SIMPLE CAULIFLOWER SOUP



Simple Cauliflower Soup image

A nice and simple healthy soup. First the cauliflower is sauteed in butter with potatoes and onions, and then simmered in vegetable stock.

2 tablespoons unsalted butter
1 onion, chopped
1 head cauliflower, broken into small florets
1 potato, peeled and diced
2 cups vegetable stock
2 cups milk
salt and pepper to taste

Steps:

  • Melt the butter in a large pot over medium heat. Saute the onion in the butter for 5 minutes. Stir in the cauliflower and potato and saute for 5 more minutes.
  • Pour in the stock, bring to a boil, reduce heat to low and simmer for 20 minutes, or until all vegetables are tender. Add the milk, stirring well to blend. Season with salt and pepper to taste.

This is very simple side dish. The origin of this meal is Austrian and the recipes are welcomed in my family since - ever. I will submit only cauliflower recipe, but the system is the same with other vegetables.

800 g cauliflower
60 g butter
3 tablespoons breadcrumbs
200 g sour cream
15 g salt
water

Steps:

  • Put cauliflower in hot water, add salt and cook until soft.
  • Melt butter in a pan, add bread crumbs and fry it until dark brown (do not burn it).
  • Take out cauliflower cut it in pieces and put it into hot pan with butter and bread crumbs. Fry it just 2-4 minutes and mix gently to cover with bread crumbs.
  • Before serving, add sour cream.
  • You can also eat it without sour cream, so just put the sour cream jar on the table. Serve with roasted meat.
  • The same procedure is with French beans or Brussels sprouts, but make sure to put green vegetables into hot water - that will keep green colour.

Croatian Flour Soup (

This is the simplest soup ever. I used to eat this soup during digestive problems as a diet soup. This is probably the soup prisoners used to eat, or soldiers, or just poor people. This is the recipe I use.

1 tablespoon flour
15 g lard (or oil)
4 g red paprika (dried)
5 g caraway seeds
salt
pepper
1 egg white (optional)
1 liter water
150 g bread (or 2-3 slices)
5 g lard

Steps:

  • Melt lard in a pot and put flour to fry. Wait until brownish, add paprika and water and make creamy liquid. Slowly add water mixing all the time.
  • Add caraway seeds, salt pepper and cook 30 minutes.
  • If you like you can put egg white into just before soup is done and mix well.
  • In the meantime cut bread slices into small cubes and fry it on lard until dry and crispy.
  • When serving, put bread in a plate with soup and eat it.
