Easy Slow Cooker Asian Pulled Pork Sliders with Slaw image

Mouthwatering Slow Cooker Pulled Pork Sliders + Asian Slaw are the perfect easy meal for sleepovers, game day, and other entertaining. These sliders are total crowd pleasers!

5 lb pork butt (trimmed)
Asian Slaw
Slider Rolls
3 tablespoons hoisin sauce
3 tablespoons ketchup
3 tablespoons rice wine vinegar
2 tablespoons honey
2 tablespoons toasted sesame oil
2 teaspoons Chinese five spice powder
4 cloves garlic (minced)
1 tablespoon fresh ginger (minced)
1 tablespoon olive oil
2 shallots (finely chopped)
1 cup chicken stock
1/2 cup ketchup
2 tablespoons honey
2 tablespoons soy sauce
1 teaspoon Chinese five spice powder
2 tablespoons rice wine vinegar
1 teaspoon toasted sesame oil
1 pinch red pepper flakes

Steps:

  • Whisk together the marinade ingredients until well combined. Rub the pork with the marinade. Cover and refrigerate for at least 4 hours, or overnight. Discard the excess marinade and place the pork into the slow cooker.
  • To make the Korean BBQ Sauce, heat the olive oil in a skillet over medium high heat. Cook the shallots until soft. Whisk in the chicken stock, ketchup, honey, soy sauce, and give spice powder. Cook until the sauce begins to thicken and reduce. Remove from the heat and add the vinegar and sesame oil.
  • Pour the sauce over the pork, and cover. Cook on low for 8 hours. Using two forks, pull the pork apart.
  • Assemble the sliders with the pulled pork and Asian slaw and serve.

Meanwhile, fully combine arrowroot powder/cornstarch with water in a small bowl. Pour into the sauce in slow cooker, stirring to incorporate. Add chicken back into slow cooker and stir into sauce. Cook for 10-15 more minutes.
  • Place a bit of chicken on each bun or lettuce wrap, topping with kimchi, avocado, lightly pickled bean sprouts, gochujang aioli, scallions, and sesame seeds. Devour immediately.
  • Combine vinegar, warm water, sugar, and salt in a small bowl until dissolved. Pour over bean sprouts and let sit at room temperature for 30 minutes.

  • Cook on low for 4-1/2 hours, and then shredded the chicken with two forks. Once you shred the chicken return it to the slow cooker and mix to coat with the sauce. In a small bowl combine the cornstarch and water until it is dissolved. Add that to the slow cooker and mix to combine everything together. Cover and finish cooking for 30 minutes.
