- Preheat oil in a large, deep skillet or deep fryer. In a shallow dish or bowl mix together 3/4 cup flour with 2 tablespoons garlic powder; in a second shallow dish or bowl combine eggs and 4 tablespoons garlic powder and mix together. In a third shallow dish or bowl mix together cornflake crumbs, remaining 1/4 cup flour and remaining 2 tablespoons garlic powder.
- Dip each wing in the flour mixture, crumb mixture, egg mixture then back in the crumb mixture. Drop carrot into hot oil; when it starts to fry, drop in the wings. Fry about 10 minutes, or until cooked through - they'll be a deep golden color.

- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.

- In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
- In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.

- If you are organised enough, uncover the chicken wings and leave them in the fridge for a few hours to dry out. Otherwise, use a paper towel to pat the wings dry.
- Adjust oven racks to upper-middle and lower-middle positions.
- Preheat oven to 250F/120C (all oven types - standard/convection/fan).
- Line a baking tray with foil, then place a rack (like a cooling rack) on the foil. Spray the rack with oil spray.
- Place wings in a large bowl or in a ziplock bag. Add the baking powder and salt, then toss to coat evenly.
- Place the wings on the baking tray in a single layer with the skin side up. They should just fit snugly. They will shrink when they cook because the fat renders out so don't worry if they look too snug.
- Place wings on the lower middle oven rack and bake for 30 minutes.
- Move wings up to the upper middle rack and increase the oven temperature to 425F/220C. Bake for 40 - 50 minutes, rotating the tray halfway through.
- Remove baking tray from the oven and let it stand for 5 minutes.

- Prepare the chicken wings and pat them dry with paper towels.
- Line a baking sheet with aluminum foil.
- Place a wire rack in the baking pan.
- Spray racks with cooking spray to prevent sticking.
- Place the flour in a large mixing bowl.
- Add the baking powder. Stir well to combine.
- Place the wing pieces in the flour mixture. Toss well to fully coat.
- Place wing pieces on the wire racks, leaving space between each piece.
- Let wings rest on wire rack for 20 minutes while the oven warms up.

BAKED CHICKEN WINGS - EXTRA CRISPY, LIKE DEEP-FRIED
Steps:
- Preheat oven to 450F.
- Dry chicken with a paper towel really well. Place the wings in a large bowl. Sprinkle baking powder over the wings. Toss until all wings are evenly covered in baking powder. Better yet, mix by hand to ensure even coverage.
- Line a large baking sheet with aluminum foil. Place a cooling rack (see note) on top and spray with Pam or rub with cooking oil to prevent sticking.
- Lay the chicken wings on the rack, leaving space between the wings.
- Place the baking sheet in the oven. Turn the heat down to 425F and set the mode to convection.
- Bake for 30-40 minutes, until the wings are nicely browned and crisp.
- Let the wings rest for 5 minutes. This will preserve crispiness of the skin.

- Coat the basket of a 3 quart or larger air fryer with nonstick spray.
- Trim off the wing tips (you should be able to feel the joint soft spot). It should separate fairly easily, but if not, put the blade in place, then carefully but firmly hit the top of your knife to apply extra pressure. Discard. Next, split the drumette side of each wing from the flat side at the joint: slice down through the skin feeling for the "soft spot" and wiggle your knife as needed.
- Pat the wings very dry. Sprinkle all over with salt.
- Place the wings in the air fryer in a single layer, making sure they do not touch (if needed, stand up the drumettes along the side). Set the air fryer to 360 degrees F. Cook the wings for 12 minutes, then remove the basket and with tongs, flip the wings over. Return to the air fryer at 360 degrees for 12 additional minutes.
- Slide out the basket, flip the wings once more, then return them to the air fryer. Increase the air fryer temperature to 390 degrees F. Cook the wings for 6 minutes, flipping once more halfway through. The skin should look nice and crisp (if your wings are on the larger side, they may need a few more minutes).
- While the wings finish up, melt the butter in a large microwave safe bowl in the microwave or a saucepan on the stove. Stir in the hot sauce, garlic, and vinegar until smooth.
- Transfer the wings to the bowl with the hot sauce mixture. Toss to throughly coat the wings. Transfer the wings to a serving plate. Sprinkle with chives as desired. Enjoy warm with blue cheese sauce and celery.

- Combine spice Ingredients Into an extra-large two-gallon zip lock bag or large mixing bowl. Add separated chicken wings. Seal ziplock and toss the wings to combine the spice and wings-Marinate wings in the spice mixture for 30 minutes or so.
- Preheat oven to 420. Line baking sheet (with sides) with foil for easy cleanup. Top foil with parchment paper.
