloves, and bay leaf in a slow cooker. Add water.
- Cook on high for about 3-4 hours, testing after 3 hours. To test doneness, spoon out a few beans and blow on them. If the skins peel back, they beans are ready. Taste just to make sure. If all of the water has been absorbed, add more. Beans must stay completely covered to prevent them from burning. If cooking on low for 6-8 hours, test the beans at the 6 hour point.
- Add the salt and let cook, or sit with heat off for another 20-30 minutes, to absorb the salt. Remove the bay leaf, garlic cloves, and onion before using, if desired.
- Use immediately, or allow to cool before transferring beans and some of the cooking liquid to a zipper-lock freezer bag or airtight container and refrigerate for up to 1 week, or freeze up to 3 months. If freezing, flatten bag in freezer-it makes for easier defrosting. Defrost in warm water.
SLOW COOKER BLACK BEAN BURRITOS

- In your slow cooker add the tomatoes, salsa, beans, rice, corn, seasonings, chipotle in adobo sauce and broth. Stir and cover.
- Cook on low 6-8 hours or on high 3-4 hours. The rice will be tender and most of the liquid will be absorbed.
- Lay out your tortillas and place about 1/3 to 1/2 cup on each tortilla. 1/2 Cup is for a very large burrito.
- Spread down through the center.
- On these burritos, I folded each end just about 1 1/2" over the point edge of the beans. Then I rolled up the tortilla along the long edge. If you have a certain technique that you want to use on these - go right ahead.

- Spray sides of Crockpot with cooking spray or use a Crockpot liner.
- Mix together chili powder, garlic powder, onion, pinto beans, tomato sauce and diced tomatoes in a medium sized bowl.
- Place 3/4 cup tomato mixture in bottom of Crockpot. Spread refried beans onto a tortilla.

BLACK BEAN AND SWEET POTATO BURRITOS (SLOW COOKER)
From "Best Recipes All New Slow Cooker", this flavorful and economical recipe is very quick to throw in the crock pot. It is great wrapped in tortillas or served on top of rice (My kids enjoy it both ways!). I double the recipe but not the spices. Note: 11/8/06 I added about 3 tbs. (plus the juice) of crushed pineapple and it was a very good variation!

- Combine Chili powder, oregano, and cumin in small bowl and set aside.
- Layer sweet potato, beans, half of chili powder mix, garlic, onion, jalapeno pepper, green pepper, remaining half of chili powder mix and corn in slow cooker. (Note: I cook the onions, garlic, and sometimes add some green salsa, before I put them in the crock pot. Also, Sometimes I just throw in some taco seasoning.).
- Cover and cook on LOW 5 hours ore until sweet potato is tender. (Note: with my crock pot it takes about 3-4 on low).
- Stir in lime juice and cilantro.
- Spoon 2 TBS cheese in tortilla and top with 1 cup filling.

My kids loved tacos and chili, so I thought, "Why not burritos?" I started dumping things in the crock pot and my "famous" recipe was born.

- In a crock pot add all ingredients EXCEPT vinegar, refried beans, tortillas, taco sauce, and cheddar.
- Cook on low 6-8 hours.
- Add vinegar and shred chicken with forks (I find a potato masher works well too).
- In two 9x13 baking dishes spread half of the taco sauce and spread evenly.
- Assemble burritos by smearing a tortilla down the middle with refried beans. Add approximately 1/2 cup of the chicken mixture, roll up and place seam-down in baking dish. Repeat until baking dish is full (usually 5 burritos in each dish for me).
- Pour remaining taco sauce over burritos, sprinkle with cheddar cheese.
- Bake at 350 for 10 minutes, or until cheese melts.
- I love making a double batch of this and save the "guts" in a ziploc in the freezer for another day.

- Turn your crockpot on high and dump the dry black beans in.
- Fill the crockpot with just enough water to cover the beans by an inch.
- Add the rest of the ingredients in and stir to mix.
- Let them cook on high for 30 minutes.
- Add 2 more cups of water and stir again.
- Let the beans continue to cook on high for 3.5 more hours.
- Add one more cup of water and stir.
- Switch your crockpot to low and let it cook for 6-8 hours, or overnight. I cooked mine overnight and woke up to the beautiful aroma of Mexican filling the house!
- Turn the crockpot off and let the beans cool down.
- Once they reach a temperature where they can be handled, scoop two cups of beans into a quart size freezer bag for easy storage. Continue until all the beans are gone from the crockpot.
