- Preheat oven to 350 degrees F (175 degrees C). Line a shallow baking dish with aluminum foil and grease lightly.
- Cut tips from chicken wings and discard. Cut between the joint to separate each wing into 2 pieces.
- Combine butter and garlic in a small saucepan over low heat; heat until butter is melted and garlic is fragrant, 3 to 5 minutes.
- Mix Parmesan cheese, parsley, oregano, paprika, salt, and pepper together in a shallow bowl.
- Dip chicken wing pieces in melted butter mixture; coat with Parmesan cheese mixture in the bowl. Arrange in the prepared baking dish. Drizzle any remaining butter on top.

- In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
- In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
- Heat the oil in a large pot until it reaches 350°F (180°C).
- Coat chicken wings in the batter, shaking off any excess. Add the wings to the oil in batches, cooking for 8-10 minutes until golden brown. Transfer the chicken wings wot a wire rack set over a paper towel-lined baking sheet.
- Transfer the chicken to a clean bowl and drizzle with with the buffalo sauce, tossing to coat. Transfer to a serving plate. Serve with either ranch or blue cheese dressing and celery sticks.

- Pat the chicken wings dry with paper towel.
- In a large bowl, combine baking powder, salt, garlic powder, chili powder and curry powder (if you're using) until blended and whisk to combine well.
- Add the chicken wings into this mixture and coat each evenly with the mixture.
- Drizzle olive oil over them and stir.
- Cover with plastic wrap and let it rest in the refrigerator for half an hour.
- Preheat oven to 400F and line a baking sheet with parchment paper.
- Place chicken wings on the baking sheet and bake for 30 minutes. After this time, remove them from oven, turn them over and bake for another 10 minutes.

- Heat oven to 350°F.
- In a small bowl, whisk together 1 tsp. each black pepper and cayenne pepper, seasoned salt, red pepper flakes and smoked paprika. Mix 1 Tbsp. seasoning mix and crushed crackers in a pie plate and set aside.
- Sprinkle the wings evenly with the remaining seasoning mix. Cover and refrigerate at least 1 hour.
- Whisk eggs, hot sauce, mustard and the remaining black pepper and cayenne pepper in a separate pie plate. Dredge chicken wings into the egg mixture, then into the crushed cracker mixture. Place in greased shallow baking pan.
- Bake 35 to 40 min. or until golden brown and done, turning after 20 min.

- Heat a large non-stick skillet or wok over medium high heat. Add the olive oil, and garlic; cook for 30 seconds or until fragrant. Add soy sauce, honey, vinegar, mustard and brown sugar; stir and cook for 2 minutes or until sugar dissolves. Remove from heat and set aside.
- Place chicken wings in a big mixing bowl. Add ginger, salt and black pepper; using your hand, mix until well blended.
- Place potato starch in a shallow dish. Roll each wing in the powder; shake off excess powder.
- Heat oil in wok or a large frying pan. Add wings few at a time and cook for 8-10 minutes, turning a few times using a tong. Drain on paper towel lined plate. (I cooked mine in three batches).
- Refry the wings, starting with the first batch (followed by second and then third batch), for another 3-5 minutes or until golden brown and crispy. Drain on paper towel lined plate.
- Reheat the sauce; add the hot chicken wings. Mix well until wings are fully coated with sauce. Transfer to a platter and sprinkle with sesame seeds.
- Serve and enjoy!

- Prepare the chicken wings and pat them dry with paper towels.
- Line a baking sheet with aluminum foil.
- Place a wire rack in the baking pan.
- Spray racks with cooking spray to prevent sticking.
- Place the flour in a large mixing bowl.
- Add the baking powder. Stir well to combine.
- Place the wing pieces in the flour mixture. Toss well to fully coat.
- Place wing pieces on the wire racks, leaving space between each piece.
- Let wings rest on wire rack for 20 minutes while the oven warms up.

- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
