CROATIAN SOUR CHERRY (MARASCA) SAUCE

This is one of the sauces we serve with game. You can use frozen sour cherries or cooked (you can buy them is any grocery store). We have this excellent sort of sour cherry called "marasca". It grows around Croatian town Zadar and its hinterland. Drink Maraschino is made out of this fine cherry.

500 ml dry red wine
150 g sour cherries
1 tablespoon flour
1 tablespoon sugar
1/2 teaspoon cinnamon (grounded)

Steps:

  • Cook wine, sugar and cinnamon until boils.
  • Add sour cherries, cook 5 minutes.
  • Make flour turbid with a little water and add into sauce. Stir until sauce become dense (you may cook it if necessary).
  • Serve with game.

1 cup drained bottled sour pitted cherries, reserve 1/2 cup of the syrup
2 tablespoons sugar
2 tablespoons dry white wine
1 teaspoon cornstarch
1 drop almond extract

Steps:

  • Pour syrup into a 1-quart heavy saucepan, setting aside cherries.
  • Whisk sugar, wine, and cornstarch into cherry syrup until smooth, then bring to a boil over moderate heat, whisking constantly, and boil until slightly thickened, about 1 minute.
  • Remove from heat, then stir in almond extract and cherries and cool.
  • Sauce can be made 4 days ahead and chilled, covered.

This is very simple and hot sauce. You can put some rice in it and you get something like "djuvech", but not so rich with various vegetables.

300 g onions
400 g bell peppers (preferably red)
400 g tomatoes (peeled, caned)
2 garlic cloves
1 teaspoon chili powder
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 cup water

Steps:

  • Cut onion into thin rounds. Cut peppers into thin rounds. Finely mince garlic. Put olive oil into frying pan; add onion and pepper rounds, garlic and tomato. Season it with chili salt and pepper. Sauté it for about 40 minutes. During the process add some water to prevent premature burning. The sauce is ready to serve when all liquid evaporates; vegetables are soft and reduced in size. Serve hot.

This is the sauce we sometimes serve with game. Amounts given here can be changed according to taste - some like more cinnamon, some less. You can use cranberry jam but than dissolve it with some water. You can also use other berries: blueberries, blackberries, etc.

1 tablespoon flour
20 g butter
100 ml dry red wine
1 tablespoon sugar
1 tablespoon lemon zest
1/2 teaspoon cinnamon (grounded)

Steps:

  • Melt sugar and butter and add flour to slightly brown.
  • Add wine (plus some water if necessary). Boil it and add cranberries, lemon zest cinnamon and clove.
  • Cook about 10 minutes. Serve cooled.
