Pan Fried Chicken With Garlic and Lemon image

Sometimes I really don't want to be creative with my dinner. Then I usually make this pan fried chicken breast. A little garlic, shallots, lemonjuice and parsley, and dinner is ready!

2 large chicken breast fillets
3 -4 tablespoons olive oil
sea salt
3 garlic cloves, crushed
3 shallots, finely sliced
1/2 lemon, juice of
1/4 cup flat leaf parsley, chopped

Steps:

  • Fry the onion with 1 tbsp olive oil, 3 minutes in a frying pan over medium-high heat.
  • Remove onion from the pan, keep on a plate. Add the chicken fillets to the pan and fry them in remaining olive oil on high heat until cooked through. Add the fried onion,crushed garlic and sprinkle over some seasalt. Pour in the lemonjuice and toss everything together with the chopped parsley. Cook for another minute then serve.

These are the best fried pork chops you will ever eat. You can also try this with cube steak for chicken-fried steak, or with chicken breast!

1 ½ cups all-purpose flour
1 ½ teaspoons ground paprika
½ teaspoon garlic powder
2 eggs
½ cup milk
½ (16 ounce) package saltine crackers, crushed
½ cup dry potato flakes
½ cup all-purpose flour
4 (3/4 inch) thick pork chops
salt and pepper to taste
1 ½ cups vegetable oil for frying

Steps:

  • In a shallow bowl, mix 1 1/2 cup of flour, paprika, and garlic powder. In a second shallow bowl, whisk together the eggs and milk until thoroughly blended. In a third bowl, combine the crushed cracker crumbs, potato flakes, and 1/2 cup of flour.
  • With a fork, prick the pork chops thoroughly to tenderize the meat. Season the chops with salt and pepper.
  • Gently press the pork chops into the flour to coat, and shake off the excess flour. Dip into the beaten egg mixture, then press each chop into the cracker crumb mixture. Gently toss between your hands so any crumbs that haven't stuck can fall away
  • Heat the oil in a large, deep skillet over medium heat, and gently place the pork chops into the hot oil. Fry the chops until the meat is no longer pink in the center and the crust is crisp and golden brown, about 5 minutes per side. Remove the chops from the pan, and drain the excess oil on paper towels.

The coating also works well with skin on chicken pieces and pork chops you will need to adjust the cooking time, if using seasoned breadcrumbs then you can omit the garlic powder --- the coating amount is enough for 4 breasts but it can easily be doubled, If desired you can pound the breasts thinner with a meat mallet before coating :)

1/2 cup dry breadcrumbs
1/2 teaspoon black pepper
1/2-1 teaspoon garlic powder
4 boneless skinless chicken breasts
2 eggs, beaten
oil (for frying)

Steps:

  • In a shallow dish mix together the cornmeal with dry breadcrumbs, pepper and garlic powder.
  • Place the eggs in another dish.
  • Dip the chicken into the egg, then into the cornmeal mixture coating on both sides.
  • heat oil in a skillet over medium-high heat.
  • Cook the breasts for about 4-5 minutes on each side or until done, seasoning with seasoned salt while frying if desired.

1 1/2 lbs pork liempo (pork belly)
3 garlic cloves, crushed
2 laurel leaves (bay leaves)
1 teaspoon peppercorns or 1/2 teaspoon black pepper
salt
water, for boiling
oil (for frying)
3 tablespoons soy sauce
5 tablespoons vinegar
1 shallots or 1 small onion, minced
1 garlic clove, minced
chili pepper (optional)

Steps:

  • Cut the pork belly into serving pieces then combine with the garlic, peppercorn,laurel leaves, salt and water in a pan.
  • Bring to a boil and simmer for 35-45 minutes or until skin is tender.
  • Drain, cool and air dry.
  • Deep-fry liempo pieces in batches until golden brown and blisters appear on skin.
  • Mix all the sauce ingredients.
  • Enjoy!

My daughter has been wanting to try fish recipes but does not like a real 'fishy' taste. She found this recipe in the April 2005 edition of the All You magazine. It is served with shredded zucchini and sliced new potatoes. ( I was informed to add that too) :)

2 large eggs
3/4 cup breadcrumbs, plain
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
32 ounces sole fillets, lemon may also substitute flounder, red snapper or 32 ounces striped bass
2 tablespoons extra virgin olive oil
2 tablespoons unsalted butter

Steps:

  • In a shallow bowl, beat eggs. In another shallow bowl, combine the following four ingredients.
  • Dip the fish pieces into the crumbs, into the egg, and than into the crumbs again. Pat crumbs into fish fillets.
  • In 12-inch non-stick skillet, heat 1 tablespoon butter and 1 tablespoon oil until butter melts. Add 2 pieces of fish and cook. Only turn fish once while browning both sides, approximately 6 minutes.
  • When fillets are golden brown add remaining butter, oil, and fish. Repeat the steps above to cook fillets.

6 pork chops
2 tablespoons oil
1 can condensed cream of chicken soup, undiluted
1/3 cup water

Steps:

  • Mix together flour, salt, mustard and garlic powder.
  • Dredge pork chops in mixture.
  • In skillet, brown chops on both sides.
  • Place in crockpot.
  • Combine soup and water and pour over chops.
  • Cover and cook on low for 6 to 8 hours or until meat is tender.
  • Pan juices can be thickened and served with the pork chops.
